1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon apple pie spice
2 cups firmly packed brown sugar
1 cup Land O Lakes® Butter softened
1/4 cup unsweetened applesauce
1 large Land O Lakes® Egg
2 teaspoons vanilla extract
2 1/2 cups uncooked old-fashioned oats
1/2 cup caramel bits *
1/2 cup finely chopped dried apple rings

Steps:

  • Heat oven to 375°F. Line cookie sheet with parchment paper; set aside.
  • Combine flour, baking soda, salt and apple pie spice in bowl; set aside.
  • Combine brown sugar and butter in another bowl; beat until well mixed. Add applesauce, egg and vanilla; beat, scraping sides of bowl occasionally, until well mixed. Add flour mixture; beat at low speed until just combined. Stir in oats, caramel bits and dried apples.
  • Drop dough by rounded tablespoonfuls, 2 inches apart, onto prepared cookie sheet. Bake 8-10 minutes or until edges are lightly browned. Let stand 3 minutes on cookie sheet; remove to cooling rack.

1 c butter, softened
1 c sugar
1 c brown sugar, firmly packed
1 tsp salt
1/2 tsp baking soda
1 tsp baking powder
1 tsp cinnamon
2 egg
2 tsp vanilla extract
1 1/2 c all purpose flour
3 c oats, uncooked
11 oz kraft caramel bits
1 c pecans, in pieces (toasted)
1/3 c coconut, flaked

Steps:

  • 1. Preheat oven to 350 Line baking sheet with parchment paper
  • 2. Combine butter, sugars, salt, soda, powder and cinnamon. Beat until well blended. Add eggs, vanilla-beat until blended. Add flour to creamed mixture and beat until blended. Stir in oats, caramel baking bits, pecans and coconut.
  • 3. Drop by rounded teaspoon on to parchment lined baking sheet. Bake at 350 for 11-12 min. Allow to cool slightly before removing to cooling rack.

  • Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper.
  • Spread coconut over prepared baking sheet. Bake in preheated oven until it just starts to brown, about 10 minutes.
  • Combine caramel and milk in a microwaveable bowl. Microwave the mixture at 50% power for 1 minute and then stir. Repeat until both ingredients are completely incorporated.
  • Spread a dollop of the caramel onto each Pretzel Crisps®. Pour the rest of the caramel into the toasted coconut and stir until well combined. Now dollop this new coconut mixture onto the Pretzel Crisps®.

Number Of Ingredients 10

250ml almond milk
½ tsp ground cloves
1 tsp ground nutmeg
4 tsp ground cinnamon
100g rolled oats
3 large eggs
2 tbsp golden caster sugar
75g coconut butter
2 firm Williams pears , peeled, cored and thinly sliced
200g coconut yogurt , to serve

Steps:

  • In a large saucepan, combine the almond milk, cloves, nutmeg and 3 tsp of the cinnamon. Bring to a simmer. Tip in the oats and cook for 6 mins over a low heat, stirring constantly, until thick and creamy, like porridge. Scrape into a mixing bowl, cover, and cool for 20 mins.
  • While you wait, make the caramel pears. Sprinkle the sugar evenly over a frying pan set on a low heat. Don't stir it, but wait until it starts to melt, turning dark golden here and there. When most of the sugar is melted, gently swirl to incorporate any dry patches. Stir in 25g of the coconut butter. Toss the pear slices in the remaining cinnamon, then add to the caramel and cook for 5 mins until softened. Set aside.
  • Return to the oats now, beating in the eggs and ½ tsp salt to make a loose pancake-like batter. Heat oven to 140C/120C fan/gas 1 and put plates in to warm.
  • Melt a little of the remaining coconut butter in a frying pan. When hot, add half-ladlefuls of the batter spaced apart and cook for 4 mins each side, or until golden brown. Remove to a plate and keep warm in the oven. Continue frying the fritters, adding more coconut butter as needed. Serve the fritters topped with a spoonful of coconut yogurt followed by the warm pears.

½ teaspoon kosher salt
8 tablespoons unsalted butter, room temperature
½ cup sugar
½ teaspoon vanilla extract
1 large egg
4 oz caramel candy
3 tablespoons heavy cream
flaky sea salt, for sprinkling
½ cup chocolate ganache, for drizzling

Steps:

  • Preheat the oven to 300˚F (150˚C). Line a baking sheet with parchment paper.
  • Add the sliced almonds and 3 ounces of the coconut flakes to the prepared baking sheet and toast for 15 minutes, or until golden and fragrant.
  • Increase the oven temperature to 350˚F (180˚C). Line 2 baking sheets with parchment paper.
  • Add the toasted coconut and half of the toasted almonds to a food processor and process until broken down into fine crumbs.
  • Add the flour and salt, and process until combined.
  • In a medium bowl, combine the butter, sugar, and vanilla, and beat with an electric hand mixer until fully combined and the sugar is dissolved.
  • Add the egg and beat to incorporate.
  • Fold in the flour mixture with a rubber spatula until no dry spots remain.

  • Using the bottom of a wooden spoon, poke a hole in the center of each dough ball.
  • Chill the dough balls for 30 minutes.
  • In a small bowl, combine the reserved toasted almonds with the remaining 3 ounces of coconut flakes. Mix with a fork to combine.
  • Roll the chilled dough balls in the almond coconut mixture to coat the outside.
  • Bake the cookies for 12 minutes, or until set. Let cool completely.
  • In a small pot over low heat, combine the caramel candies and heavy cream. Cook, stirring frequently, until melted. Remove from the heat.
  • Fill the centers of each cookie with the caramel mixture.
  • Drizzle melted chocolate over the cookies, then sprinkle with flaky sea salt.
