Provided by Lindsay

Categories     Dinner

Time 30m

Number Of Ingredients 18

1 1/2 lbs. salmon
1 tablespoon brown sugar
1 teaspoon curry powder
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/2 teaspoon kosher salt (more for a larger filet)
1-2 teaspoons olive oil
1 tablespoon olive oil
2 cloves garlic (minced)
1 small knob of ginger (minced)
1 tablespoon of lemongrass paste
1 tablespoon brown sugar
1 tablespoon red curry paste
1 can coconut milk
2 tablespoons fish sauce or soy sauce
lots of lime juice and zest
3 cups fresh spinach, chopped
cilantro, basil, mint, or other fresh herbs

Steps:

  • Preheat the oven to 475 degrees. Line a baking sheet with foil. Place one of the oven racks close-ish to the top, about 6 inches or so.
  • Mix the spices and the olive oil to make a paste. Place the salmon skin side down on the baking sheet. Rub the paste liberally over the top part of the salmon. Bake for 6-12 minutes (depends on salmon thickness and desired doneness - I usually opt for 8-10 minutes). See notes and FAQs for potential broiling issues and alternative methods.
  • Heat the olive oil over medium heat. Add garlic, ginger, and lemongrass; sauté for 5 minutes. Add brown sugar and curry paste; sauté for 3 minutes. Add coconut milk. Season with fish sauce and lime juice to taste. Add spinach; stir into the sauce until wilted.
  • Place salmon over rice. Cover with sauce, lime juice, and fresh herbs.

Provided by Elle

Categories     Main Course

Time 45m

Number Of Ingredients 20

250-300 g baby new potatoes, (scrubbed clean and cut in half or quarters, depending on size)
1 tablespoon coconut oil
2 cloves garlic, (minced)
2 small yellow onions, (diced)
1 tablespoon freshly minced ginger
2 fresh red chilies, (seeded and deveined)
3 roma or 2 large vine-ripened tomatoes, (diced)
3 teaspoons ground cumin
1 1/2 teaspoons ground coriander
1 teaspoon turmeric powder
1 teaspoon ground paprika ((sweet))
generous grind of black pepper
1 teaspoon sea salt
1 x 400 ml can organic coconut milk
1/4 cup vegetable broth ((60 ml))
500 g skinless salmon filet (cut into 2 cm cubes)
handful green beans (trimmed and halved (100-150 g))
1 tablespoon freshly squeezed lemon juice
fresh coriander leaves or parsley, (to garnish)
whole grain basmati rice or jasmine rice

Steps:

  • Cook the potato in salted, boiling water for 8-10 minutes, until almost tender. Drain and set aside.
  • Meanwhile, in a large saucepan or wok, over medium heat, heat the oil. Add onions, ginger and garlic and cook until onions starting to soften but not brown, about 8 minutes.
  • Add fresh chili, tomatoes, cumin, coriander, turmeric, paprika, black pepper, and sea salt and cook for about 2 minutes, until fragrant.
  • Add the coconut milk and broth, increase the heat to medium high, once reaches a light boil, then reduce heat to medium again and let simmer for 5 minutes, stirring occasionally.
  • Add the salmon, potatoes and green beans and bring to a light simmer. Cook for about 5 minutes or until the salmon is cooked through. Note: I like my beans al dente, so if you prefer them more cooked, add them a couple minutes earlier than the fish.
  • Stir in the lemon juice. Serve over rice, topped with cilantro or parsley leaves. Enjoy!
  • If cooking for two, leftovers can be enjoyed reheated the next day.

PAN-FRIED SALMON WITH GREEN-COCONUT CHUTNEY

Pan-Fried Salmon With Green-Coconut Chutney image

Coastal flavors from India permeate this crispy-skin salmon. The coconut chutney carries the buzz of ginger and green chile, while a drizzle of tadka - a hot, bright red oil infused with mustard seeds, curry leaves and Aleppo flakes - is the crowning glory of the dish. For perfectly crisp skin, resist the urge to fidget with the fish until the appropriate amount of time has passed; the skin will start to crisp at the edges and the fillet will release with ease. Use fresh or frozen coconut to make the chutney. (Desiccated coconut simply doesn't work as well here.) You can use freeze-dried curry leaves instead of fresh, but you might need to double or even triple the amount, as their intensity is noticeably weaker in comparison.

