Satisfy your chocolate cravings with Alton Brown's Cocoa Brownies recipe from Good Eats on Food Network. For a well-balanced brownie, don't forget the salt.

Provided by Alton Brown

Categories     dessert

Time 1h15m

Yield 16 brownies

Number Of Ingredients 10

Soft butter, for greasing the pan
Flour, for dusting the buttered pan
4 large eggs
1 cup sugar, sifted
1 cup brown sugar, sifted
8 ounces melted butter
1 1/4 cups cocoa, sifted
2 teaspoons vanilla extract
1/2 cup flour, sifted
1/2 teaspoon kosher salt

Steps:

  • Preheat the oven to 300 degrees F. Butter and flour an 8-inch square pan.
  • In a mixer fitted with a whisk attachment, beat the eggs at medium speed until fluffy and light yellow. Add both sugars. Add remaining ingredients, and mix to combine.
  • Pour the batter into a greased and floured 8-inch square pan and bake for 45 minutes. Check for doneness with the tried-and-true toothpick method: a toothpick inserted into the center of the pan should come out clean. When it's done, remove to a rack to cool. Resist the temptation to cut into it until it's mostly cool.

PEPPERMINT HOT COCOA BROWNIES

Peppermint Hot Cocoa Brownies image

Provided by Food Network Kitchen

Categories     dessert

Time 2h

Yield 24 brownies

Number Of Ingredients 22

Cooking spray
1 1/2 cups all-purpose flour
1/2 cup unsweetened cocoa powder
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
2 sticks unsalted butter, cut into pieces
6 ounces milk chocolate, chopped
1 cup granulated sugar
1 cup packed light brown sugar
4 large eggs, at room temperature
2 teaspoons pure vanilla extract
1/2 cup whole milk
2 1/4-ounce packages unflavored gelatin powder
1/8 teaspoon salt
1/2 cup water
1 cup granulated sugar
1/2 cup light corn syrup
1 teaspoon pure vanilla extract
3/4 teaspoon pure peppermint extract
Cooking spray
Crushed peppermint candies, for topping

Steps:

  • Make the brownies: Preheat the oven to 325˚. Line a 9-by-13-inch baking pan with foil, leaving a 2-inch overhang on all sides; coat with cooking spray. Whisk the flour, cocoa powder, baking powder, baking soda and salt in a medium bowl.
  • Melt the butter and milk chocolate in a pot over medium-low heat, stirring. Remove from the heat and whisk in both sugars. Whisk in the eggs, one at a time, then the vanilla and milk. Gently whisk in the flour mixture until just combined. Spread the batter in the prepared pan.
  • Bake until a toothpick inserted into the center comes out with just a few crumbs, about 45 minutes. Transfer to a rack and let cool completely in the pan. Lift out of the pan using the foil overhang.
  • Meanwhile, make the topping: Combine the gelatin, salt and 1/4 cup water in a stand mixer fitted with a whisk attachment. Let sit 2 minutes. Combine the granulated sugar, corn syrup and 1/4 cup water in a small saucepan. Bring to a boil over medium-high heat and cook, without stirring, until the sugar is dissolved, 1 minute. With the mixer on low speed, slowly pour in the sugar syrup. Gradually increase the speed to high; beat until thick and fluffy, 12 to 14 minutes. Beat in both extracts.
  • Coat a rubber spatula with cooking spray; spread the topping on the brownies. Sprinkle with peppermint candies and let set, about 2 hours. Cut into pieces using a knife coated with cooking spray.

MOM'S COCOA POWDER BROWNIES

Mom's Cocoa Powder Brownies image

Oooey, Gooey, Rich and Chewy. If you are a fan of cake-like brownies, these are NOT for you. This makes a small pan of brownies that are moist and dense and need no icing. They form a crust that cracks and is a wonderful contrast to the fudgy texture of the brownie. Like all other basic brownie recipes, these are a great base for adding in chunks of chocolate, nuts, or whatever. As an adult, I like them with a 1/2 tsp of espresso powder added. For the brownie purist, the nuts are strictly optional. When I'm having one of those "must have chocolate" days, these are the perfect fix. After 1 brownie, I'm cured.

  • Heat the oven to 300ºF. Coat an 8-inch square baking dish with non-stick spray and trim the width of a piece of parchment paper so that it fits just inside the baking dish with overhang on two sides. Place it inside the baking dish like a sling.
  • In a stand mixer fitted with the whisk attachment, beat the eggs at medium speed until fluffy and light yellow, 2 to 3 minutes.
  • In a small bowl, combine the granulated sugar, brown sugar, cocoa, flour, and salt. With the mixer on low speed, add this mixture to the beaten eggs. When the dry ingredients are fully incorporated, slowly add the melted butter and vanilla extract. Bring the mixture together on low speed.
  • Pour the batter into the prepared pan and bake for 45 to 50 minutes. Check for doneness with the tried-and-true toothpick method: A toothpick inserted into the center of the pan should come out clean. A probe thermometer inserted into the center should register 195ºF. Let the brownies cool in the pan for 3 minutes, then remove them from the pan using the parchment paper as a sling.
