We tried a couple of recipes; this was voted the best! The Gruyere gives a very sweet and nutty flavour to the fondue, the sharp Cheddar makes it tangy, and the Emmentaler blends it all. Cooking the flour first helps the mixture not to be so pasty and powdery.

1 cup white wine
1 tablespoon butter
1 tablespoon all-purpose flour
7 ounces Gruyere cheese, cubed
7 ounces sharp Cheddar cheese, cubed
7 ounces Emmentaler cheese, cubed

Steps:

  • Bring the wine to a boil in a small saucepan.
  • Meanwhile, melt the butter in a medium saucepan over medium low heat. Whisk in the flour, and cook for about 5 minutes, stirring constantly to avoid sticking and burning.
  • Once the flour is cooked, stir the wine into the flour mixture slowly. Use a whisk to smooth the mixture. Slowly add cubes of Gruyere, Cheddar, and Emmentaler cheese; stir until cheese is melted. Transfer cheese mixture to fondue pot. Keep warm over low flame.

1/3 pound fontina
1/3 pound gouda
2 tablespoons cornstarch
1 cup dry white wine (such as Sauvignon Blanc)
1 clove garlic (minced)
1 tablespoon fresh lemon juice
1 tablespoon brandy
1 teaspoon Dijon mustard
1/8 teaspoon nutmeg
Boiled baby new potatoes in their skins (quartered if large)
Lightly steamed broccoli florets
Lightly steamed cauliflower florets
Lightly steamed asparagus
Button mushrooms (wiped clean and stems removed)
Cherry tomatoes
Sliced firm apples (such as Granny Smith)
Cooked sliced hot sausage
Cubed French, sourdough, and/or pumpernickel bread

Steps:

  • Grate all of the cheeses. In a medium bowl, combine the cheeses with the cornstarch, tossing thoroughly to coat all pieces.
  • In a stove-safe fondue pot or large heavy saucepan, bring the wine, garlic, and lemon juice to a simmer over medium-low heat. Add the cheeses to the simmering liquid a little at a time, stirring well between each addition to ensure a smooth fondue. Once smooth, stir in the brandy, mustard, and nutmeg.
  • Arrange an assortment of bite-size dipping foods on a platter. If necessary, carefully pour the fondue into a fondue pot. Serve with fondue forks or wooden skewers. Dip and enjoy!

340g Gruyère
340g Beaufort
340g Comté
50 cl (2/3 bottle) of dry white wine like Apremont or Reisling
1 clove of chopped garlic
Pinch of salt and pepper
1 tablespoon of olive oil
2 baguettes
200g of mushrooms forestière
Pinch of paprika

Steps:

  • Grate all the cheese so that it melts easily without clumping.
  • (Optional) Wipe the mushrooms with a damp cloth and chop them into small pieces.
  • (Optional) Start by cooking the mushrooms lightly in a stovetop pot in olive oil and garlic.
  • Add approximately 1/2 bottle of white wine into the pot and simmer.
  • Slowly add in the cheese and mushrooms as it is melting.
  • Mix the cheese by forming 8 with a wooden spatula. Note: keep temperatures low as the cheese fondue must never boil.
  • Chop the baguette into bite-size square cubes.
  • Add additional wine into the pot if the cheese fondue is too thick.
  • Once the cheese has completely melted, move the mixture to the fondue pot and serve.

1 pound Swiss cheese, grated
1/2 Gruyère cheese, grated
3 tablespoons all purpose flour
1 teaspoon ground nutmeg
1/2 teaspoon ground white pepper
1 1/4 cups (about) dry white wine
3 large garlic cloves, minced
1 1-pound crusty French bread or sourdough bread, cut into 1 1/2-inch cubes

Steps:

  • Combine both cheeses, flour, nutmeg, and white pepper in large bowl; toss to coat. Bring 1 cup wine and garlic to simmer in a heavy large saucepan over low heat. Add cheese mixture by handfuls, whisking until melted and smooth after each addition. Mix in more wine by tablespoonfuls to reach desired consistency. Transfer to fondue pot.
  • Set fondue over candle or canned heat. Serve fondue with bread.

1 tablespoon cornstarch
2 teaspoons kirsch
1/2 lb emmenthaler cheese, coarsely grated (2 cups)
1/2 lb gruyere, coarsely grated (2 cups)
cubes French bread, on fondue forks or long wooden skewer

Steps:

  • Rub inside of a 4-quart heavy pot with cut sides of garlic, then discard garlic.
  • Add wine to pot and bring just to a simmer over moderate heat.
  • Stir together cornstarch and kirsch in a cup.
  • Gradually add cheese to pot and cook, stirring constantly in a zigzag pattern (not a circular motion) to prevent cheese from balling up, until cheese is just melted and creamy (do not let boil).
  • Stir cornstarch mixture again and stir into fondue.
  • Bring fondue to a simmer and cook, stirring, until thickened, 5 to 8 minutes.
  • Transfer to fondue pot set over a flame and serve with bread for dipping.

3/4 pound Gorgonzola dolce or other blue cheese, such as Stilton, crumbled
2 tablespoons plus 2 teaspoons cornstarch
1 tablespoon cream cheese
Kosher salt, to taste
Freshly ground black pepper, to taste
Crusty bread, apple cubes or grapes, for serving

Steps:

  • Rub cut side of garlic on inside of a large Dutch oven or a heavy-bottomed saucepan, rubbing the bottom and half way up the sides. Add wine and bring to a simmer over medium-high heat.
  • Meanwhile, in a large bowl, toss Gorgonzola with cornstarch. Add a quarter of the cheese into simmering wine; reduce heat to medium, and whisk constantly until cheese is completely melted. Repeat until all cheese has been added. Whisk in cream cheese. Season with salt and pepper. Serve with crusty bread, apple cubes and grapes.

1/4 cup hard alcoholic cider (dry) or 1/4 cup beer
1 tablespoon fresh lemon juice
1 pinch sugar
1 lb sharp cheddar cheese, shredded
2 tablespoons flour
7 ounces fresh lump crabmeat, picked over
1 teaspoon caraway seed, lightly toasted
1/2 teaspoon salt (to taste)
1 pinch cayenne pepper
optional shake red pepper flakes
crusty bread, in cubes for dipping

Steps:

  • in a douple boiler over simmering water, heat the cider or beer, lemon juice and sugar.
  • In a seperate bowl, toss cheasse with the flour.
  • When liquid is hot reduce heat, gradually stirl in cheese, and let i melt slowly. about 5 minutes.
  • MEeanwhile, heat crabmeat in am icrowave on medium high until warm, about 30 seconds. (this helps cheese from curdling later!).
  • Add crabmeat, caraway seed, salt, and cayenne to the melted cheese. Sprinkle with red pepper flakes for color. Transfer to a warm fondue pot and serve with the bread cubes alongside.
