These enchiladas are made with a fresh green salsa, just like you would find in a Mexican restaurant or better yet, in a Mexican home.

2 bone-in chicken breast halves
2 cups chicken broth
¼ white onion
1 clove garlic
2 teaspoons salt
1 pound fresh tomatillos, husks removed
5 serrano peppers
¼ white onion
1 clove garlic
1 pinch salt
12 corn tortillas
¼ cup vegetable oil
1 cup crumbled queso fresco
½ white onion, chopped
1 bunch fresh cilantro, chopped

Steps:

  • In a saucepan, combine chicken breast with chicken broth, one quarter onion, a clove of garlic, and 2 teaspoons salt. Bring to a boil, and then boil for 20 minutes. Reserve broth, set chicken aside to cool, and discard onion and garlic. When cool enough to handle, shred chicken with your hands.
  • Place tomatillos and serrano chiles in a pot with water, enough to cover them. Bring to boil, and continue boiling until tomatillos turn a different shade of green (from bright green to a dull, army green). Strain tomatillos and chiles, and place in a blender with another quarter piece of onion, 1 clove garlic, and a pinch of salt. Pour in reserved chicken broth, so that liquid just covers the veggies in the blender by about an inch. Blend all ingredients until they are completely pureed. Pour salsa in a medium saucepan, and bring to a low boil.
  • Pour oil in a frying pan, and allow to get very hot. Slightly fry tortillas one by one in hot oil, setting each on a paper towel afterwards to soak some of the oil. Finally, dip slightly fried tortillas in low-boiling green salsa, until tortillas become soft again. Place on plates, 3 per person.
  • Fill or top tortillas with shredded chicken, then extra green sauce. Top with crumbled cheese, chopped onion, and chopped cilantro.

Traditional Mexican green chicken enchiladas, made lighter!

1 lb 2 boneless, skinless chicken breasts
1 onion (halved and divided)
1 teaspoon kosher salt
18 white corn tortillas
3 cups salsa verde (jarred or homemade)
1 cup crumbled queso fresco
sour cream (optional to serve)
cilantro (optional garnish)

Steps:

  • Preheat oven to 400F.
  • Place the chicken breasts in a stock pot along with 1⁄2 an onion and salt and cover with water. Bring to a boil and simmer until cooked through, about 20 minutes.
  • Remove chicken from the water and let cool slightly. Shred chicken with two forks and set aside.
  • Mince the remaining onion and add to the shredded chicken.
  • In batches place 6 tortillas on a microwave safe dish and microwave 40 to 50 seconds to make them pliable so they don't crack. Keep them covered with a dish cloth to stay warm, then working one by one dip each warm tortilla in green salsa. Scoop two rounded tablespoons into each tortilla and roll tightly and place in a large casserole dish, seam side down, in a single layer. Repeat with the remaining tortillas and chicken.
  • Drench entire pan with 1 cup sauce and sprinkle with crumbled queso fresco.
  • Bake, covered in oven for 25 to 30 minutes. Remove from oven and serve with sour cream or additional queso fresco, if desired.

For Salsa Verde
1/2 lb. tomatillos (about 4), halved
2 cloves garlic (in their skins)
1 large onion, cut into 1-inch thick wedges
1 large poblano, halved, seeds discarded
1 jalapeño, halved, seeds discarded
1 tbsp. olive oil
7 tbsp. fresh lime juice
4 c. fresh cilantro
8 corn tortillas
3 c. shredded rotisserie chicken
2 scallions, thinly sliced
1 1/2 c. Monterey Jack cheese, coarsely grated
1 small red onion, thinly sliced

Steps:

  • Heat broiler. On a large rimmed baking sheet toss tomatillos, garlic, onion, poblano, and jalapeño with oil and ½ tsp each salt and pepper. Broil, rotating pan every 5 minutes until the vegetables are tender and charred, 15 minutes total. Reduce temp to 425F.
  • Discard skins from poblano and garlic and transfer all vegetables to a blender. Add 3 Tbsp lime juice, 3 cups cilantro, and ½ tsp salt and puree until smooth.
  • In a bowl, toss chicken with scallion and 2 Tbsp lime juice. Fold in ½ cup cilantro and 1 cup cheese.
  • Spread 1/2 cup salsa in a 13 x 9-inch baking dish and transfer the rest to a bowl. Working with one tortilla at a time, dip in salsa then fill about 1/2 cup chicken mixture. Roll the chicken mixture in the tortillas and place seam-side down in the dish. Repeat.
  • Top with the remaining salsa and sprinkle with cheese. Bake until beginning to brown, 8 to 10 minutes.
  • Meanwhile, in a small bowl, toss the red onion, remaining 2 Tbsp lime juice, and pinch each salt and pepper. Serve over enchiladas and top with cilantro, if desired.

