This 4-Ingredient Gluten Free Sourdough Bread recipe is perfect start with if you're new to sourdough bread baking. It's easy to make with clear directions and a written baking schedule.

200 grams un-fed Gluten-Free Sourdough Starter (see notes)
420 grams Bob's Red Mill 1:1 Gluten-Free Baking Flour (see note 10)
300 grams bottled water, cold or room temperature
12 grams fine sea salt

Steps:

  • Day 1 (Around 12 pm)Make the dough: Add the un-fed starter, gluten-free flour, water, and salt to the bowl of a stand mixer. Use the dough hook to mix until all ingredients are combined, the dough comes together, and there isn't any loose flour left. Bulk Fermentation: Gently form the dough into a ball and place in a lightly oiled and floured medium glass bowl. Loosely cover and leave in a draft-free place for 6-10 hours. 6 hours if your house is on the warm side and up to 10 hours if your house is cooler. I generally let mine rise for about 8 hours. At this point, you don't want your dough to double in size. 2nd Proof/Retard (around 8pm): After the first rise, transfer the bowl to the refrigerator to finish proofing in the refrigerator for 12 hours. You can keep the dough in the same bowl or you can gently reshape it and place it in a floured Banneton Basket. Day 2 (Around 8 am)Place your Dutch Oven on the center rack and preheat the oven to 500 degrees. Let the Dutch Oven preheat at 500 degrees for at least 30 minutes. When the Dutch Oven has preheated, remove from the dough from the refrigerator. Turn the dough out onto a piece of lightly floured parchment paper. With generously floured hands, gently re-shape to a tighter ball and use the flour to smooth the dough. The dough should be completely coated with a layer of flour. (Skip this if you proofed in a Banneton Basket) Use a sharp knife or bread lame to slash the bread, you want the slash to be at least 1-inch deep. You can make it decorative or keep it simple to start and just do an X in the middle. Remove the Dutch Oven from the preheated oven. Use the corners of the parchment paper to lift the dough and carefully place it in the Dutch Oven so you don't burn yourself. Place 2 large ice cubes in the Dutch Oven between the parchment paper and sides of the DO and quickly cover with the lid. Place the Dutch Oven back on the center rack and lower the temperature to 450 degrees. Bake at 450 for 40 minutes. After 40 minutes lower the oven temperature to 425 degrees and then remove the lid from the Dutch Oven. Bake for an additional 40 minutes, uncovered, at 425 degrees. When the bread is done, it should have an internal temperature of at least 210 degrees and the bottom of the bread should sound hollow when you knock on it. Cool completely on a wire rack before slicing and serving.

Gluten Free Farmhouse Sourdough

This is a top 8 allergen free bread that replicates the taste of a good whole wheat sprouted sourdough bread. You can make it more sour by allowing your teff starter to ferment for longer periods. You can use any egg or egg substitute you like. My son is intolerant of flax so I've had to use arrowroot and ground chia in its place. You can substitute Bobs Red Mill 1 to 1 flour for most of the oat flour if you want. Based off of Nourishing Meals Farmhouse Seeded bread with some adaptations (http://www.nourishingmeals.com/2011/04/gluten-free-bread-xanthan-free-vegan.html).

2 cups oat flour
1 cup teff flour
1 cup water
1 1/2 cups teff, starter (see directions)
1/2 cup bobs red mill 1 to 1 flour
3 tablespoons oil
2 tablespoons whole psyllium husks
3 tablespoons ground chia seeds
1/4 cup arrowroot
1 teaspoon sugar
1 1/4 teaspoons salt
2 1/2 teaspoons yeast

Steps:

  • To make teff starter: combine equal amounts of teff flour and distilled or bottled water in a large bowl, stir well, cover with a dishtowel and sit in a warmish spot. Teff should bubble slightly right away. If it doesn't you can add a tiny bit of yeast. Be sure not to use tap water as the chlorine in most tap waters will kill off the yeast. I often start with 1/2 cup of teff. Feed once or twice a day, stirring with a clean fork and recovering just like a sourdough starter. You can use this to make injera. The longer you let it ferment the more sour it gets-just like sourdough starters. It should be slightly bubbly and sour smelling. Separation is normal. Just stir together before using.
  • Combine oat flour, gluten free flour, dry teff, salt, and arrowroot powder in a large mixing bowl.
  • In a large measuring cup or mixing bowl, combine water, teff starter, yeast, sugar, oil, psyllium husks, and ground chia. Stir well to combine and let sit 2-3 minutes.
  • Whisk wet ingredients again and then pour into dry ingredients. Mix together with a large mixing spoon until combined.
  • Optional: turn out on a floured surface and knead, adding oat flour as needed until dough holds together and isn't too sticky. I don't usually knead.
  • Place dough in a large oiled bowl or onto parchment paper. Roughly shape into a loaf form. Cover with a damp towel and let rise in a warm place for 30-40 minutes.
  • Preheat oven to 400°F.
  • Once bread has risen, move to baking sheet and cut a shallow tic-tac-toe patter into the top. Optional-scatter poppy and sesame seeds on top.
  • Bake at 400 for about 40 minutes. Let cool completely before cutting into it.

  • The night before you want to make your bread, combine the flour, starter, oil, salt, honey, and water in a large bowl. Knead the dough until it is stretch (about 15 minutes). I use a mixer with a dough hook for this. You can knead it by hand, but if you plan to make bread regularly, a stand mixer is a great investment for the time it saves. Add just enough flour so that it pulls away from the sides of the mixer, or is not sticking to your hands. It will vary between 6 and 7 cups, depending on the hydration of the starter and the type of wheat you use. Add a little more water if it is too dry, or more flour if it is too wet.
  • Place the dough in a coconut oil greased glass bowl. Roll the dough around a bit so that the entire ball is lightly coated with coconut oil. Cover the dough with a tea towel and let it rise overnight, or up to 24 hours.
  • The next day, divide the dough into two even balls and place each one into a greased loaf pan. Allow it to double in size in a warm place, covered with a tea towel. This should take anywhere from 4-12 hours, depending on how warm your kitchen is.

  • Feed your starter! The morning of your mix, take out a Tbsp. of your starter from the fridge and feed it about 30 grams of flour (I used millet) and 30 grams of room temperature water. Cover and let ferment for around 12 hours. Ideally, this would happen at 7 a.m.
  • After the starter is nice and active, measure out 70 grams of it (you'll probably have a smidge more) along with the rest of your ingredients. Gather together a bowl for mixing and either a parchment-lined loaf pan or a lightly greased bowl.
  • To assemble the loaf, add the 575 g water to the bowl along with the starter. Using your hands, move the starter around to help it dissolve into the water. Add the flour, salt, and psyllium husk and work the dough together really quickly. Once the psyllium hits the liquid it will jell up, so you want to mix all the ingredients together before that happens. As there is no gluten in this bread, you don't have to worry about over-mixing. Ideally, this mixing would happen at 7 p.m. if you fed the starter (step 1) at 7:00 a.m.
  • Next, move your dough to either a parchment-lined loaf pan (for a sandwich loaf) or a greased bowl (for around). Cover with cling film or a damp towel and let rest on the counter for about 12 hours.
