50 - 60 wonton wrappers ((Note 1))
200 g / 7 oz lean pork mince ((ground pork))
200 g / 7 oz peeled prawns / shrimp (, roughly chopped)
1 tbsp ginger (, finely grated (1.5" / 3cm piece))
2 shallots / green onions (, finely chopped (5 tbsp))
1 tbsp light soy sauce ((Note 2))
2 tbsp Chinese cooking wine ((Shaoxing wine) (Note 3))
1/2 tsp salt
2 tbsp sesame oil, toasted ((Note 4))
3 cups / 750 ml chicken broth ((Note 5))
2 garlic cloves (, smashed (6))
⅓" / 1 cm piece of ginger (, sliced (optional, but highly recommended))
1½ tbsp light soy sauce ((Note 2))
2 tsp sugar ((any))
1½ tbsp chinese cooking wine ((Note 3))
¼ - ½ tsp sesame oil
Shallots / scallions (, finely chopped)
Bok choy (, quartered, or Chinese broccoli cut into 10cm /4" lengths (optional))
40 - 50 g / 1.5 - 1.75 oz dried egg noodles per person (, (optional) (8))

Steps:

  • Place Filling ingredients in a bowl. Use a potato masher to mash until fairly smooth - about 20 mashes. Don't turn the prawn into a complete paste, small chunks are good.
  • Use My Way (better Wonton Soup experience!) or the Asian Grocery Store Way (easier to pack for freezing).
  • Lay Wontons on work surface. Use 2 teaspoons to put the Filling on the wontons. Work in batches of 5 if starting out, up to 15 or 20 if confident. Brush 2 edges with water. Fold to seal, pressing out air. Brush water on one corner and bring corners together, pressing to seal.
  • Place wrapped wontons into a container with a lid as you work (so they don't dry out).
  • To cook: bring a large pot of water to boil. Place wontons in water and cook for 4 minutes or until they float. Remove with slotted spoon straight into serving bowls. Ladle over broth.
  • To freeze: Freeze uncooked in airtight containers. Cook from frozen for 6 to 8 minutes. IMPORTANT: Do not freeze if you made this with defrosted frozen prawns. (Note 11)
  • Place Broth ingredients in a saucepan over high heat. Add white ends of scallions/shallots if leftover from Wonton filling.
  • Place lid on, bring to simmer then reduce to medium high and simmer for 5 - 10 minutes to allow the flavours to infuse. Pick garlic and ginger out before using.
  • If using vegetables, blanch in the soup broth and place in serving bowl.
  • Prepare noodles according to packet directions (if using noodles). Place in serving bowl with cooked wontons and blanched vegetables.
  • Ladle over soup. Serve!

¼ small head cabbage, shredded
4 ounces lean pork tenderloin, cut into thin strips
½ teaspoon minced fresh ginger root
6 cups chicken broth
2 tablespoons soy sauce
8 fresh green onions, chopped
4 ounces dry Chinese egg noodles

Steps:

  • Using a large skillet or wok, heat oil over medium-high heat. Add cabbage and pork; stir-fry until pork is no longer pink inside, approximately 5 minutes. Stir in ginger.
  • Add chicken broth and soy sauce and bring to a boil. Reduce heat to low; simmer 10 minutes, stirring occasionally.
  • Stir in onions and add noodles. Cook until noodles are tender, 2 to 4 minutes more.

PORK SOUP DUMPLINGS

Xiao long bao, or soup dumplings, are Chinese steamed dumplings that have soup inside of them. They are like magic! I grew up eating these with my family at our favorite dim sum restaurant in Chicago's Chinatown and later learned how to make them by combining my family's go-to pot sticker recipe with the secret ingredient: soup gelatin, which melts down into soup once the dumplings are cooked.