2.5 lbs. tomatillos (about 15 medium-sized tomatillos)
1 white onion, diced
1 jalapeno, seeded and diced
4 cloves garlic, smashed
2 tbsp. avocado or olive oil
salt and pepper, to taste
4 oz can mild chopped green chiles
1/2 cup packed fresh cilantro
1/4 cup coconut cream (sub sour cream if not Paleo)
1 cup chicken broth
1/2 tsp. ground cumin
1/4 tsp. dried oregano
juice of 1 lime
2 cups shredded chicken (I shred a store-bough rotisserie chicken here)
8 Siete Foods Cassava and Coconut Flour Tortillas
shredded cheese (optional for topping)
Thinly Sliced Radishes
thinly sliced jalapeno
Sliced or cubed avocado
freshly chopped cilantro
Finely diced red onion

Steps:

  • Preheat oven to 375 degrees. Remove husks and rinse the tomatillos. Place on a baking sheet and roast in the oven for 30 minutes. Meanwhile, heat a skillet over medium heat. Add oil, onions, jalapeno, garlic, and a pinch of salt and pepper and saute until tender, about 7-10 minutes. When tomatillos are done, place in a blender with the sauteed onion mixture, broth, cilantro, green chiles, cumin, oregano, coconut cream (or sub sour cream), and lime juice. Blend until smooth. Taste and add salt and pepper, to taste. Reduce heat in the oven to 350 degrees. In a bowl, combine the shredded chicken with 1/2 cup of the enchilada sauce. Toss to coat. Heat the tortillas in the microwave for 15 seconds to loosen them up so that they are easier to roll. Pour 1 cup of the enchilada sauce on the bottom of a 9x13 baking dish, spread to coat the bottom. Place chicken filling on tortillas, gently roll up, and arrange in pan, seam side down. Pour 1-2 more cups over the top of the enchiladas so that they are all covered and they don't dry out in the oven. (You can top with shredded cheese here if you please) Spray a sheet of foil with non-stick spray (this helps prevent it from sticking to the enchiladas) and cover with foil and bake at 350 for 20 minutes. Remove foil and bake for another 10 minutes. Remove from oven and top with garnishes if you please. I topped with radishes, cilantro, jalapeno, red onion, and avocado.

1 cup chopped onion (1 medium onion)
1 tablespoon minced garlic (3 medium garlic cloves)
1/2 teaspoon ground cumin
1 1/2 cups chicken broth (low-sodium)
1 lb boneless skinless chicken breast (2 to 3 breasts)
1 1/2 lbs tomatillos, husks and stems removed, rinsed (16 to 20 medium)
3 medium poblano chiles, halved lengthwise, stemmed and seeded
1 teaspoon sugar
2 teaspoons salt
1 teaspoon black pepper
1/2 cup fresh cilantro, coarsely chopped
8 ounces monterey jack pepper cheese, grated (2 cups)
12 white corn tortillas (6-inch)
2 medium scallions, sliced thin

Steps:

  • Adjust oven racks to middle and highest positions and heat broiler. Heat 2 teaspoons oil in medium saucepan over medium heat until shimmering; add onion and cook, stirring frequently, until golden, 6 to 8 minutes. Add 2 teaspoons garlic and cumin; cook, stirring frequently, until fragrant, about 30 seconds. Decrease heat to low and stir in broth. Add chicken, cover, and simmer until instant-read thermometer inserted into thickest part of chicken registers 160 degrees, 15 to 20 minutes, flipping chicken halfway through cooking. Transfer chicken to large bowl; place in refrigerator to cool, about 20 minutes. Remove 1/4 cup liquid from saucepan and set aside; discard remaining liquid.
  • Meanwhile, toss tomatillos and poblanos with remaining 2 teaspoons oil; arrange on rimmed baking sheet lined with foil, with poblanos skin-side up. Broil until vegetables blacken and start to soften, 5 to 10 minutes, rotating pan halfway through cooking. Cool 10 minutes, then remove skin from poblanos (leave tomatillo skins intact). Transfer tomatillos and chiles to food processor. Decrease oven temperature to 350 degrees. Discard foil from baking sheet and set baking sheet aside for warming tortillas.
  • Add 1 teaspoon sugar, 1 teaspoon salt, remaining teaspoon garlic, and reserved cooking liquid to food processor; process until sauce is somewhat chunky, about eight 1-second pulses. Taste sauce; season with salt and pepper and adjust tartness by stirring in remaining sugar, 1/2 teaspoon at a time. Set sauce aside (you should have about 3 cups).
  • When chicken is cool, pull into shreds using hands or 2 forks, then chop into small bite-sized pieces. Combine chicken with cilantro and 11/2 cups cheese; season with salt.
  • Smear bottom of 13- by 9-inch baking dish with 3/4 cup tomatillo sauce. Place tortillas on 2 baking sheets. Spray both sides of tortillas lightly with cooking spray. Bake until tortillas are soft and pliable, 2 to 4 minutes. Increase oven temperature to 450 degrees. Place warm tortillas on countertop and spread 1/3 cup filling down center of each tortilla. Roll each tortilla tightly and place in baking dish, seam-side down. Pour remaining tomatillo sauce over top of enchiladas. Use back of spoon to spread sauce so that it coats top of each tortilla. Sprinkle with remaining 1/2 cup cheese and cover baking dish with foil.
  • Bake enchiladas on middle rack until heated through and cheese is melted, 15 to 20 minutes. Uncover, sprinkle with scallions, and serve immediately.

