PERFECT PINTO BEANS

Number Of Ingredients 11

1 1/2 pounds pinto beans
2 teaspoons chili powder
1 teaspoon ground cumin
1/2 teaspoon paprika
1/4 teaspoon cayenne
3 thick-cut slices of bacon, cut into thirds
3 cloves garlic
2 bay leaves
1 medium onion, diced
1 red bell pepper, diced
Kosher salt and freshly ground black pepper

Steps:

  • Put the beans in a large bowl, cover with cold water and let soak overnight.
  • Drain and rinse the beans, then put them in a large pot. Cover the beans with water and add the chili powder, cumin, paprika, cayenne, bacon, garlic, bay leaves, onion, bell pepper and some salt and pepper. Bring to a boil, then reduce the heat to low and cook until the beans are tender, 2 to 3 1/2 hours.

1 lb. dried pinto beans (500g)
1 small onion, peeled and chopped
1 tomato, cored and chopped
2-3 cloves garlic, peeled
Salt to taste (start with 1 tbsp./12gr)
Optional ingredients:
Handful chopped cilantro
2-3 strips bacon, chopped
2-3 fresh jalapeños

Steps:

  • The pinto beans need to be inspected and picked over to check for small bits of dirt before cooking. Afterwards, place the sorted beans in a colander, and rinse thoroughly.
  • Place all of the ingredients in a 4 qt. (4lt.) clay pot, stock pot or saucepan and cover with approximately 3 qt. (3lt.) Place the pot on the stove and bring to a boil over high heat. Once the beans boil, lower the heat to a simmer, and cover, leaving the cover slightly tilted to allow the steam and pressure to escape. Check the water level and stir the beans every 15-20 minutes, adding water 2 cups at a time if the water level seems low.
  • After boiling for 2 hours, test the beans by making sure they are tender and soft by tasting one. Continue to cook for 30 more minutes if the beans taste undercooked. Adjust the salt if needed. Simmer the beans for 2½-3 hours. Once the beans are completely cooked, remove the beans from the heat, and allow them to cool for 15 minutes before serving.

CLASSIC SOUTHERN PINTO BEANS

Classic Southern style pinto beans, stewed with salt pork and cayenne pepper and always served with a side of cornbread.

1 pound dry pinto beans
6 ounces salt pork, diced
1 medium onion, coarsely chopped
1/2 teaspoon cayenne pepper
1 tablespoon bacon drippings or butter
Salt, black pepper and Cajun seasoning, to taste, as needed

Steps:

  • Rinse, drain and pick through beans for stones or debris. Soak overnight covered with 8 cups of water, or use the quick cook method below. Drain, rinse and return to the pot.
  • Cover with 8 cups of fresh water. Add the salt pork, onion and cayenne; bring to a boil. Reduce to simmer, and cook uncovered for 1-1/2 to 2 hours, or until thickened and creamy. Do not allow to boil.
  • Stir in the bacon fat or butter, taste and season as needed with salt, pepper and Cajun seasoning.
  • Serve as is, with raw or pickled onions and cornbread, corn muffins or cornmeal hoecakes on the side. Great served with fried potatoes and greens, and some folks enjoy these served over rice.

1 (16 ounce) package dried pinto beans
4 1/2 cups water
1/2 small onion, chopped
2 cloves garlic, minced
2 bacon, slices cut into 1 inch pieces
1 teaspoon salt
1 medium tomatoes, diced
4 jalapeno peppers, seeded,and chopped

Steps:

  • Place beans in a Dutch oven; add water 2 inches above beans.
  • Bring to a boil; boil 1 minute; cover, remove from heat and let stand 1 hour; drain.
  • Bring beans, 4 1/2 cups water, and next 4 ingredients to a boil in a Dutch oven.
  • Cover, reduce heat, and simmer, stirring occasionally, 1 hour and 30 minutes or until tender.
  • Add tomato and jalapeno pepper, and simmer mixture for 30 more minutes.

12 cups of water (divided )
1/4 pound salt pork (diced)
1 cup chopped onion
1 clove garlic (minced)
2 teaspoons salt
dash pepper
2 (14.5-ounce) cans tomatoes
3/4 cup diced green pepper
1 tablespoon sugar
6 drops bottled hot pepper sauce

Steps:

  • Gather the ingredients.
  • In a 2-quart bean pot or casserole, cover pinto beans with 6 cups of water; soak overnight.
  • Drain the water from the beans. Cover the beans with 6 cups of fresh water; add salt pork, onion, and garlic to the beans.
  • Bring the beans to a simmer and cover. Cook on medium-low heat, covered, for 2 hours.
  • Stir in salt, pepper, tomatoes, green pepper, sugar, and hot pepper sauce.
  • Cover and simmer on low heat for 3 hours more.
  • Serve beans with cornbread wedges or hot cooked rice.
  • Enjoy.

2 (15 ounce) cans pinto beans, rinsed and drained
2 (15 ounce) cans white corn, rinsed and drained
1 (4 ounce) can chopped green chiles, undrained

1 red bell pepper - cored, seeded and finely chopped
1 green bell pepper - cored, seeded and finely chopped
1 small red onion, finely chopped
