8 ounces cream cheese, at room temperature
1/2 cup sour cream
1/2 cup mayonnaise
4 scallions, white and green parts, minced
2 tablespoons fresh parsley leaves, minced
1 tablespoon fresh dill, minced
1 teaspoon kosher salt
3/4 teaspoon freshly ground black pepper

Steps:

  • Place the cream cheese, sour cream, mayonnaise, scallions, parsley, dill, salt, and pepper in the bowl of an electric mixer fitted with the paddle attachment and blend. Serve at room temperature.

12 oz coconut yogurt
1 lemon, juiced
1 tablespoon white wine vinegar
1 teaspoon salt
¼ teaspoon pepper
2 cloves garlic, chopped
2 tablespoons olive oil
1 cucumber, grated
1 tablespoon fresh dill, chopped

Steps:

  • In a blender or food processor, combine coconut yogurt, lemon juice, vinegar, salt, and pepper. When creamy, add chopped garlic and oil. Blend again.
  • Seed and grate cucumber and wrap in towel.
  • Squeeze excess water out of cucumber.
  • Add cucumber to coconut yogurt dip, and stir to blend.
  • Cover and chill 2-3 hours.
  • Garnish with dill.
  • Serve with chips, crackers, or veggies.
  • Enjoy!

Steps:

  • Blend or process all ingredients until smooth.
  • Store covered in refrigerator for at least 2 hours or preferably overnight before using to allow flavours to develop.

1 tablespoon garlic, minced
¼ cup pine nuts
⅓ cup extra virgin olive oil
salt and pepper, to taste

Steps:

  • In a food processor, blend together fresh basil leaves and the pine nuts, pulsing several times until well-chopped and combined. Then, add parmesan cheese and garlic and pulse until well-combined.
  • Slowly stream in the olive oil while pulsing to keep the olive oil from separating.
  • Season lightly with salt and pepper to taste.
  • Serve over pasta or refrigerate in a sealed container.