10-12 Medium Tomatillos, husks removed and tomatillos rinsed and then halved
1 Yellow Onion, cut into large chunks
2 Cloves Garlic, peeled
3 Serranos, halved
Salt & Pepper
2 Teaspoons Extra-Light Olive Oil
Large Handful Cilantro
1 Lime, juiced
2 Cups Vegetable Broth
1 Tablespoon Extra-Light Olive oil
1 Small Onion, finely chopped
2 Cloves Garlic, finely minced
10 oz. Extra-Firm Tofu, sliced and pressed between paper towels to drain
Salt & Pepper
½ Teaspoon Cumin
2 Tablespoons Finely Chopped Cilantro

2 Cups Pepper Jack

Steps:

  • Preheat the oven to 425º. Combine the tomatillos, onion, garlic, and serranos on a baking sheet. Season the vegetables liberally with salt and pepper and drizzle with the olive oil. Roast the mixture for 15-20 minutes, or until everything is soft and slightly charred. Place the tomatillo mixture into a blender and add in the cilantro, lime juice, and chicken broth. Puree until mostly smooth. Set aside. Heat the olive oil in a skillet over medium-high heat. Add in the onions and garlic and sauté for 1 minute. Add the tofu into the pan by crumbling it with your fingers. Season well with salt and pepper, and then add in the cumin. Once the tofu is brown around the edges, stir in the cilantro and ¼ cup of the salsa verde. Turn the oven to 350º. Cover the bottom of a 9x13 inch baking dish with a thin layer of the salsa verde and set aside. Wrap the corn tortillas in a damp paper towel and heat in the microwave for 1 minute. Lay a tortilla out on a work surface and sprinkle with a small amount of the cheese, and then top with a spoonful of the tofu mixture. Roll tightly and place the enchilada seam-side down in the baking dish. Repeat with the remaining tortillas and filling. Cover the enchiladas with all but a half-cup of the salsa verde. Top with the remaining cheese and bake the enchiladas for 15 minutes, or until the cheese is melted, but not browned. Top the enchiladas with thinly sliced red onion, queso fresco, and cilantro. Serve with the remaining salsa verde and sour cream. Yum!

1/4 bar of cream cheese
1 tsp Salt (pepper, paprika, and cumin to taste)
1 tsp Pepper

1/4 cup of chicken stock
8-10 tomatillos
1/4 white onion
1/4 bunch cilantro
2 cloves of garlic
1 can table cream (7.6 ounce can)
1/4 cup of chicken stock
1 jalapeno pepper (optional)
salt and pepper to taste
12 Corn Tortillas
1 Cup Grated Mozzarella Cheese
Cilantro and Onion (chopped)

Steps:

  • Heat the shredded chicken on a frying pan and season with salt, pepper, cumin and paprika to taste
  • Add the cream cheese and cook until completely combined with chicken
  • Add 1/4 cup of chicken stock let cook for 5 additional minutes. Remove from heat and set aside.
  • Boil the tomatillos, garlic, onion and jalapeno for 5-7 minutes. Then blend in a blender with the cilantro, the table cream, and 1/4 cup of chicken stock.
  • Once blended, pour into a hot frying pan with a little bit of olive oil and let cook for 3-5 minutes.
  • Add salt and pepper to taste.
  • Heat the tortillas either in the microwave or on the stove top.
  • Coat each tortilla in the salsa verde.
  • Fill each tortilla with the chicken filling and roll.
  • Place the rolled tortillas in a baking dish and cover with the remaining salsa verde, and the mozzarella cheese.
  • Bake at 400 degrees Fahrenheit for 15-20 minutes, or until the cheese is melted.
  • Top with cilantro and onion if desired.

Authentic recipe for enchiladas verde learned in a Mexican home kitchen in Guanajuato, Mexico. The salsa can also be used for dip, for chilaquiles, or thinned with broth and used as a base for pozole verde. This recipe is light and delicate with a well-defined mix of flavors. If you're not used to authentic Mexican enchiladas, these are not as gooey as those found in the US, but quite flavorful and easier to make. Plan on serving them immediately after assembly--they do NOT go into the oven!

