3/4 teaspoon grated lime zest
1/4 teaspoon ground cumin
1/2 teaspoon salt, divided
2 tablespoons canola oil, divided
2 garlic cloves, minced
2 cans (15 ounces each) pinto beans, rinsed and drained
1 to 2 teaspoons hot pepper sauce
1 teaspoon chili powder
6 corn tortillas (6 inches)
2 cups shredded lettuce
1/2 cup salsa
3/4 cup crumbled feta cheese or queso fresco
Lime wedges

Steps:

  • In a small bowl, mix sour cream, lime zest, cumin and 1/4 teaspoon salt. In a large saucepan, heat 1 tablespoon oil over medium heat. Add garlic; cook and stir just until fragrant, about 45 seconds. Stir in beans, pepper sauce, chili powder and remaining salt; heat through, stirring occasionally. Keep warm., Brush both sides of tortillas with remaining oil. Place a large skillet over medium-high heat. Add tortillas in two batches; cook until lightly browned and crisp, 2-3 minutes on each side., To serve, arrange beans and lettuce over tostada shells; top with salsa, sour cream mixture and cheese. Serve with lime wedges.

Perfect Old Fashioned Pinto Beans with a LOAD of flavor! Just know, if you are sensitive to salt, you can decrease the salt for cooking and add at the end.

1 16 oz bag of pinto bean
2 tsp olive oil
1 small yellow onion - diced
2 cloves garlic - minced
4 slices of thick cut applewood smoked bacon
1 tsp salt (less if you are sensitive)
4 tsp chicken broth concentrate
1 bay leaf
1 tsp granulated white sugar

Steps:

  • Rinse the bag of beans well and remove any that look like they are past their prime. If unsure - chuck it.
  • Pour the beans into a large bowl and cover with at least 2 inches of water and allow to soak overnight. Alternately, you can boil the beans at a steady boil for about 10 minutes before you begin to cook them. Whether you soak or parboil, pour the water off from this step.
  • In a six quart stock pot on medium heat, heat the olive oil and saute the onion and garlic until they smell really good and the pieces become translucent.
  • Remove the pot from the heat and add the beans, bacon, salt, chicken broth concentrate, one bay leaf and sugar and enough cool clean water to cover the beans by 2 inches. (If you are sensitive to salt, then you can always decrease the amount)
  • Heat the beans on medium until they come to a light boil then reduce the heat to low.
  • Stir the beans occasionally and don't let them get to a strong boil. Cook until done. I tell doneness by tasting - you could also spoon some out and smash it in your fingers. If it is smashy- through and through - they are done.

1 tbsp olive oil
1 large onion , finely chopped
2 celery sticks , finely chopped
3 carrots , finely chopped
3 red peppers , sliced
2 garlic cloves , crushed
2 tbsp tomato purée
400g can cannellini beans , rinsed and drained
400g pinto beans , rinsed and drained
400g borlotti beans , rinsed and drained
2 x 400g cans chopped tomatoes
1 vegetable stock cube (check the label if you're vegan)
2 bay leaves
1 tbsp brown sugar
½ tbsp red wine vinegar

Steps:

  • Heat the oil in a large pan or casserole on a medium heat. Fry the onion, celery and carrots for 10 mins until soft and golden, then add the peppers and fry for another 5 mins.
  • Stir in the garlic for a minute, then add the tomato purée, all the beans and chopped tomatoes, then swirl out the tomato cans with a splash of water and add to the pan with the stock cube, bay leaves, sugar and vinegar. Season and simmer, uncovered, for 25 mins until the sauce reduces to coat the beans and the peppers are soft. Leave to cool before storing in transportable containers. Will keep in the fridge for 3 - 4 days or freeze in portions and defrost in the fridge overnight. Choose your toppingsSweet & spicyAdd diced dried apricots and 1 tbsp harissa. 4 slices bacon or 4 slices salt pork

2 quarts water

  • Clean beans and wash well with water.
  • Put beans in large pot, add water.
  • Bring beans to boil and let boil for 1 hour.

1 pound pinto beans* ((soaked overnight in cool water // or for at least 6 hours))
1 Tbsp olive oil
1/2 medium white onion ((diced))
3 large cloves garlic, minced ((3 cloves yield ~1 1/2 Tbsp))
1 pinch each sea salt + black pepper ((plus more to taste))
1 cube quality vegetable bullion
1 chipotle pepper in adobo sauce, minced ((plus 1 tsp adobo sauce as original recipe is written // plus more to taste))
1/2 cup diced tomatoes and green chilies ((I used Muir Glen fire roasted tomatoes with green chilies))
1 Tbsp ground cumin
1 Tbsp chili powder*
1/4 tsp ground cinnamon ((optional))

Steps:

  • Add pinto beans to a large pot and cover with cool water (at least a few inches above the beans as they will expand). Soak for at least 6 hours or overnight* uncovered at room temperature.
  • Once beans are soaked, drain and set aside.
  • Heat your large pot over medium heat. Once hot, add olive oil, diced onion and garlic, and season with a healthy pinch each sea salt and black pepper (amount as original recipe is written // adjust if altering batch size). Stir to coat and sauté for 3-4 minutes, or until onion is soft and translucent.
  • Next add drained beans and bouillon cube and cover with water about 2 inches over the top, as the beans will expand while cooking. If using vegetable broth in place of a bouillon cube, add vegetable broth first, and then water so you don't add too much liquid.
  • Add chipotle pepper and diced tomatoes, stir and bring to a low boil. Then reduce heat to low or medium-low and simmer for 40-50 minutes (time as original recipe is written // adjust if altering batch size), or until beans are tender.
  • Once the beans are tender and cooked through add remaining seasonings: adobo sauce, salt, pepper, cumin, chili powder, and cinnamon (optional). Stir to coat and cook on low for 10 more minutes to let the flavors meld.
  • Taste and adjust seasonings as needed, adding more salt to taste, cumin for smokiness, chili for depth of flavor, cinnamon for warmth, or adobo sauce (and minced adobo peppers) for heat. You want them very well seasoned, so don't be shy!
  • Your beans are now ready to enjoy! These make a delicious addition to burrito bowls, burritos, tacos, nachos, taco salads, veggie burgers, and more. You could also add them to chili!
  • Store beans well covered in the refrigerator up to 5 days. Will keep in the freezer for 1 month (oftentimes longer).

We live in a very rural area and I normally place an order online to get my 80+ lbs of premium dog kibble each month to keep my German Shepherds healthy and happy. Once in a while the kibble delivery has been delayed due to snow or bad weather and yet my dogs had to be fed, so I did some research. I knew that I needed to make their coming week's food from what bulk emergency supplies that I had on hand. Fortunately, I already knew that when grain and beans are combined it makes a complete protein, making the best use what little meat I had on hand. Believe me my 3 German Shepherds range between 80 and 120 lbs each and can put away a lot of chow. I need it to meet their needs for nutrition, calories and taste. They have consistently done very well on this and it is now my fall back to recipe for homemade dog food...and it can all be cooked in one pot (one VERY LARGE, 12 quart stock pot). :-)

3 lbs ground beef (or ground turkey, chicken or pork)
2 lbs brown rice or 2 lbs barley
2 lbs dried pinto beans (or any type of dried bean, other than soy)

2 lbs frozen peas and carrots (you can substitute broccoli, green beans, or sweet potatoes, etc. but not corn)
2 cups chicken broth (or 1 pkg. chicken, beef or pork gravy mix combined with 2 c. water)
6 eggs
4 apples, diced

Steps:

  • Place ground beef into a large 12 quart stockpot and brown beef, breaking it up as it cooks.
  • Pour dried beans into the stockpot, right over the brown ground beef. Fill pot to within 4 inches from the top of the pot. Turn up heat and bring the water to a boil. Boil the beef/bean mixture for two minutes and then turn off the heat, stir, cover and let the beans sit for 1 hour to soften slightly.
  • Return the beans to a boil and boil gently for 1/2 of an hour until the beans are cook through and soft enough to eat.
  • Add the broth and rice to the bean mixture, stir, cover and let simmer for another 1/2 of an hour or until rice is done.
  • Turn off the heat and add the 2 lbs of frozen vegetables and the canola oil, stirring thoroughly mix the ingredients.
  • Break the eggs into the stockpot and stir them down into the rice and beans. The heat will cook the eggs and stirring them will break the eggs into threads throughout the mixture.
  • Add diced apples and stir to distribute through the mixture.
  • Let the mixture cool down (stirring occasionally to aid in cooling) and then pack into containers refrigerate (or if freezing, only fill 2/3 full to allow for expansion).
  • *I like to sprinkle brewers yeast over the top of each serving and I also push a fish oil capsule down into each bowl full. I generally add 1 t. brewers yeast per 20 lbs of my dogs weight. They are both very good supplements for the dogs and they usually love the taste of both!

6 ounces bacon, roughly chopped
1 yellow onion, chopped
1 jalapeno pepper, seeded and chopped
2 cups chicken stock
1 (15 ounce) can pinto beans, rinsed and drained
1 (14.5 ounce) can diced tomatoes
1 cup water
1 green onion, chopped
2 tablespoons chopped fresh cilantro, or more to taste
½ teaspoon salt
½ teaspoon garlic powder
¼ teaspoon ground dried chipotle pepper

Steps:

  • Place bacon in a 2-quart pot. Cook over medium-high heat, turning occasionally, until evenly browned, 5 to 7 minutes. Remove some bacon grease, as needed, to keep from boiling the bacon. Drain bacon slices on paper towels.
  • Add onion to the pot; saute in the remaining bacon grease until translucent, about 5 minutes. Add chopped jalapeno; saute until starting to soften, about 2 minutes.
  • Add the bacon, pinto beans, tomatoes, water, green onion, cilantro, salt, garlic powder, and chipotle to the onion mixture. Bring to a slow boil; reduce heat to medium. Cook, stirring occasionally, until mixture is hot and flavors meld, about 15 minutes.
