CHOP SUEY
This recipe is a great use for leftover rotisserie chicken.

Steps:
- Preheat the oven to 375 degrees F.
- Brush a baking sheet and the wonton skins lightly on both sides with 2 teaspoons of oil. Season with salt and bake for 10 to 12 minutes, or until browned and crisp. Transfer to a cooling rack and reserve.
- In a large heavy skillet or wok, heat the remaining 1 tablespoon of canola oil over medium-high heat. Add the scallion, garlic, cabbage, celery, bamboo shoots, and mushrooms and stir-fry until cabbage is soft and wilted, about 3 to 4 minutes. Add the sugar, 3/4 cup of the chicken broth, soy sauce, and sesame oil and cook for 3 minutes. Add the sherry-cornstarch mixture and, if the mixture is a little dry, the additional 1/4 cup chicken stock. Add the turkey or chicken and heat through. Serve the chop suey over the cooked brown rice and top with sesame seeds and reserved crushed wonton skins.

- In a small bowl, combine the cornstarch, ginger and bouillon; stir in water and soy sauce until blended. Set aside., In a large nonstick skillet or wok, stir-fry the beef, celery, mushrooms, peppers and onion until meat is no longer pink and vegetables are tender. Drain. Stir in the bean sprouts, water chestnuts and spinach., Stir reserved sauce mixture; add to the pan. Bring to a boil; cook and stir for 1-2 minutes or until thickened. Serve with rice.

Steps:
- Marinate beef cubes with lemon juice, pepper powder and salt for 30 minutes.
- Pressure cook the beef till it is tender.
- Soak the red chillies in 1/3 cup hot water and vinegar.
- Grind to a paste.
- Boil carots and beans till they are crunchy.
- Do not discard the stock.
- Heat oil in a wok.
- Stir in ginger and garlic pastes.
- Saute till the raw smell leaves the wok.
- Add the chopped green chillies, dried red chilli paste, chopped garlic and diced onion to the wok.
- Saute continuously for 5-7 minutes.
- Add a little stock so as to not let the mixture stick to the bottom of the wok.
- Saute till the onion is crunchy.
- Add soya sauce and chilli sauce, tomato sauce, boiled carrots and beans, salt and the cooked beef.
- Cook on medium heat for 10 minutes.
- Add 1/2 cup stock, cornflour-water mixture, pepper powder and ajinomoto.
- Stir till the dish has medium gravy consistency.
- Serve with fried rice or noodles.
- Enjoy!

This is my mom's chop suey recipe and is one of my favorite meals. Great for a Sunday family dinner.

- Heat oil in large pot over high heat.
- Brown beef stew meat mixing in cut up onions and celery.
- Add water, soy sauce and beaded molasses.
- Simmer for 3 hours.
- Add bean sprouts and water chestnuts.
- Mix cornstarch and water and add to chop suey, heat until thickens.
- Serve over rice.
EASY BEEF CHOP SUEY
This is pretty easy and uses just one skillet. Cut beef into smaller pieces if you like. I eat mine with white rice AND chow mein noodles (I'm a carb freak).

- Heat oil in large nonstick skillet over medium-high heat.
- Add beef; cook until browned.
- Add beef broth, soy sauce, ginger and mustard; mix well.
- Lower heat.
- Add fresh vegetables; cover. Simmer for 1 hour (more or less, depending on the quality of the beef).
- Add canned vegetables; recover. Simmer for a half hour.
- If necessary, use cornstarch to thicken (mix with water in a separate bowl and add to chop suey a little at a time).
- Serve with white rice or chow mein noodles.

- Heat shortening in a large, deep skillet. Sear pork until it turns white, then add onion and saute for 5 minutes. Add celery, hot water, salt and pepper. Cover skillet and simmer for 5 minutes. Add sprouts and heat to boiling.

- In pressure cooker, saute beef, pork, onions and celery in butter, salt, pepper and garlic powder til meat is lightly browned on all sides.
- Add 1 can beef broth, A-1, fresh mushrooms and 3 Tbl. soy sauce.
- Cover and pressure cook 8 minutes.
- Cool cooker at once.
- Remove lid and add second can beef broth, dark brown sugar and rest of soy sauce.
- Heat to boiling, stir in cornstarch mixed with the third can of beef broth.
- Stir and boil til thickened.
- Add rest of vegetables and heat through. Serve over rice.
- Top with chow mein noodles.

This was my mother's (Clara) recipe. I have no idea where she got it but this was a staple at our house for years. All of us children (5) have tried to make this recipe taste like hers. We can come close but it never tastes as good as when she made it. Maybe it was the love. She died at the age of 86 and I'm posting this recipe in her memory.