2 boneless skinless chicken breast halves (Leftover turkey also works well.)
2 -3 garlic cloves, halved
1/2 medium onion, quartered
1 tablespoon chicken bouillon powder
20 medium tomatillos
1/2 medium onion, quartered
2 -3 garlic cloves
3 serrano chilies, seeds, stem and ribs removed (more if you want more heat)
1 cup fresh cilantro leaves (one large bunch)
1 tablespoon chicken bouillon powder
12 white corn tortillas (or up to 16)
1 cup queso fresco (Mexican style cheese) or 1 cup queso anejo (Mexican style cheese)
1/2 cup sour cream thinned with milk or 1/2 cup cream
1 cup lettuce, shredded
1/2 cup tomatoes, chopped
1/4 cup cilantro leaf (to garnish)

Steps:

  • Place the chicken breast in a pot of water with 1/2 onion and 2-3 garlic cloves. Season with a little salt and/or a small amount of powdered chicken bouillon. Bring to a boil, cover, reduce heat and simmer until chicken is thoroughly cooked and shreds easily. Keep warm once cooked.
  • Remove the outer husk from tomatillos, wash and place in a large pot of water with the serrano chiles. Bring to a boil and cook just until tomatillos change color to a dull olive green--no more than 5-10 minutes.
  • Puree the tomatillos in a blender, adding the serrano chiles, and remaining garlic and onion. Add the cilantro and pulse until well blended. Pour into a saucepot, taste for seasonings, and add about a tablespoon of chicken bouillon powder if needed. Heat thoroughly, but do not overcook.
  • Remove chicken from water, place it on a cutting board and using two forks or your fingers, shred finely along the natural grain lines of the meat. Keep warm in a bowl, and add a few drops of cooking water if needed to keep it moist.
  • Heat tortillas on a griddle or in the microwave. Spread about a tablespoon of sauce on a tortilla, add enough chicken to fill it, roll up the tortilla and place seam side down on the serving platter or individual dinner plates. Repeat, placing enchiladas close together. Pour sauce over the enchiladas, and garnish with a few tablespoons of cream, some shredded cheese, the lettuce, tomato and cilantro. (Unlike enchiladas north of the border, these do not go into the oven--they are served immediately upon making.).
  • Extra sauce can be used in other recipes.

3 skin-on, bone-in chicken breasts (about 2 pounds)
1 cup plus 2 tablespoons vegetable oil
1 1/2 pounds tomatillos, husked and rinsed
6 cloves garlic, unpeeled
2 to 3 jalapeno chiles, stemmed
1 large white onion, quartered
6 poblano peppers, stemmed
2 teaspoons ground coriander
1 teaspoon ground cumin
1 teaspoon dried Mexican oregano, plus more for serving
Kosher salt
1 cup cilantro leaves and tender stems, plus more for serving
Ten 6-inch corn tortillas
1/2 cup creme fraiche
1 tablespoon milk
8 ounces queso fresco, crumbled
Thinly sliced white onion, for serving
Lime wedges, for serving

Steps:

  • Arrange racks in the upper and lower thirds of the oven and preheat to 450 degrees F.
  • Place the chicken on a rimmed baking sheet and brush with 2 tablespoons of the oil. Roast on the lower rack until the skin is lightly golden and the chicken is cooked through, 40 to 45 minutes. Let sit until cool enough to handle.
  • While the chicken is roasting, spread the tomatillos, garlic, jalapenos and onion on a second rimmed baking sheet. Roast on the top rack, tossing once or twice, until the tomatillos are tender and the jalapenos are browned and very tender, 30 to 40 minutes. Let cool.
  • Once the chicken is cool, discard the skin and bones and shred the meat into 1/2-inch pieces. Put into a large bowl and set aside.
  • Meanwhile, char the poblanos. Turn your gas burner to high. Place 2 to 3 poblanos directly on the grate and roast, turning with tongs every 3 to 4 minutes, until the entire pepper is blackened and very tender, 8 to 10 minutes. Transfer to a large heatproof bowl and repeat with the remaining poblanos. (Alternatively, if you have an electric stove, arrange the poblanos on a rimmed baking sheet and broil on high as close to the heat source as possible, turning occasionally, until the peppers are charred on all sides, 15 to 20 minutes. Transfer to a large heatproof bowl.)
  • Wrap the bowl tightly with plastic wrap and let the poblanos steam for 15 minutes to loosen their skin. When they are cool enough to handle, peel all the blackened skin from the peppers; it's ok if there are flecks of black on the flesh or if some of the green skin is difficult to peel off. Split the sides open to remove the seeds, rinsing under cold running water if needed. Transfer the cleaned peppers to a blender.
  • Remove the skin from the garlic cloves and add to the blender along with the tomatillos, jalapeno, onion and any accumulated juices. Add the coriander, cumin, oregano and a 1 ½ teaspoons of salt and puree on medium-low speed until smooth. Add the cilantro and puree on low speed until the cilantro is chopped but you can still see pieces of it in the sauce. Transfer the sauce to a large bowl and generously season with salt. You should have about 5 cups.
  • Toss the reserved chicken with 3/4 cup of the salsa verde in a large bowl and generously season with salt.
  • Heat the remaining 1 cup oil in a medium skillet over medium-high heat until it bubbles immediately when you touch the edge of a tortilla to the surface. Working with one at a time, fry the tortillas, turning once, until just starting to brown, about 10 seconds per side; the tortillas should still be pliable. Transfer the tortillas to paper towels to drain. Repeat with the remaining tortillas.
  • Dip both sides of each tortilla in salsa verde to coat, and then transfer to a large plate. Spread 1 cup of the salsa verde evenly over the bottom of a 13-by-9-inch glass baking dish. Working with one tortilla at a time, spoon about 1/4 cup of the chicken filling across the center of a tortilla. Then fold one side of the tortilla over the filling and roll up the enchilada. Place them seam-side down in the prepared baking dish as you go (they should be nestled right up against each other). Top with any remaining salsa verde.
  • Wrap the dish tightly with foil and bake on the upper rack until the sauce is bubbling and the tortillas are beginning to brown, 20 to 25 minutes. Let sit for 10 minutes.
  • Meanwhile, whisk together the creme fraiche and milk in a small bowl. Season with salt.
  • Top the enchiladas with the queso fresco, crema, cilantro leaves and onion slices. Serve with lime wedges for squeezing over.