3 cups all-purpose flour, plus more for dusting
1 1/2 teaspoons kosher salt
1/2 cup boiling water
1/2 cup cold water
1 3/4 cups chicken stock
1 tablespoon soy sauce
One 1/4-ounce envelope gelatin powder (about 1 tablespoon)
1 pound ground pork
1/2 teaspoon kosher salt
2 tablespoons soy sauce, plus more for serving
1 tablespoon finely grated fresh ginger
1 tablespoon sambal oelek, plus more for serving
1 tablespoon sesame oil
1 tablespoon rice vinegar, plus more for serving
4 scallions, finely chopped

Steps:

  • For the wrappers: Combine the flour and salt in a large bowl and create a well in the middle. Add the boiling water and mix it in with a spatula, then incorporate with your hands until you have a mealy, shaggy mixture. Mix in the cold water and bring everything together into a dough, then turn it out onto a work surface and knead, adding additional flour if it gets too sticky to work with, until you have a smooth and slightly sticky dough, 7 to 10 minutes. Cover with plastic wrap or a damp towel for 30 minutes while you make the filling.
  • For the soup: Heat the chicken stock, then add the soy sauce and gelatin powder. Whisk to combine. Pour into a shallow dish and chill until set, around 1 hour. Break up the gelatin by fluffing with a fork. Set aside.
  • For the filling: Put the pork in a large bowl and sprinkle on the salt, then add the soy sauce, ginger, sambal oelek, sesame oil, rice vinegar and scallions. Mix everything together with your hands (don't overmix), then set up your dumpling folding station.
  • Line a sheet pan with parchment paper and dust with flour. To assemble the dumplings, divide the dough into 32 balls and keep them covered when you're not working with them. Roll them out into 3 1/2- to 4-inch circles, flouring the surface as needed. Place 1/2 tablespoon pork filling in the center of each circle and 1/2 tablespoon soup gelatin on top of the filling. Fold up the edges of the dumpling and pinch everything in the center. Repeat with the remaining dumpling wrappers and filling and place on the lined sheet pan.
  • To steam the dumplings, line a bamboo steamer with cabbage leaves or parchment paper with a few holes cut out. Place the dumplings in the steamer, leaving a little bit of room between them, then set the steamer over a pot of boiling water. Steam in batches until cooked through, 8 to 10 minutes. Alternately, line a plate with cabbage leaves or parchment paper. Place in a pot of boiling water, making sure the water doesn't cover the plate (you will need about 1/2 to 3/4 cup). Cook 8 to 10 minutes.
  • Let cool slightly, then enjoy with a sauce of equal parts vinegar and soy sauce with sambal oelek to taste.

LONG RICE NOODLE SOUP PORK OR CHICKEN



Long Rice Noodle Soup Pork or Chicken image

My dad used to make a variation of this soup when I was a little girl. I think this was just one of his made up recipes as my dad never completely followed any recipe. It is a great main course soup and is quick, tasty, and easy to make. Pork can be substituted with chopped chicken. Hamburger is not recommended since it has little flavor. Also, try to get Asian dried shitake mushrooms, as the organic shitake mushrooms lack flavor.

1 (3 3/4 ounce) bag bean thread noodles
1 lb ground pork
2 minced fresh garlic cloves
1 teaspoon garlic salt
4 (14 1/2 ounce) cans chicken broth
1 (8 ounce) can sliced water chestnuts
1 (8 1/2 ounce) can sliced bamboo shoots
12 -15 dried shiitake mushrooms
2 -3 eggs
salt and pepper

Steps:

  • Before you start cooking, take the dried shitake mushrooms and long rice noodles and place both in a bowl of warm water. Let these soak for about 15-20 minutes until they are soft.
  • While these are soaking, brown ground pork, minced garlic, and garlic salt in a large pot on medium heat. Do not drain.
  • Once pork is cooked, add the cans of chicken broth to the pot. Start with four cans and if you prefer your soup thinner add a few more. Keep in mind that the long rice will soak up some of the soup. Bring this to a boil before adding other ingredients.
  • Take softened long rice noodles out of the warm water and add to the pork/chicken broth. Also take the softened shitake mushrooms and cut off the stems and slice into 1/4" strips and add to broth. Cover pot and cook on medium heat for another 30 minutes. Stir soup periodically during this time.
  • Now add the water chestnuts and bamboo shoots into broth and cook another 10 minutes uncovered.
  • Take the eggs and crack these directly into the broth and mix the broth quickly with a spoon. This will scramble the eggs into the soup.
  • This is now the time to taste your broth and add salt and pepper to taste. Just keep in mind that the flavors get more intense the next day.

