8 dried shiitake mushrooms
3 tablespoons peanut oil
2 large eggs, lightly beaten with a pinch of kosher salt
4 scallions (white and green), thinly sliced
1/4 cup minced carrot
1 large clove garlic, minced
Pinch red chile flakes
1 teaspoon minced peeled fresh ginger
2 tablespoons soy sauce
1 teaspoon toasted sesame oil
3 cups cooked long-grain rice
1 cup cooked meat cut in 1/2-inch cubes, such as pork, ham, beef, or chicken
1/2 cup frozen peas, defrosted in a strainer at room temperature

Steps:

  • Put the mushrooms in a small bowl and cover with boiling water and soak until re-hydrated, about 20 minutes. Drain, squeeze dry, and cut mushrooms in quarters. Set aside.
  • Heat 1 tablespoon of the peanut oil in a well-seasoned wok or large non-stick skillet over medium-high heat. Swirl to coat the pan. Pour in the eggs, swirl the pan so the egg forms a large thin pancake. (Lift the edge of the egg to allow any uncooked egg to run to the center.) As soon as the egg has set, turn it out of the pan onto a cutting board. Cool, cut into 1 inch pieces.
  • Wipe out the pan with a paper towel and heat the remaining peanut oil over high heat. Add the scallions and carrots and stir-fry for 1 1/2 minutes. Add the mushrooms, garlic, chile, and ginger, stir-fry for 1 minute more. Add the soy sauce, sesame oil and rice and stir-fry for 2 to 3 minutes. Add the meat, peas, and reserved egg, cook, stirring until heated through, about 2 to 3 minutes. Serve immediately.

This variation of fried rice is hugely popular in Thailand... kids love it! With crispy chicken tenders and cute frankfurters on the side, it's a plate of pure retro fun, but still tastes utterly delicious. Try it for your littlies today!

Number Of Ingredients 21

vegetable oil for shallow frying, plus 2 tbsp extra
4 small mini frankfurter/hot dog sausages
2 garlic cloves, finely chopped
1 small onion, finely chopped
2 slices ham, roughly chopped
2 tbsp frozen peas
1 tbsp raisins
2 cups cooked rice (click to see my recipe for how to cook rice for fried rice)
sliced tomato, to serve
2 fried eggs, to serve
Seasoning sauce:
¼ cup tomato ketchup
1 tbsp fish sauce
2 tsp soy sauce
½ tsp sugar
Crumbed chicken strips:
4 small pieces chicken breast or tenders
2 tbsp corn flour
1 egg
¼ cup panko breadcrumbs
sea salt

Steps:

  • Step 1.To make the crumbed chicken strips, season the chicken with salt. Then coat each piece in flour, then egg and then breadcrumbs.
  • Step 2.Heat enough oil to cover the base of a small frying pan over medium-high heat. Cook the crumbed chicken strips for 2-3 minutes each side or until golden and cooked through. Drain on paper towel.
  • Step 3.Clean the pan and add another tablespoon of oil. Cook the mini frankfurter sausages until cooked through. Drain on paper towel also.
  • Step 4.Combine the ingredients for the seasoning sauce.
  • Step 5.Heat the remaining 1 tablespoon of oil in a wok or large frying pan over medium-high heat. Add the garlic and onion and stir-fry for half a minute. Then add the ham, peas and raisins and stir-fry for another half a minute. Add the rice and the seasoning sauce and stir-fry until well combined.
  • Step 6.Serve with sliced tomato, fried eggs, crumbed chicken and sausages.

MOLLIE'S AMERICAN FRIED RICE

This Mollie Katzen recipe is a vegetable dish where the rice plays a secondary role to the veggies; the reverse of traditional fried rice recipes. The leafy greens called for can be kale, collards, spinach, beet, chard, Asian greens or a mixture of greens. The rice should be cooked the day before. I cook my rice in the microwave in 2 separate one cup batches, it comes out perfect every time. Originally, the Chinese made fried rice to use up leftover rice and would serve the meal with a soup.

1 tablespoon vegetable oil
2 large eggs, beaten
1 1/2 cups chopped onions
1 tablespoon minced ginger
salt
3 cups chopped broccoli
1/2 lb green beans, trimmed
1 medium carrot, thinly sliced diagonally
2 teaspoons garlic
4 cups packed leafy greens
2 cups sugar snap peas, trimmed
2 cups cooked brown rice
2 tablespoons soy sauce
3 green onions, sliced across
2/3 cup lightly toasted almonds

Steps:

  • To make the omelet: in a 10" non-stick skillet, add about a teaspoon of oil, allow the pan to heat for about 30 seconds, then add the 2 beaten eggs. Swirl the beaten eggs around until one side is evenly cooked, then flip the omelet over to cook the other side.
  • Transfer omelet to a plate and cut omelet into strips, set aside.
  • In a wok, add oil and allow pan to heat up; add onion and ginger and sauté for 5 minutes, or until onion is translucent.
  • Stir in broccoli, green beans, carrot and garlic. Add salt, if using, and stir-fry over medium heat 8 to 10 minutes, until vegetables are tender-crisp.
  • Stir in chopped leafy greens and sugar snap peas, cook until they turn bright green.
  • Fluff the cooked rice, and add to wok, along with the soy sauce, green onion and omelet strips.
  • Serve hot, topped with the almonds.

This Chinese fried rice has the flavor those other recipes are missing. Tastes like takeout. I want to dedicate this dish to Bergy, whose recipe "AM & B's Indonesian Mehoon" has inspired this dish. Make sure you season your rice with salt before it cooks. Add some butter to the cooking water, as well. Other seasonings should be added before you cook, as well, so it has time to get inside the rice. If you like sesame flavor, add 1 tsp. of it after you add the green onions, but do not use it as a cooking oil because it easily burns.

3/4 cup finely chopped onion
2 1/2 tablespoons oil
1 egg, lightly beaten (or more eggs if you like)
3 drops soy sauce
3 drops sesame oil
8 ounces cooked lean boneless pork or 8 ounces chicken, chopped
1/2 cup finely chopped carrot (very small)
1/2 cup frozen peas, thawed
4 cups cold cooked rice, grains separated (preferably medium grain)
4 green onions, chopped
2 cups bean sprouts
2 tablespoons light soy sauce (add more if you like)

Steps:

  • Heat 1 tbsp oil in wok; add chopped onions and stir-fry until onions turn a nice brown color, about 8-10 minutes; remove from wok.
  • Allow wok to cool slightly.
  • Mix egg with 3 drops of soy and 3 drops of sesame oil; set aside.
  • Add 1/2 tbsp oil to wok, swirling to coat surfaces; add egg mixture; working quickly, swirl egg until egg sets against wok; when egg puffs, flip egg and cook other side briefly; remove from wok, and chop into small pieces.
  • Heat 1 tbsp oil in wok; add selected meat to wok, along with carrots, peas, and cooked onion; stir-fry for 2 minutes.
  • Add rice, green onions, and bean sprouts, tossing to mix well; stir-fry for 3 minutes.
  • Add 2 tbsp of light soy sauce and chopped egg to rice mixture and fold in; stir-fry for 1 minute more; serve.
  • Set out additional soy sauce on the table, if desired.