Steps:

  • Shred chicken.
  • Mix chicken with 3/4 cups salsa verde, 1 1/2 cups cheese, 1/4 cup cilantro, salt, and pepper.
  • Preheat oven to 400 degrees F.
  • Spread 1 cup salsa over bottom of a 9 X 13 inch baking dish.
  • Microwave tortillas on high in MICROWAVE SAFE plastic bag until warm, about 45 seconds. (So they are easier to roll.).
  • Working one at a time, spoon about 1/4 cup chicken filling onto a tortilla-roll into a cylinder and place, seam side down, in baking dish.
  • Drizzle enchiladas with 1 1/2 cups of salsa, sprinkle with remaining cheese.
  • Lightly spray sheet of foil with cooking spray, cover dish and bake until heated through, about 30 minutes.
  • Remove foil-sprinkle with onion and remaining cilantro-let stand a few minutes.
  • Serve with remaining salsa, sour cream, and guacamole.
  • Note about freezing: Make up filling through step 2, freeze, defrost in fridge 24 hours before, and proceed with remaining part of recipe.

2 bone-in chicken breast halves
2 cups chicken broth
1/4 white onion
1 garlic clove
2 teaspoons salt
1 lb fresh tomatillo, husks removed
5 serrano peppers
1/4 white onion
1 garlic clove

12 corn tortillas
1/4 cup vegetable oil
1 cup crumbled queso fresco
1/2 white onion, chopped
1 bunch fresh cilantro, chopped

Steps:

  • In a saucepan, combine chicken breast with chicken broth, one quarter onion, a clove of garlic, and 2 teaspoons salt. Bring to a boil, and then boil for 20 minutes. Reserve broth, set chicken aside to cool, and discard onion and garlic.
  • When cool enough to handle, shred chicken with your hands.
  • Place tomatillos and serrano chiles in a pot with water, enough to cover them. Bring to boil, and continue boiling until tomatillos turn a different shade of green (from bright green to a dull, army green).
  • Strain tomatillos and chiles, and place in a blender with another quarter piece of onion, 1 clove garlic, and a pinch of salt. Pour in reserved chicken broth, so that liquid just covers the veggies in the blender by about an inch. Blend all ingredients until they are completely pureed.
  • Pour salsa in a medium saucepan, and bring to a low boil.
  • Pour oil in a frying pan, and allow to get very hot. Slightly fry tortillas one by one in hot oil, setting each on a paper towel afterwards to soak some of the oil.
  • Finally, dip slightly fried tortillas in low-boiling green salsa, until tortillas become soft again. Place on plates, 3 per person.
  • Fill or top tortillas with shredded chicken, then extra green sauce. Top with crumbled cheese, chopped onion, and chopped cilantro.

1 pound cooked shredded chicken ((perfect use of leftovers or rotisserie chicken!))

12 corn tortillas
3 cups shredded Cacique® Manchego cheese, (divided)
chopped onions, (for topping)
chopped cilantro, (for topping)

Steps:

  • Preheat oven to 375°F.
  • In a medium saucepan, over medium-high heat, add salsa verde. Heat up until almost boiling and remove from heat. Add Cacique® Crema Mexicana and whisk together until fully combined.
  • In a large bowl, add shredded chicken and 1/2 cup salsa verde cream sauce. Toss together to coat chicken. Taste and season with salt if necessary.
  • Wet an extra long paper towel with water until slightly damp. Wrap the corn tortillas in the damp paper towel and microwave for 25 seconds. This will warm and soften the tortillas so they're pliable and don't rip.
  • Assemble the enchiladas by filling the tortillas with shredded chicken and 2 cups of shredded cheese. Place the enchiladas seam side down in a large 3-quart baking dish.
  • Pour the remaining salsa verde cream sauce on top of the enchiladas and top with remaining 1 cup of shredded cheese.
  • Bake for 15 minutes.
  • Top with chopped onions and fresh cilantro.

