Fun new twist on Banana Cream Pie that's made of a crust with Cocoa Puffs® cereal instead of graham crackers.

2 1/2 cups Cocoa Puffs™ cereal
1/3 cup butter, melted
1 package (4-serving size) banana cream instant pudding and pie filling mix
1 1/4 cups milk
1/2 cup Cool Whip frozen whipped topping, thawed
2 medium bananas, sliced (1 cup)
Additional Cool Whip frozen whipped topping, thawed
Additional sliced banana
Additional Cocoa Puffs™ cereal, crushed

Steps:

  • Heat oven to 350°F.
  • In food processor or blender, place the 2 1/2 cups cereal. Cover; process until cereal is finely crushed. With processor running, pour melted butter into bowl through feed tube; process until just combined. Lightly press crumb mixture in bottom and up side of ungreased 9-inch glass pie plate. Bake 8 minutes; cool completely on cooling rack, about 20 minutes.
  • Meanwhile, in medium bowl, beat dry pudding mix and milk with whisk 2 minutes. Fold in whipped topping.
  • Arrange banana slices evenly in bottom of crust; top with pudding mixture. Cover; refrigerate at least 4 hours. Serve with toppings. Cover and refrigerate any remaining pie.

1/2 cup frozen whipped topping, thawed
1 cup bananas, sliced
OPTIONAL TOPPING:
Whipped cream
Banana slices
Cocoa Puffs® cereal, crushed

Steps:

  • Heat oven to 350°F. In food processor or blender, place the 2 1/2 cups cereal. Cover; process until cereal is finely crushed. whipped cream
4 (4 in) diameter, (1 cup) volume (graham cracker or shortbread) mini pie crusts
3/4 cup cocoa powder
1/2 teaspoon vanilla
1/2 cup sugar
1 (15 oz) container ricotta cheese
1 (8 oz) package cream cheese
2 to 3 bananas
crush dried banana chips
shaved (optional for garnish) white chocolate

Steps:

  • In a mixer combine bananas, cream cheese, ricotta, sugar and vanilla and mix well. Slowly beat in cocoa powder to avoid dry pockets. Pour into shells and refrigerate for at least 2 hours. Top with whipped cream and banana chips. Optional: top with shaved white chocolate.
  • Serving tip: Instead of mini crusts you can serve in a martini or other cocktail glass.

PUFF PASTRY BANANA PIE WITH CHOCOLATE RUM SAUCE



Puff Pastry Banana Pie with Chocolate Rum Sauce image

2 tablespoons (1/4 stick) unsalted butter
1/3 cup sugar
3 tablespoons dark rum
1 tablespoon water
1/4 teaspoon (generous) ground cinnamon
1 3/4 pounds ripe small bananas (about 5), peeled, left whole
6 ounces bittersweet (not unsweetened) or semisweet chocolate, chopped
1/4 cup whipping cream
2 tablespoons light corn syrup
1 17 1/4-ounce package frozen puff pastry (2 sheets), thawed
1 egg, beaten to blend (glaze)

Steps:

  • Melt butter in heavy large skillet over medium heat. Add sugar, 1 tablespoon rum, water and cinnamon and stir until syrupy. Add bananas and cook 2 minutes, turning occasionally and basting with syrup. Using slotted spoon, transfer bananas to plate. Boil syrup until reduced to 2 tablespoons, about 2 minutes. Pour syrup over bananas; let cool.
  • Combine chocolate, cream and corn syrup in heavy small saucepan; stir over low heat until chocolate melts and mixture is smooth. Remove from heat. Transfer 2 tablespoons chocolate mixture to small bowl (Mixture will be thick). Add 2 tablespoons rum to mixture in saucepan; stir sauce to blend.
  • Position rack in center of oven; preheat to 400°F. Place 1 pastry sheet on floured work surface. Set 9-inch-diameter tart pan upside down on pastry. Using knife, cut pastry into 9-inch-diameter scalloped round. Repeat with remaining pastry sheet. Place 1 pastry round on ungreased heavy large baking sheet; arrange 3 whole bananas on pastry, forming circle and leaving 1/2-inch pastry border. Fill in center with remaining bananas, cutting to fit. Pour any syrup from bananas and reserved 2 tablespoons chocolate mixture over bananas. Brush pastry edges with beaten egg. Top with second pastry round. Press edges to seal. Brush top with egg. Using small sharp knife, cut 8 vents in top of pastry to allow steam to escape. Freeze 10 minutes.
  • Bake until pastry is golden and puffed, about 30 minutes. Run long knife under pastry to loosen. Cool on baking sheet on rack until just lukewarm, about 1 1/2 hours. (Can be made 6 hours ahead. Let stand at room temperature.) Rewarm sauce over low heat. Serve pie with sauce.

1 cup water
1/2 cup butter
1/4 teaspoon salt
1 cup all-purpose flour
3 tablespoons baking cocoa
4 eggs
2 packages (8 ounces each) cream cheese, softened
1 cup sugar
2 cups heavy whipping cream, whipped
3 cups coarsely chopped fresh strawberries

Steps:

  • In a heavy saucepan over medium heat, bring water, butter and salt to a boil. Add the flour and cocoa all at once; stir until a smooth ball forms. Remove from the heat; let stand for 5 minutes. Add the eggs, one at a time, beating well after each addition. Beat until smooth and shiny., Drop by heaping tablespoonfuls 3 in. apart onto greased baking sheets. Bake at 400° for 30-35 minutes or until set and browned. Remove to wire racks. Immediately split puffs open; remove and discard soft dough from inside. Cool puffs completely., In a small bowl, beat the cream cheese and sugar until fluffy. Fold in whipped cream and strawberries. Fill bottom halves of puffs; replace tops. Serve immediately.

Bring to a boil over medium heat, whisking constantly and scraping the sides and bottom of the pot, until thickened. Strain the pastry cream, if needed. Transfer to a bowl and cover with plastic wrap directly on the surface of the cream. Refrigerate for 3 hours or until completely chilled.
  • Meanwhile, with the rack in the middle position, preheat the oven to 375°F (190°C). Line a baking sheet with a silicone mat or parchment paper.
  • In a bowl, whisk the cream, sugar and vanilla with an electric mixer until firm peaks form. Transfer to a pastry bag fitted with a large star tip.
  • Cut off the top of each cream puff and fill with the pastry cream (see note). Garnish with banana slices and a few dollops of whipped cream. Close the cream puffs with their tops. Drizzle with the caramel.
