This is a yummy recipe for a light wheat roll that I keep in my special book of most liked recipes. They are not complicated at all to make, just a lot of rising time.

2 (.25 ounce) packages active dry yeast
1 ¾ cups warm water (110 degrees F/45 degrees C)
½ cup white sugar
1 teaspoon salt
¼ cup butter, melted and cooled
1 egg, beaten
2 ¼ cups whole wheat flour
2 ½ cups all-purpose flour
¼ cup butter, melted

Steps:

  • In a large bowl, dissolve yeast in warm water. Let stand until creamy, about 10 minutes.
  • Mix sugar, salt, 1/4 cup melted butter, egg, and whole wheat flour into yeast mixture. Stir in all-purpose flour, 1/2 cup at a time, until dough pulls away from the sides of the bowl. Turn dough out onto a well floured surface, and knead until smooth and elastic, about 8 minutes. Lightly oil a large bowl, place dough in bowl, and turn to coat. Cover with a damp cloth, and let rise in a warm place until doubled in volume, about 1 hour.
  • Punch down dough, cover, and let rise in warm place until doubled again, about 30 minutes.
  • Grease 2 dozen muffin cups. Punch down dough, and divide into two equal portions. Roll each into a 6x14 inch rectangle, and cut rectangle into twelve 7x1 inch strips. Roll strips up into spirals, and place into muffin cups. Brush tops with melted butter. Let rise uncovered in a warm place 40 minutes, or until doubled in bulk.
  • Preheat oven to 400 degrees F (200 degrees C). Bake for 12 to 15 minutes, or until golden brown. Remove from oven, and brush again with melted butter.

2 packages (1/4 ounce each) active dry yeast
1/2 cup warm water (110° to 115°)
2 cups 4% cottage cheese
2 large eggs, room temperature
1/4 cup sugar
2 teaspoons salt
1/2 teaspoon baking soda
4-1/2 cups all-purpose flour

Steps:

  • In a large bowl, dissolve yeast in warm water. In a small saucepan, heat cottage cheese to 110°-115°. Add the cottage cheese, eggs, sugar, salt, baking soda and 2 cups flour to yeast mixture. Beat until smooth. Stir in enough remaining flour to form a firm dough (dough will be sticky). , Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. , Punch dough down. Turn onto a lightly floured surface; divide into 30 pieces. Shape each piece into a roll. Place 2 in. apart on greased baking sheets. Cover and let rise until doubled, about 30 minutes. , Bake at 350° for 10-12 minutes or until golden brown. The softest 100% whole wheat dinner rolls you've ever had! Plus, easy to make and to make-ahead. These are so good - with or without butter!

2 tablespoons active dry yeast* (instant works, too)
1/2 cup warm water
1/2 cup butter (softened)
1/4 cup honey
3 eggs
1 cup lukewarm buttermilk or milk
4½ to 5 cups whole wheat flour
1 ½ teaspoons salt

Steps:

  • Dissolve the yeast in the 1/2 cup warm water in a glass measure. Set aside.
  • Cream the butter and honey in the bowl of a stand mixer with the paddle attachment. Add the eggs and mix, scraping the sides. Add the warmed milk along with the yeast mixture.
  • Add 4½ cups of flour and the salt, mixing until combined. Change to dough hook and knead for 2-3 minutes only, just until no longer tacky, adding a tablespoon or two of flour at a time, if needed. (Do not add too much.)
  • Let sit in bowl, covered, to rise for one hour. Turn out onto a floured surface and knead a couple of times, then let rest 3 minutes.
  • Divide into 24 equal pieces, shaping each into a ball and placing in a buttered 13x9-inch baking dish with the pieces touching.
  • Let rise, covered for 1 hour.
  • Preheat oven to 350 degrees.
  • Bake for 20-25 minutes until golden brown.

