1 tbsp coconut oil
1½ tbsp peeled and minced ginger
1 clove garlic, minced
1 tbsp curry powder
1 tsp ground turmeric
½ tsp ground cinnamon
1 lb bay scallops, defrosted overnight in fridge if frozen, rinsed and patted dry (TIP: Rinsing the scallops helps remove some of the sodium.)
1 cup trimmed green beans
1 cup cubed orange or red bell pepper
¾ cup full-fat coconut milk
½ cup plain whole-milk yogurt
½ cup quartered button mushrooms
½ lemon, juiced
1/4 cup fresh basil, thinly sliced

Steps:

  • 1. In a large skillet on medium-high, heat oil. Add ginger, garlic, curry, turmeric and cinnamon and sauté until fragrant, 30 seconds to 1 minute. Add scallops, green beans and bell pepper and sauté for 2 to 3 minutes, stirring occasionally. 2. Stir in coconut milk, yogurt and mushrooms. Reduce to medium heat and simmer for 4 minutes. Turn off heat and stir in lemon juice. Garnish with basil. TIP: If following our Meal Plan, refrigerate leftovers and reheat when called for. Serve with quinoa or cauliflower rice as directed in the plan.

1 small head cauliflower, cut into florets
1 red onion, cut into 1/2-inch wedges
5 tablespoons extra-virgin olive oil
Kosher salt
2 cloves garlic, grated
1 tablespoon curry powder
1 1/4 pounds medium sea scallops (about 24), ?foot? muscles removed
1/3 cup golden raisins
1/4 cup roasted salted cashews
1/2 cup fresh cilantro
1/2 cup plain low-fat yogurt
Lime wedges, for serving

Steps:

  • Put a baking sheet on the middle oven rack and preheat to 450 degrees F. Toss the cauliflower, red onion, 3 tablespoons olive oil, 1/2 teaspoon salt, the garlic and curry powder in a large bowl. Spread on the hot baking sheet and roast, without stirring, until very tender and well browned in spots, about 25 minutes.
  • Meanwhile, heat the remaining 2 tablespoons olive oil in a large nonstick skillet over high heat. Season the scallops with salt, add to the skillet and cook, undisturbed, until well browned on the bottom, about 3 minutes. Flip and cook until no longer translucent, about 1 more minute; transfer the scallops to a plate.
  • Toss the cauliflower mixture with the raisins and cashews and divide among plates. Top with the scallops and cilantro; drizzle with the yogurt. Serve with lime wedges.

This is a lovely curry from Australian chef David Thompson. If you can't get scallops, other seafoods are easily substituted. Try mussels, clams, prawns or even a fish such as salmon.

2 cups coconut cream
1 tablespoon palm sugar
2 tablespoons fish sauce
1 cup coconut milk or 1 cup stock
12 -16 small scallops, cleaned
4 kaffir lime leaves, shredded
1 little red chile, julienned
1/2 cup coriander leaves
5 -8 long dried red chilies, soaked and drained
1 pinch salt
5 slices galangal or 5 slices ginger
3 tablespoons chopped lemongrass
4 tablespoons chopped garlic
3 tablespoons sliced red shallots
1 tablespoon coriander, chopped
10 white peppercorns
1 1/2 teaspoons shrimp paste

Steps:

  • First make the paste, using the listed ingredients.
  • The traditional way to do this is to add individual ingredients in a certain order (from the hardest and driest to the softest and wettest), with each being reduced to a pulp before the next is added.
  • A pestle and mortar is the ideal tool for this.
  • When the paste is made, crack the coconut cream over medium heat, add 3 tablespoons of the paste and fry, stirring regularly, for at least 5 minutes and until fragrant.
  • Season with sugar and fish sauce.
  • Add coconut milk and simmer until reduced.
  • Add scallops and half the kaffir lime leaves, simmering until the scallops are just cooked.
  • Check the seasoning, then arrange the scallops on a plate.
  • Drizzle over the coconut cream, sprinkle with the remaining lime leaves, red chilli and coriander.

1/2 pound small fresh okra
1 pound plum tomatoes
1 tablespoon plus 1/2 teaspoon salt
1 small onion, chopped
1 large garlic clove, chopped
1 (1-inch) piece peeled fresh ginger, chopped
2 to 3 teaspoons minced fresh jalapeño chile (including seeds)
1 cup low-sodium fat-free chicken broth
1 1/4 pound sea scallops, tough muscle removed from side of each if necessary
1/4 teaspoon black pepper
2 teaspoons vegetable oil
1 1/2 teaspoons curry powder (preferably Madras)
2/3 cup well-stirred canned reduced-fat coconut milk
1/4 cup loosely packed fresh cilantro leaves
Accompaniment: spiced basmati rice

Steps:

  • Trim tops of okra, being careful not to cut into pods.
  • Cut an X in bottom of each tomato and immerse tomatoes in a 2-quart saucepan of boiling water for 10 seconds. Transfer tomatoes with a slotted spoon (save boiling water) to a bowl of ice and cold water to cool, then peel. Add 1 tablespoon salt to boiling water, then add okra and cook, uncovered, until just tender, about 5 minutes. Drain okra in a colander, then plunge into same ice water to stop cooking. Drain okra and pat dry with paper towels.
  • Quarter tomatoes lengthwise and seed, then cut each quarter lengthwise into 1/2-inch-wide strips.
  • Purée onion, garlic, ginger, jalapeño (to taste), and 1/4 cup chicken broth in a blender.
  • Pat scallops dry and sprinkle with pepper and remaining 1/2 teaspoon salt. Brush a 12-inch nonstick skillet with 1/2 teaspoon oil and heat over moderately high heat until just beginning to smoke. Brown scallops in 2 batches, turning once, about 4 minutes total. Transfer scallops as browned with tongs to a plate and keep warm, covered with foil. (Scallops will not be cooked through.)
  • Add remaining 1 1/2 teaspoons oil to skillet and reduce heat to moderate. Add purée carefully (it may splatter), then add curry powder. Boil, stirring constantly, 2 minutes. Add coconut milk and remaining 3/4 cup broth and bring to a simmer. Add tomato strips and simmer, stirring frequently, until tomatoes are softened, 3 to 4 minutes. Season sauce with salt and pepper.
  • Stir in scallops and okra and simmer until scallops are just cooked through, about 3 minutes. Divide scallops, vegetables, and sauce among 4 plates and sprinkle with cilantro.

COCONUT CURRY SCALLOP, KUMQUAT, AND ASIAN PEAR CANAPES

1 teaspoon curry powder
1 cup canned unsweetened coconut milk*, stirred well
1/4 cup fresh lime juice, or to taste
1/2 teaspoon salt, or to taste
1/2 pound bay or sea scallops
2 Asian pears**
8 to 10 kumquats**
about 40 fresh coriander leaves, washed well and spun dry
*available at Asian markets and some specialty foods
**available at specialty produce markets

Steps:

  • In a heavy 1-quart saucepan stir curry powder into about 1 tablespoon coconut milk until dissolved. Stir in 1 teaspoon lime juice, salt, and remaining coconut milk and simmer over moderately low heat 10 minutes, or until thickened.
  • Remove tough muscle from side of each scallop if necessary. If using sea scallops, cut into 1/2-inch pieces. Add scallops to coconut milk mixture and poach at a bare simmer until just cooked through but still tender, 2 to 3 minutes. Remove pan from heat and cool mixture. Transfer scallops with poaching liquid to a small bowl. Scallops may be poached 1 day ahead and chilled, covered.
  • Cut pears crosswise into 1/4-inch-thick rounds and discard seeds and core. Cut rounds into 1-inch wedges and in a small bowl toss with remaining lime juice. Macerate pears, covered and chilled, at least 15 minutes and up to 3 hours.
  • Just before serving, cut kumquats crosswise into thin slices and arrange pear wedges, drained, on plates. Top each wedge with 1 kumquat slice, 1 coriander leaf, and 1 piece of scallop coated with poaching liquid.

I didn't have any green or red curry paste as a base, so I had to improvise and came up with this, it might have just been a one-hit-wonder, as I haven't made this dish again and am drawing the spices from memory, so just sample the paste and if it tastes about right, go with it!

gingerroot, peeled (about 2-3-inch)
2 teaspoons garlic (minced from a jar is fine)
2 teaspoons honey
2 teaspoons chili powder
1 1/2 teaspoons turmeric
2 tablespoons fresh cilantro
2 tablespoons desiccated sweetened coconut
3 teaspoons hot madras curry (McCormicks)
1 teaspoon salt
2 tablespoons fish sauce
3 teaspoons lime juice
2 tablespoons vegetable oil (or peanut oil)
1 lb shrimp
1 lb scallops
1 (14 ounce) can coconut milk
150 g rice or 150 g bean noodles

Steps:

  • Using a food processor, puree the ginger and garlic.
  • Add in the rest of the sauce ingredients to form a relatively thick paste.
  • It's best to refrigerate the paste for a few hours to let the flavors inter-mingle, but if you have to use it right away, than do so.
  • Heat the oil over high heat, and add the scallops and shrimp when the pan (or wok) is uniformly hot.
  • At the same time, boil some water for the noodles (or you can serve with rice if you want).
  • Stir the shrimp and scallops frequently for about 2 minutes, until slightly browned.
  • Add in the paste, and reduce heat slightly, coating the scallops and shrimp thoroughly.
  • After about 90 seconds, slowly stir in a can of coconut milk.
  • Reduce heat and simmer for a few minutes to reduce the liquid.
  • Serve over noodles or rice.