1 pork tenderloin (3/4 pound), cut into thin strips

1 garlic clove, minced
1 carton (32 ounces) chicken broth
1 celery rib, thinly sliced
1 cup fresh snow peas, halved diagonally
1 cup coleslaw mix
2 green onions, sliced diagonally
Fresh cilantro leaves, optional

Steps:

  • Cook noodles according to package directions. Drain and rinse with cold water; drain well., Meanwhile, toss pork with 1 tablespoon soy sauce and pepper. In a 6-qt. stockpot, heat 1 tablespoon oil over medium-high heat; saute pork until lightly browned, 2-3 minutes. Remove from pot., In same pot, heat remaining oil over medium-high heat; saute ginger and garlic until fragrant, 20-30 seconds. Stir in broth and remaining soy sauce; bring to a boil. Add celery and snow peas; return to a boil. Simmer, uncovered, until crisp-tender, 2-3 minutes. Stir in pork and coleslaw mix; cook just until cabbage begins to wilt. Add noodles; remove from heat. Top with green onions and, if desired, cilantro.

3 pounds chicken leg quarters
3 (32 ounce) cartons low-sodium chicken broth
1 tablespoon Hawaiian sea salt
1 (1/2 inch) piece fresh ginger root, sliced
1 large Maui sweet onion, cubed
1 (8 ounce) package uncooked bean threads (cellophane noodles)
1 bunch green onions, thinly sliced
1 small head bok choy, chopped

Steps:

  • Place chicken, chicken broth, salt, and ginger into a large pot. Bring to a boil over high heat, then reduce heat to medium-low and simmer until the chicken is tender and no longer pink, about 35 minutes. Remove chicken, and strain broth into a new pot. Discard the solids.
  • Fill a bowl with hot tap water. Add the long rice noodles, and let sit for 30 minutes to soften.
  • Stir onion into the broth, and bring to a boil, then reduce heat to medium-low. Meanwhile, remove the skin and bones from the chicken and discard. Roughly chop the meat and set aside. Add the noodles, chicken meat, green onion and bok choy; simmer until noodles are tender.
  • After the noodles have sat for 30 minutes, stir in the chicken meat, green onion, and bok choy. Reheat and serve.

1 (6 ounce) box chicken (any kind...I use store brand) or 1 (6 ounce) box pork stuffing mix (any kind...I use store brand)
1 (10 ounce) can cream of chicken soup (or, your choice...mushroom,celery,etc.)
1 (15 ounce) can whole kernel corn
1 cup water
1/4 cup melted butter
1/2 cup water (OR milk...to mix with soup)
6 ounces shredded cheese (type & amt. your choice...I vary,mozzarella,cheddar,colby..)
salt
pepper
garlic powder

Steps:

  • Preheat oven to 350.
  • Place chops in lightly greased 9x13 baking dish. Season with salt, pepper, and garlic powder.
  • Mix stuffing with 1 cup water, melted butter and can of corn.
  • Spread stuffing mixture into dish, around and covering chops.
  • Mix soup with 1/2 cup water and pour over stuffing mixture, concentrated mainly over chops.
  • Sprinkle shredded cheese over all.
  • Bake uncovered at 350 for 45 minutes.

  • Cut pork roast into 1 inch cubes, trimming and discarding any big pieces of fat. Add to a large stock pot with enough water to cover the meat by around 2 inches (8-10 cups water). Bring pot to a boil. Skim off any foam that rises to the surface.
  • Add to the pot one quartered onion, 5 whole garlic cloves, bay leaves, 2 teaspoons salt and chicken bouillon and simmer for 1 ½ hours.

  • Soak 2 pounds of chicken bones and 2 pounds of pork bones in water for about 1 hour in order to get rid of any blood or impurities. It’s best to change the water 1 to 2 times over the course of this process. Drain and set aside. This step will help ensure you get a clear stock.