Time 25m

Yield 2 servings

Number Of Ingredients 14

1 cup packed fresh or frozen (thawed) grated coconut
1 cup packed cilantro stems and leaves
1 fresh, hot green chile, such as a serrano or Thai chile, stemmed
2 tablespoons grated fresh ginger
2 tablespoons lime juice
Kosher salt
2 skin-on salmon fillets (about 6 ounces each)
1 tablespoon ghee or unsalted butter
1 tablespoon olive oil
Kosher salt
2 tablespoons grapeseed or canola oil
1 teaspoon black or brown mustard seeds
10 to 12 fresh curry leaves (or 25 to 36 dried curry leaves)
1 teaspoon red-pepper flakes, such Maras, Urfa or Aleppo

Steps:

  • Prepare the chutney: In a food processor, blend the coconut, cilantro, chile, ginger and lime juice with 2 to 3 tablespoons of water for a couple of seconds to get a coarse mixture. Add a little water (about 1 tablespoon) if needed to loosen. If you prefer a smoother texture, blend the ingredients in a high-speed blender until smooth. Taste and season with salt. Transfer to a bowl. (This chutney can be made a day in advance and stored in an airtight container in the refrigerator for up to 3 days.)
  • Prepare the salmon: Place the salmon skin-side down on paper towels. Heat the ghee and oil together in a medium skillet over medium and swirl the pan to coat the surface well. When the pan is hot, season the fillets on both sides with salt and place them in the skillet, skin-side down. Reduce the heat to medium-low and let the fish cook undisturbed for 8 minutes, until the edges of the skin start to turn crispy and golden brown.
  • Tilt the skillet slightly and, using a spoon, collect the hot fat that collects at the edge and ladle it over the top of the fish several times. Continue basting the fish until the tops turn opaque and a digital thermometer inserted into the center of the fish reads 125 degrees, about 2 minutes. (The exact cooking time will vary depending on the thickness of the fillet.) Use a spatula or a pair of kitchen tongs to carefully release the fish from the pan. (It should release easily if the skin is crisp.)
  • To serve, divide the chutney between two serving plates. Place the cooked fish on top, skin-side up.
  • Prepare the tadka: Heat the oil in a small saucepan over medium. When the oil is hot, drop in one or two mustard seeds; they should sizzle if the oil is hot enough. Add the remaining mustard seeds and swirl. The seeds should pop, and turn fragrant in 30 to 45 seconds. Add the curry leaves and cover the saucepan with a lid, swirl the contents of the saucepan, cook for 15 seconds until the curry leaves release their aroma. Remove from heat, add the red-pepper flakes and let the mixture sit for 1 minute. Pour the oil and spices over the fish and the chutney. Serve immediately.

THAI CURRY RISOTTO WITH SQUASH AND GREEN BEANS

Thai Curry Risotto With Squash and Green Beans image

A wonderful weeknight dinner option, baked risotto requires minimal effort and can quickly feed a hungry family. Curry paste is the star here, effortlessly lending lots of flavor. Roasted squash brings a hearty sweetness, while the green beans deliver crunch and bite. You can be flexible with the vegetables: Roasted sweet potato, brussels sprouts, broccoli or cauliflower would work equally well, or stir a big handful of spinach or kale through at the final stages before serving. This recipe yields quite a bit, so refrigerate leftovers for up to two days and reheat with more stock. You could also repurpose risotto into rice balls reminiscent of arancini: Simply form into balls, coat in breadcrumbs and shallow fry until crispy.

Time 40m

Yield 6 to 8 servings

Number Of Ingredients 14

1 1/2 pounds butternut squash, peeled and cut into 1-inch cubes
5 tablespoons extra-virgin olive oil
Kosher salt and black pepper
2 shallots, finely sliced
3 garlic cloves, finely chopped
1 (1-inch) piece ginger, peeled and finely chopped
2 cups arborio rice
1/2 cup Thai red or green curry paste (4 ounces)
4 1/2 cups vegetable stock
1/2 pound green beans, trimmed
1 (14-ounce) can coconut milk
4 makrut lime leaves, thinly sliced (optional)
1 lime, halved
1/3 cup cilantro, mint, basil or Thai basil leaves

Steps:

  • Position oven racks so that a sheet pan and Dutch oven can fit at the same time and heat oven to 400 degrees. Add the squash pieces to a rimmed sheet pan, add 2 tablespoons oil, and season with salt and pepper. Toss and roast until the squash is tender and starting to turn golden, 20 minutes.
  • As squash roasts, heat a large Dutch oven over medium. Add 2 tablespoons oil and the shallots, and cook until they've softened, 2 to 3 minutes. Add the garlic and ginger, and stir until fragrant, about 1 minute. Add the rice and stir until well coated in oil and lightly toasted, 2 minutes. Add the curry paste and stir until fragrant, 1 minute. Add vegetable stock, increase heat to high and bring to boil.
  • Reduce oven temperature to 350 degrees. Stir the rice so it does not stick to the bottom of the pan. Cover with a lid and bake until the rice is just slightly underdone, about 10 minutes.
  • As risotto cooks, check the squash. After 20 minutes, it should be just tender. Add the green beans to the same pan, drizzle the beans with the remaining 1 tablespoon oil, and season with salt and pepper, and season with salt and pepper. Roast until the beans are crisp-tender but still bright green, 8 to 10 minutes.
  • Once rice is al dente, move the pot to the stovetop and heat over medium-high. Add the coconut milk and makrut lime leaves, if using, and stir until the rice is creamy, about 3 minutes.
  • Turn off the heat and add juice of 1/2 lime. (Slice the other half into wedges.) Taste and season with salt and pepper. Serve with lime wedges, and top with herbs and roasted vegetables.
