Our Cuban Cobb Salad - loaded with all the flavors of a Cuban sandwich right down to the tangy mustard vinaigrette - is a lighter way to enjoy a classic favorite!

2 1/2 romaine hearts (cut into thin ribbons)
1/2 lb sweet ham (sliced thick then julienned/chopped)
1/2 lb cooked fresh ham (seasoned pork, sliced thick then julienned/chopped)
1/2 lb swiss cheese (sliced thick then julienned/chopped)
6 small dill pickles (sliced into rounds)
3 hard boiled eggs (cut in quarters lengthwise)
6 tablespoons light olive oil
4 tablespoons apple cider vinegar
2 teaspoons Worcestershire sauce
2 teaspoons fresh lemon juice
1 teaspoon Dijon mustard
1 teaspoon yellow mustard
Salt & pepper to taste

Steps:

  • First, measure olive oil, apple cider vinegar, Dijon & yellow mustard, lemon juice, Worcestershire sauce and salt/pepper in a mason jar and shake to combine.
  • Refrigerate vinaigrette until you are ready to serve the salad.
  • Fill a large shallow salad bowl with romaine lettuce.
  • Arrange sliced ham, sliced fresh ham (seasoned pork), sliced cheese, pickle rounds and quartered eggs in rows on top of the lettuce.
  • Just prior to serving, drizzle dressing over salad and toss to coat.

3 slices bacon
2 heads romaine lettuce, torn into bite-size pieces
2 Poached Chicken Breasts, diced
1 cup cherry tomatoes, cut into wedges
4 large hard-cooked eggs, chopped
3/4 cup crumbled blue cheese (3 ounces)
1 avocado, halved, pitted, peeled, and diced
Mustard Vinaigrette

Steps:

  • In a medium skillet, cook bacon over medium, turning occasionally, until crisp, 5 to 8 minutes. Transfer to a paper towel-lined plate, and drain. Break into bite-size pieces.
  • Place lettuce on a large platter; arrange bacon, chicken, tomatoes, eggs, cheese, and avocado on top. Serve salad with vinaigrette alongside.

1/2 cup Roquefort cheese, grated
1/3 cup red wine vinegar
1 tablespoon honey-Dijon mustard
2/3 cup extra-virgin olive oil
Salt and freshly ground black pepper
1/2 head romaine lettuce, chopped (about 3 to 4 cups)
1/2 head Boston lettuce, chopped (about 3 to 4 cups)
1 1/2 cups watercress, stems removed and chopped
3 boneless, skinless chicken breast halves, cooked and diced into 1/2-inch cubes
6 bacon slices, cooked and crumbled
2 avocados, halved, pitted, peeled and diced into 1/2-inch cubes
4 vine-ripened tomatoes, seeded and diced
3/4 cup Roquefort cheese, crumbled
1 hard-boiled large egg, forced through a sieve (grated)
1/4 cup finely chopped fresh chives

Steps:

  • To make the dressing:
  • Whisk together the grated cheese, vinegar, and mustard. In a slow steady stream, whisk in the olive oil until emulsified. Season the vinaigrette with salt, and pepper to taste.
  • To make the salad:
  • Rinse and dry all the salad greens, and toss them together in a large bowl. Arrange the chicken, bacon, avocado, tomato, and Roquefort in uniform rows on top the mixed greens. Garnish with the grated hard-boiled egg, and chives.
  • Just before serving, pour the dressing over the salad and toss.

The Brown Derby restaurant, which opened its doors in 1929, was as famous a part of Hollywood's golden age as Mann's Chinese Theater or Schwab's drugstore. It was a meeting place and hangout for such stars as Cecil B. DeMille, the Barrymores, and Rudolph Valentino, as well as many Hollywood hopefuls. According to legend, the Brown Derby made a lasting contribution to American cuisine when its manager, Bob Cobb, fixed a late-night meal from leftovers he found in the kitchen, including chicken, bacon, avocado, tomatoes, and hard-boiled eggs. He placed them on a bed of lettuce, drizzled them with dressing, and single-handedly invented the Cobb salad. Like the Caesar salad, the basic Cobb has inspired countless variations, including this delicious version.