2 lbs of chicken breasts ( - boneless, skinless)
2 cups of water
¼ of an onion
1 garlic clove ( - about 1 tbsp minced)
1 teaspoon salt
2 lbs of tomatillos
1-2 Serrano Chiles ( depending on how spicy you want the sauce)
2 cups of water (+1 additional cup if you would like for your sauce to be thinner)
1 cup of chopped cilantro
¼ of an onion
2 garlic cloves ( - about 2 tbsp minced)
1 teaspoon salt (plus extra to taste)
pepper ( to taste)
18 - 20 Corn tortillas
3 tablespoons vegetable oil
prepared- cooked and shredded chicken
prepared tomatillo sauce
½ cup sour cream
1 cup shredded Mozzarella cheese

Steps:

  • Add chicken, two cups of water, onion, 1 teaspoon of salt, 1 garlic clove to the Instant Pot insert.
  • Cook on high for 10 minutes. (If you are using the stove do the same. Add the ingredients to a pot but let the chicken cook for about 40 minutes until it is well cooked, and easy to shred.) Quick release is once done.
  • Meanwhile, in a saucepan combine 2 cups of water and the tomatillos and boil for about 5 - 10 minutes. Remove from the heat.
  • While the tomatillos are boiling AND once the chicken is ready, remove it from the Instant Pot and shred it by using 2 forks and pulling it apart. Set aside.
  • In a skillet., add 1 tablespoon of oil, and heat the tortillas one at a time for just a couple of minutes - letting them get hot and adequately covered in oil - but don't cook them to the point where they start to harden or they won't roll. You want them pliable. (This will help the tortillas remain in intact and not break while you are rolling the enchiladas.)
  • In a blender, blend the cooked tomatillos, the water used to boil them, chiles, cilantro, onion, and the remaining two garlic cloves.
  • Transfer the blended mixture to a saucepan, add 1 tablespoon of oil, salt and pepper to taste. If you would like your sauce to be thinner, you can add the extra water. Bring to a simmer and then remove from the heat.
  • Take your baking dish and add a layer of sauce - about 1/2 cup or just enough to cover the bottom. Set aside.
  • Preheat the oven to 350ºF.
  • Dip a heated tortilla in the sauce and then place it on a plate and add about 1 tablespoon of shredded chicken done the center.
  • Drizzle about 1 tablespoon of sauce over the chicken.
  • Roll the tortilla and place it in the baking dish.
  • Repeat with the remaining tortillas and place them all next to each other until you fill your dish.
  • Once they are all placed, pour some of the sauce over the top - about 1 cup or to your liking depending on if you like it saucy or with just a little sauce.
  • Add the sour cream and add the cheese in an even layer on top.
  • Bake 15 to 20 minutes, or until the cheese is completely melted and bubbling.
  • Remove from the oven and serve warm.

After watching this episode of America's Test Kitchen, I had to make this! I used canned tomatillos and poblano chiles (28 oz. can) and it tasted wonderful! So fresh and delicious! I didn't think it was too spicy, even using Pepper Jack cheese. Here are the comments from their original recipe: "You can substitute three 11-ounce cans of tomatillos, drained and rinsed, for the fresh ones in this recipe. Halve large tomatillos (more than 2 inches in diameter) and place them skin-side up for broiling to ensure even cooking and charring. If you can't find poblanos, substitute 4 large jalapeño chiles (with seeds and ribs removed). To increase the spiciness of the sauce, reserve some of the chiles' ribs and seeds and add them to the food processor."

