BABY BACK RIBS WITH TROPICAL BBQ SAUCE

- For the Tropical Rub:
- Whisk all ingredients together.
- For the ribs:
- Rinse and dry ribs. Place on a clean cutting board and pull off the membrane, the thin fatty skin that lines the underside of the ribs. Trim the ribs of excess fat and meat. Liberally season both sides of the ribs with 1/4 cup of the tropical dry rub. Wrap ribs in plastic wrap and refrigerate for at least 8 hours so flavors can permeate.
- Preheat grill to 200 to 225 degrees F using charcoal and indirect heat.
- Place ribs meatier side down on the grill away from the flame. Cook the ribs 2 to 2 1/2 hours total, turning the ribs halfway through, until ribs bend.
- In a food processor, add the ginger, jalapeno and green onion. Pulse until they are finely chopped. In a medium saucepan, add the vegetable oil over medium heat. Add the ginger mixture and saute until tender. Combine the ketchup, mango juice, passion fruit juice, cider vinegar, molasses and dry mustard in a bowl and add to the saucepan. Season with salt and pepper. Let simmer for 10 minutes for the flavors to blend.
COCOA RUBBED RIBS WITH PASSION FRUIT BBQ SAUCE

- Pre-heat the oven to 150°C, 300°F, Gas Mark 2
- Mix brown sugar, cocoa powder, Chilli Powder, Basil, Garlic Powder, Onion Salt and Chillies in a small bowl. Rub spice rub evenly on ribs, then wrap each rack tightly in foil. Place on roasting pan.
- Bake in a pre-heated oven for 2½ to 3 hours or until ribs are very tender
- Meanwhile, bring passion fruit juice and barbecue sauce to simmer in small saucepan on medium heat. Simmer for 30 minutes or until sauce is reduced by half.
- Pre-heat the grill to medium. Remove foil from ribs and place ribs under the grill. Grill for 5 minutes per side or until ribs are evenly browned, brushing occasionally with barbecue sauce.

- Tip the ribs into a big bowl (not a metal one) and throw in the spring onions, chilli and garlic. Now spoon all the remaining ingredients over the ribs and sprinkle with salt and pepper. Get your hands in the bowl and turn the ribs over and over again until they're coated in the sauce. (You can keep the ribs uncooked - tightly covered - in the fridge for up to 3 days. You can also freeze them for several months.)
- Cook the ribs over a moderate barbecue for 20-30 minutes depending on their size, turning them over frequently and brushing with sauce each time. The turning and brushing is important, so that all four sides of each rib get encrusted with the sauce, which builds up like a lacquer. If you have any leftover sauce at the end, heat it up in a pan and pour it over the ribs just before serving.

CHILI-RUBBED BABY BACK RIBS WITH ESPRESSO BARBECUE SAUCE
I got this recipe from Bon Appetit some years ago. It does make up alot of sauce....but any leftovers can be used for another use. As for the taste, well they makes for succulent, fall off the bone ribs.

- Preheat oven to 400°F Whisk chili powder, paprika, cumin, salt, and pepper in small bowl to blend. Rub spice mixture all over ribs. Place ribs in heavy large roasting pan.
- Boil beer in medium saucepan until reduced to 1 cup, about 5 minutes. Pour beer around ribs. Cover pan tightly with foil. Bake ribs until fork-tender, about 1 hour 30 minutes.
- Combine barbecue sauce, 1/2 cup water, brown sugar, and espresso powder in heavy medium saucepan. Simmer until flavors blend and sauce thickens slightly, stirring occasionally, about 10 minutes. (Ribs and barbecue sauce can be prepared 1 day ahead. Cool slightly, then cover separately and refrigerate.).
- Prepare barbecue (medium heat). Brush ribs with some barbecue sauce. Grill ribs just until heated through, about 3 minutes per side. Transfer ribs to platter. Bring remaining sauce to simmer. Brush ribs with more barbecue sauce. Serve ribs, passing remaining barbecue sauce separately.