1/4 teaspoon dry mustard powder
1 teaspoon Worcestershire sauce
1 medium garlic clove, finely chopped
2 tablespoons red-wine vinegar
1/3 cup extra-virgin olive oil
Coarse salt and freshly ground black pepper
1 small head romaine, (about 5 cups), washed, spun dry, and torn into bite-size pieces
1 medium bunch watercress, leaves and 1-inch stem, washed and spun dry
1 pound roasted turkey breast, sliced 1/4 inch thick
1/4 pound Maytag blue cheese, roughly crumbled
2 large hard-boiled eggs, thinly sliced
1 medium tomato, cut into 1/4-inch wedges
8 ounces cherry tomatoes, sliced
1 medium Hass avocado, peeled and cut into 1/4-inch wedges
1/2 teaspoon finely chopped tarragon
1/2 teaspoon finely chopped chervil
1 teaspoon finely chopped parsley

Steps:

  • In a large skillet, cook bacon over medium heat until crisp, about 15 minutes. With a slotted spoon, transfer to paper towels to drain.
  • In a small bowl, whisk together mustard, Worcestershire sauce, garlic, and vinegar. In a slow, steady stream, whisk in oil. Season to taste with salt and pepper. Set aside.
  • Arrange romaine and watercress on a large serving platter. Arrange turkey, blue cheese, eggs, tomatoes, avocado, and bacon in sections on top of the greens. Sprinkle with chopped herbs. Pour dressing over salad. Serve immediately.

1 lb boneless beef top sirloin steak, cut 1-inch thick
3 tablespoons salad oil
3 tablespoons white balsamic vinegar or 3 tablespoons white wine vinegar
2 teaspoons Dijon mustard
1 teaspoon dried oregano, crushed
6 cups boston lettuce, Bibb lettuce or 6 cups romaine lettuce, shredded
1 1/2 cups halved grape tomatoes or 1 1/2 cups chopped seeded tomatoes
1 medium avocado, pitted, peeled and cut into wedges
3/4 cup crumbled blue cheese
6 slices bacon, crisp-cooked, drained, and crumbled
3 hard-cooked eggs, sliced
1/3 cup white balsamaic vinegar or 1/3 cup white wine vinegar
1 teaspoon Dijon mustard
1 garlic clove, minced
1/2 teaspoon sugar
1/4 teaspoon salt
1/4 teaspoon fresh ground black pepper
1/3 cup olive oil

Steps:

  • For steak marinade: In a screw-top jar, combine oil, vinegar, mustard, and oregano. Cover and shake well. Place steak in a reseable plastic bag and pour marinade over steak slices. Seal bag; turn to coat steak slices; set in a shallow dish and marinate in the refrigerator for at least 6 hours or up to 24 hours, turning bag occasionally.
  • Preheat broiler. Drain steak slices, discarding marinade. Slash fat edges of steak at 1-inch intervals, being careful not to cut into the meat. Place steak on the rack of an unheated broiler pan. Broil 3 inches from heat for 15 to 17 minutes or until medium doneness (160 degree), turning once halfway through broiling. At this point season with salt and pepper, if desired. Cool slightly; cut into thin slices.
  • To serve: Arrange shredded lettuce in a chilled large bowl. Place steak slices, tomatoes, avocado, cheese, bacon, and eggs on top of the lettuce. Drizzle some of the Dijon Vinaigrette over salad.
  • To make Dijon Vinaigrette: In a small bowl, white balsamic vinegar or white wine vinegar; Dijon mustard; garlic, minced, sugar, salt and pepper. Add olive oil in a slow steady stream, whisking constantly.

1 romaine lettuce, heart torn into bite size pieces
3 cups packed Baby Spinach
4 slices bacon, chopped
1 tablespoon vegetable oil
6 chicken tenders (about 1/2 pound)
2 tablespoons red wine vinegar
1 1/2 tablespoons cider vinegar
1 teaspoon grainy mustard
2 hard-boiled eggs, halved
1 small tomatoes, cut into wedges
1/2 avocado
1/2 cup crumbled blue cheese (about 3 ounces)

Steps:

  • Toss together romaine and spinach in a large bowl.
  • Cook bacon, stirring occasionally, in a heavy medium skillet over medium heat until crisp. Transfer with a slotted spoon to paper towels to drain.
  • Discard all but 2 tablespoons bacon drippings and add oil to skillet. Pat chicken dry and season with 1/4 teaspoon each of salt and pepper. Increase heat to medium-high and cook chicken, turning over once, until golden brown and just cooked through, 5-6 minutes total. Transfer chicken to a plate.
  • Reduce heat to medium and add vinegars and mustard to skillet. Boil, scraping up brown bits, 30 seconds. Stir in any juices from the chicken.
  • Toss salad greens with bacon vinaigrette. Season with salt and pepper. Top salad with chicken, eggs, tomato, sliced avocado, blue cheese and bacon.