  • Heat 2 teaspoons oil in medium saucepan over medium heat until shimmering; add onion and cook, stirring frequently, until golden, 6 to 8 minutes.
  • Add 2 teaspoons garlic and cumin; cook, stirring frequently, until fragrant, about 30 seconds.
  • Decrease heat to low and stir in broth.
  • Add chicken, cover, and simmer until instant-read thermometer inserted into thickest part of chicken registers 160 degrees, 15 to 20 minutes, flipping chicken halfway through cooking.
  • Transfer chicken to large bowl; place in refrigerator to cool, about 20 minutes.
  • Remove 1/4 cup liquid from saucepan and set aside; discard remaining liquid.
  • If using fresh tomatillos and poblano chiles adjust oven racks to middle and highest positions and heat broiler (if using canned, skip to step 11 ).
  • Toss tomatillos and poblanos with remaining 2 teaspoons oil; arrange on rimmed baking sheet lined with foil, with poblanos skin-side up.
  • Broil until vegetables blacken and start to soften, 5 to 10 minutes, rotating pan halfway through cooking.
  • Cool 10 minutes, then remove skin from poblanos (leave tomatillo skins intact).
  • Transfer tomatillos and chiles to food processor.
  • Set oven temperature to 350 degrees.
  • Discard foil from baking sheet and set baking sheet aside for warming tortillas.
  • Add 1 teaspoon sugar, 1 teaspoon salt, remaining teaspoon garlic, and reserved cooking liquid to food processor; process until sauce is somewhat chunky, about eight 1-second pulses.
  • Taste sauce; season with salt and pepper and adjust tartness by stirring in remaining sugar, 1/2 teaspoon at a time.
  • Set sauce aside (you should have about 3 cups).
  • When chicken is cool, pull into shreds using hands or 2 forks, then chop into small bite-sized pieces.
  • Combine chicken with cilantro and 1 1/2 cups cheese; season with salt.
  • Smear bottom of 13- by 9-inch baking dish with 3/4 cup tomatillo sauce.
  • Place tortillas on 2 baking sheets; spray both sides of tortillas lightly with cooking spray.
  • Bake until tortillas are soft and pliable, 2 to 4 minutes.
  • Increase oven temperature to 450 degrees.
  • Place warm tortillas on countertop and spread 1/3 cup filling down center of each tortilla.
  • Roll each tortilla tightly and place in baking dish, seam-side down.
  • Pour remaining tomatillo sauce over top of enchiladas; use back of spoon to spread sauce so that it coats top of each tortilla.
  • Sprinkle with remaining cheese and cover baking dish with foil.
  • Bake enchiladas on middle rack until heated through and cheese is melted, 15 to 20 minutes.
  • Uncover, sprinkle with scallions, and serve immediately, passing radishes and sour cream separately.

15 medium-sized tomatillos, husks removed
3 jalapeno peppers, ribs and seeds removed
4 cloves garlic, peeled
1/2 cup fresh packed cilantro
1 cup chicken broth
1/2 cup sour cream
salt to taste
10 or so 8-inch tortillas - corn or flour will work
12 ounces shredded cheese - Pepper Jack or Monterrey Jack are my favorites
1 lb. cooked chicken, shredded
additional mix-ins like sautéed mushrooms, white beans, spinach, or whatever is striking your fancy

Steps:

  • Preheat the oven to 425 degrees. Line a baking sheet with foil. Place tomatillos and jalapeños on the baking sheet. Wrap peeled garlic in foil and add to baking sheet. Drizzle everything with a little olive oil and sprinkle with salt. Roast for 30 minutes, stirring halfway to prevent excessive scorching. Pulse everything in a blender (including juices). Add other sauce ingredients, blend until smooth. Season with salt to taste.
  • In a large bowl, combine about one third of the sauce (2 or so cups) with the chicken. Stir in about half of the cheese and any other mix-ins you want.
  • Reduce the oven temperature to 400 degrees. Grease a 9×13 baking dish. Place filling on tortillas, roll up, and arrange in pan, seam side down. Cover with another cup or two of sauce and remaining cheese (just eyeball it). Bake for about 15 minutes, until bubbly and delish. Top with cilantro or cotija or red onion - all your favorite standbys are welcome.

I learned this recipe from an amazing cook from Puebla. I've been perfecting it for over 15 years and realized that it was time to share it when my foodie friends tried to drink the sauce out of the saucepan. I use the roasted or baked chicken from the grocery store. I did it once only to save time, but found that they are tastier. Be conservative with the cream and the cheese. Do not use sour cream!

2 cloves garlic
3 serrano peppers
2 ¼ pounds small green tomatillos, husks removed
1 cup vegetable oil for frying
9 corn tortillas

4 teaspoons chicken bouillon granules
½ store-bought rotisserie chicken, meat removed and shredded
¼ head iceberg lettuce, shredded
1 cup cilantro leaves
1 (8 ounce) container Mexican crema, crema fresca
1 cup grated cotija cheese

Steps:

  • Cover a large griddle with aluminum foil and preheat to medium-high.
  • Cook the garlic, serrano peppers, and tomatillos on the hot griddle until toasted and blackened, turning occasionally, about 5 minutes for the garlic, 10 minutes for the peppers, and 15 minutes for the tomatillos. Remove to a bowl and allow to cool.
  • Heat oil in a small, deep skillet to 350 degrees F (175 degrees C). Using kitchen tongs, fry the tortillas individually, turning them once. They shouldn't be in the hot oil for more than 5 seconds per side. Remove excess oil with paper towels and keep warm. Remember that the hotter the oil, the less that the tortillas will absorb.
  • Place the toasted garlic, serrano peppers, tomatillos, and the water in a blender and blend until smooth; pour into a saucepan over medium heat and bring to a boil. Dissolve the chicken bouillon into the mixture, reduce heat to medium-low, and cook at a simmer until slightly thickened, about 10 minutes. The sauce shouldn't be too thick.
  • Soak three tortillas in the sauce, one at a time, for a few seconds, fill them with shredded chicken, sprinkle the meat with some of the sauce, roll them and place them seam side down on a pasta bowl. Spoon a generous amount of sauce over them and top them with lettuce, cilantro, crema, and cotija cheese. Pour a little more sauce over the whole thing if desired. Repeat the procedure twice more. Serve immediately.