1/4 cup warm water (100-110 degrees)
1 tbsp active dry yeast
2 tbsp honey
1/4 cup unsalted butter (room temperature)
2 eggs (room temperature)
1/2 cup buttermilk (room temperature)
1 tbsp orange juice
3/4 tsp salt
2 tbsp vital wheat gluten*
2 1/4-2 1/2 cup whole wheat flour (white or regular)
2 tbsp butter (melted (divided for brushing))

Steps:

  • In a small bowl combine the warm water and the yeast. Allow to proof for 5 minutes or until it becomes bubbly and the yeast is dissolved.
  • Meanwhile, a large bowl or the bowl of a stand mixer fitted with a paddle attachment, beat the honey and butter for 30 seconds on medium speed. Add the eggs, one at a time, beating after each addition. Gradually add the warm water/yeast mixture along with the buttermilk and orange juice.
  • With mixing speed on low, add the salt, vital wheat gluten and the flour (one cup at a time), mix until a soft and sticky dough forms.
  • If using a stand mixer, switch to the dough hook and set on the lowest mixing setting for 3 minutes or until the dough becomes elastic (you may need to add a bit of additional flour (part or all of the 1/4 c.) or knead by hand on a lightly floured surface for 3-4 minutes. The dough should be tacky, if you pinch it between your fingers it should stick, but if you roll it in a ball in your hands it shouldn't. Just remember this is a soft dough and you don't want to add too much flour to it.
  • Place the dough in a greased bowl, cover with plastic wrap and allow to rise until doubled in size (about 45 minutes).
  • Once the dough has doubled, punch it down, turn it onto a clean surface (you may need just a bit of flour to prevent it from sticking) and knead it for 2 minutes. Then let it rest for 5 minutes (I cover mine up again. Cut it into 12 equal pieces. Roll into circles and place into a well-buttered 9x13 pan or ¼ baking sheet (or one lined with parchment paper/a baking mat). Generously butter the tops and sides of each roll. Cover and allow to double (until the rolls touch sides), about 1 hour 15 minutes.
  • Place into an oven preheated to 350 degrees. Bake the rolls for 17-20 minutes or until tops are lightly golden brown in color. Just keep an eye on them, they may take a little less or a little more time. Remove from the oven and brush with the remaining butter. Serve immediately!

1/2 cup mashed potato flakes
1 package (1/4 ounce) active dry yeast
1/4 cup warm water (110° to 115°)

1 cup 4% cottage cheese
4 to 4-1/2 cups all-purpose flour
Sesame seeds, optional

Steps:

  • In a bowl, combine the boiling water and potato flakes; mix well. Cool for 10 minutes. Meanwhile, in a bowl, dissolve yeast in warm water. Beat in the sugar, salt, 1 egg and oil until blended. Stir cottage cheese into the potatoes; add to yeast mixture and mix well. Beat in 3 cups flour until smooth. 3 1/2 c whole wheat flour, divided
1 pkg red star platinum yeast
1/2 c luke warm water
1 c cottage cheese
6 Tbsp melted butter, divided
1 1/2 tsp salt
2-3 Tbsp water (if needed)

Steps:

  • 1. In a mixing bowl add 1/2 cup flour, yeast and 1/2 cup lukewarm water. Stir and let few minutes until the mixtures gets a spongy consistency and bubbles appear at the surface.
  • 2. Add the cottage cheese, 4 tbsp melted butter and salt.
  • 3. Slowly add the remaining 3 cups of flour.
  • 4. Depending on how wet/dry is your cottage cheese you may have to add some more water until the dough comes clean from the sides of the bowl and is elastic.
  • 5. Take the dough out of the mixing bowl and place it in a greased bowl. Leave to rest until double in volume.
  • 6. When the dough is risen, divide it into 16 small balls.
  • 7. Arrange them in a baking dish. (I like to use a cast iron pan when baking mine)
  • 8. Leave to rise again for about 20 minutes.
  • 9. Meanwhile heat the oven to 400 F.
  • 10. Bake the dinner rolls for 20-25 minutes (if using a cast iron bake for 20 minutes) or until light brown and the smell of fresh baked bread takes over your kitchen.
  • 11. As soon as you take them out of the oven, brush the dinner rolls with melted butter and enjoy!

  • Q. My Bread buns were not soft even after my dough raised perfectly, what do i do? Make sure you apply melted butter immediately after the buns come out of the oven. Also make sure you knead the dough well. Incomplete kneading can also make the buns hard. Q. My yeast did not froth. What do i do? Yeast needs warmth and food to activate. Make sure you use lukewarm water and sugar to activate it. Hot water will kill the yeast.
