COCOA APPLESAUCE-RAISIN MUFFINS
These muffins are a real treat served warm from the oven, slathered with cinnamon butter...delicious!

Steps:
- Set oven to 400 degrees.
- Grease the bottoms, or line 2-1/2-inch muffin cups with paper liners.
- In a large bowl, stir together, the flours, brown sugar, baking cocoa, baking powder, baking soda, salt, cinnamon and nutmeg.
- In a small bowl, stir together, melted butter, applesauce, half and half cream or milk (if using), and the egg until well blended.
- Add to dry ingredients; stir with a wooden spoon JUST until dry ingredients are moistened.
- Stir in raisins.
- Fill muffin cups about 3/4 full with the batter.
- Bake for 20-22 minutes, or until the muffins test done.
- Remove from pans to wire racks.
- Cool slightly.
- Serve muffins warm with cinnamon butter.
- To make cinnamon butter: In a small mixing bowl, beat butter, powdered sugar and cinnamon until well blended.

- Preheat oven to 400 degrees F (200 degrees C). Grease 12 muffin cups or line with paper muffin liners.
- Combine flour, sugar, 3/4 cup chocolate chips, cocoa powder, and baking soda in a large bowl. Whisk egg, yogurt, milk, vanilla, and vegetable oil in another bowl until smooth; pour into chocolate mixture and stir until batter is just blended. Fill prepared muffin cups 3/4 full and sprinkle with remaining 1/4 cup chocolate chips.
- Bake in preheated oven until a toothpick inserted into the center comes out clean, about 20 minutes. Cool in the pans for 10 minutes before removing to cool completely on a wire rack.

- Preheat oven to 400°F.
- Grease bottom only of muffin cups (the 2 1/2 inch diameter size will make 12 muffins).
- Prepare the crunchy topping by combining all of the topping ingredients until crumbly. Set aside.
- In a small bowl, comine the cocoa and oil, stirring until smooth.
- Add the applesauce and egg, blending well.
- Combine the flour, sugar, baking soda, salt and cinnamon together.
- Stir in the applesauce mixture and nuts, just until dry ingredients are moistened.
- Fill the muffin cups about 2/3 full and sprinkle a heaping teaspoonful of topping on each muffin.
- Bake 25-30 minutes.

- Heat oven to 160C/fan 140C/gas 3. Brush 6 holes of a muffin tin with a drop of oil. Sieve the cocoa into a large bowl, then add the rest of the dry ingredients. Stir to combine, then make a well in the centre.
- Beat the milk, egg and oil together in a jug, pour into the well, then stir quickly to make a batter. Spoon into the muffin tin, then bake for 15 mins or until risen and firm to the touch. Heat the custard in the microwave according to instructions, or in a pan, then tip in the chopped chocolate and stir until smooth. Turn the puddings into bowls and pour the custard over.

- Preheat the oven to 375°F. Butter muffin pans. Mix the flour, baking powder, salt, and sugar in a large bowl.