8-10 corn tortillas.
1 1/2 jars Casa Martinez Salsa Verde Tatemada.
2.5 cups shredded chicken.
1 1/4 cup shredded Oaxaca cheese.
Nestle media crema to taste.
red and green jalapenos to taste.
cilatro to taste.

Steps:

  • Bring the salsa verde to a boil and transfer to a bowl, salt and pepper to taste.
  • Warm up your corn tortillas so they are easier to fold.
  • Add 3-4 spoonfuls of the salsa verde into the chicken and mix well.
  • Dip the corn tortilla into the salsa verde.
  • Place the tortilla onto a cutting board, add some of the chicken to the edge.
  • Add a little bit of cheese on top of the chicken and roll them up like a little taco.
  • Repeat for the rest of your tortillas.
  • Spread half of the salsa verde on the bottom of a 9 x 13 baking dish.
  • Add the enchiladas to the baking dish.
  • Top with the rest of the salsa verde.
  • Spoon some media crema on top.
  • Add the sliced red/green jalapenos and some cheese on top.
  • Bake uncovered for 350 for 30 minutes and broil for 2 minutes.
  • Top with some fresh cilantro and more media crema.

2 whole young chicken breasts
1 cup chicken stock (or water)
2 teaspoons salt
2 garlic cloves, chopped
1 teaspoon black pepper
3/4 cup corn or canola oil
1 dozen flour tortillas
Salsa Verde, recipe follows
1 pound grated asadero-style cheese (substitutes: mozzarella or Monterey Jack)
Sour cream, for garnish
2 pounds green tomatillos
1 or 2 jalapenos
3 large garlic cloves
1/2 cup water
1 tablespoon salt

Steps:

  • In a saute pan, bring the chicken stock , salt, garlic, and black pepper to a boil. Add the chicken breasts, and simmer for 15 to 20 minutes. Leaving chicken in the liquid, allow to cool. When cool, remove the chicken. Bone and shred the chicken breasts and return to the liquid. Set aside. Preheat oven to 450 degrees F. Heat the oil in a skillet. Pass the tortillas, one at a time, quickly through the oil, about 10 seconds per side. Place tortillas between paper towels to absorb excess oil. To assemble, put about 1/12th of the shredded chicken on each tortilla, sprinkling 1 teaspoon of the simmering liquid on top. Spread one tablespoon of the Salsa Verde over the chicken. Roll the tortilla around the chicken and sauce and place in a greased ceramic or glass casserole. Continue with the rest of the tortillas and filling until the entire filling is used up. Pour 3/4 of the remaining salsa verde over the enchiladas. Sprinkle with the grated cheese. Bake for 5 minutes then, check the progress. Continue baking until sauce begins to bubble, which may mean an additional 5 minutes. Top with sour cream when serving. Serve remaining salsa verde at the table. Note: Salsa verde can be made in advance and refrigerated for 3 to 4 days. Warm the refrigerated sauce before assembling the enchiladas.
  • For the sauce, clean the thin dry skins off the tomatillos. Boil all the ingredients together until soft, about 10 minutes. Cool for 30 minutes then, puree in a food processor. This should yield about 3 cups; if sauce seems too thick, thin with chicken stock to pourable paste consistency. Set aside.

1 tablespoon fresh lime juice
1/2 teaspoon ground cumin
1/4 teaspoon salt
1/8 teaspoon black pepper
Salsa verde, recipe follows
Nonstick cooking spray
8 (6-inch) corn tortillas
1/4 cup fat-free sour cream
Sliced jalapeno pepper (optional)
1 pound tomatillos (about 15)
1 1/4 cups fat-free, less-sodium chicken broth
1/4 teaspoon salt
1 jalapeno pepper, seeded and chopped

Steps:

  • Preheat oven to 400 degrees.
  • To prepare enchilada filling, combine chicken and next 9 ingredients (chicken through black pepper) in a large bowl. Spread 1/2 cup salsa verde in bottom of a 13 by 9-inch baking dish coated with cooking spray. Warm tortillas according to package directions. Spoon about 1/3 cup chicken mixture down center of each tortilla; roll up. Arrange enchiladas, seam sides down, crosswise in dish. Pour remaining salsa verde evenly over enchiladas. Cover and bake at 400 degrees for 10 minutes or until thoroughly heated. Serve with sour cream, and garnish with sliced jalapeno, if desired.
  • To prepare salsa verde, discard husks and stems from tomatillos; cut into quarters. Combine tomatillos, 11/4 cups broth, 1/4 teaspoon salt, and chopped jalapeno in a saucepan over medium heat. Bring to a boil; reduce heat, and simmer 15 minutes or until tomatillos are tender. Cool slightly. Place salsa verde in a blender or food processor, and process until smooth or mash with a potato masher. Place a large nonstick skillet over medium-high heat until hot. Add salsa verde; cook until reduced to 2 cups (about 1 minute).
