CRANBERRY TANGERINE AND CANDIED GINGER TART WITH CARDAMOM CRUMBLES



Cranberry Tangerine and Candied Ginger Tart with Cardamom Crumbles image

The flavors of this tart remind me of an exotic Moroccan dessert. I like serving this with pistachio ice cream and steaming hot cups of mint tea. Delicious! I typically bake this tart one day ahead and leave it overnight at room temperature. Feel free to use your favorite tart dough, or my recipe below.

Number Of Ingredients 20

1 1/2 cups unbleached all-purpose flour
2 teaspoons granulated sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon kosher salt
4 ounces unsalted butter, very cold and cut into 1-inch cubes
6 tablespoons heavy cream
Butter, for greasing
1 3/4 cups granulated sugar
2 tablespoons tangerine zest
1 1/4 cups unbleached all-purpose flour
1 teaspoon ground cardamom
1 teaspoon ground cinnamon
3/4 teaspoon ground ginger
3/4 teaspoon kosher salt
6 ounces unsalted butter, chilled and cut into 1/2-inch pieces
3/4 cup granulated sugar
Zest of 2 tangerines
6 cups fresh cranberries, washed and dried
1/2 cup candied ginger, cut into small pieces
1/3 cup dark brown sugar, packed

Steps:

  • Preheat the oven to 375 degrees F.
  • For the tart dough: Combine the flour, sugar, cinnamon and salt in a medium bowl. Add the cold butter and toss to coat. Pinch the butter and flour together until the butter is flaky. Start to rub in between your fingers until it looks like coarse cornmeal.
  • In the center of the bowl pour the cream. Using a rubber spatula, turn the flour over in the bowl repeating until the cream is absorbed. With your fingers press the dough to form a compact disc. Remove the dough. Cover the bowl with plastic wrap and chill, about 1 hour.
  • Working quickly, roll the dough into a 13-inch circle and carefully place it into a greased 10-inch tart pan. Gently fold the excess dough against the sides creating a reinforced crust. Press down the dough, trimming if there is extra that extends beyond the pan. Chill for an additional 30 minutes.
  • Place kitchen parchment paper over the chilled dough, fill with weights, beans or raw rice are prefect. Bake, 15 to 18 minutes. Reduce the oven temperate to 350 degrees F. Carefully remove the parchment and continue baking until the tart shell is golden brown and fully baked, 10 to 12 minutes. Set aside and allow to completely cool.
  • For the cardamom crumbles: Begin the cardamom crumbles in a bowl of a stand mixer with a paddle attachment, with the sugar and tangerine zest. In the palms of your hands, rub together the sugar and zest to release the tangerine oils. Add the flour, cardamom, cinnamon, ginger and salt and mix at medium speed until small clumps of dough form. Dump onto a sheet pan. Chill until needed. This can be made up to 2 days ahead.
  • For the cranberry tart: In the palms of your hands, rub together the sugar and zest in a large bowl. Add the cranberries, candied ginger and brown sugar and toss well. Fill the baked tart shell with the cranberries, top with the cardamom crumbles and bake until golden brown and the cranberries begin to bubble up through the crumble, 45 to 50 minutes.
  • Remove the tart from the oven and allow to cool to room temperature. I prefer waiting an hour or longer before cutting the tart. This gives the very juicy cranberries time to cool, allowing the tart to set up. I've even let it sit all night on the counter.

CANDIED TANGERINE PEEL

While the bavarian and the caramel sauce flirt subtly with the flavor of the fruit, this candied peel is very direct, delivering a straight shot of sweet-tart tangerine flavor.

8 tight-skinned tangerines, washed well
2 cups granulated sugar
2 cups water
Superfine granulated sugar for coating

Steps:

  • Remove peel, including a little of pith, from tangerines in (2- by 1-inch) strips with a sharp vegetable peeler (preferably Y-shaped). Cut into thin (1/8-inch) julienne strips.
  • Cover strips with cold water in a medium saucepan and bring to a boil. Drain in a sieve, then repeat procedure with more cold water 2 times.
  • Bring granulated sugar, water, and zest strips to a boil in a heavy medium saucepan, stirring until sugar has dissolved, then simmer until zest is translucent and syrup has thickened, 45 to 50 minutes.
  • Lightly oil a large rack and set over a wax-paper-lined baking sheet. Transfer candied peel to rack with a fork, separating strips. (Discard syrup or reserve for another use.) When peel is cool (but not completely dry), toss with superfine sugar in a bowl to coat. Return to rack until dry to the touch, about 30 minutes.

3 tablespoons unsalted butter
1 large Spanish onion, finely diced
2 cloves garlic, finely chopped
3 tablespoons grated fresh ginger
2 cups tangerine juice
1/4 cup light brown sugar
1 pound cranberries
2 tangerines, segmented
1 tablespoon grated tangerine zest

Steps:

  • Melt butter in a medium saucepan over medium-high heat. Add onion, garlic, and ginger and cook until soft. Add tangerine juice and brown sugar and bring to a boil. Add half of the cranberries and cook until they pop. Add remaining cranberries and cook for 5 minutes. Remove from the heat and add tangerines and zest. Transfer to a serving bowl and serve at room temperature.

2 tablespoons grated tangerine peel
1 tablespoon baking powder
1/2 teaspoon salt
1/2 cup (1 stick) chilled unsalted butter, cut into small pieces
1/2 cup dried cranberries
1/4 cup crème fraîche or sour cream
3 tablespoons fresh tangerine juice
1 large egg
2 teaspoons unsalted butter, melted
2 teaspoons raw sugar*

Steps:

  • Preheat oven to 425°F. Line baking sheet with parchment paper. Whisk flour, 1/3 cup sugar, peel, baking powder, and salt in bowl to blend. Add 1/2 cup chilled butter. Using fingertips, rub in until mixture resembles coarse meal. Mix in cranberries.
  • Whisk crème fraîche, tangerine juice, and egg in medium bowl to blend. Gradually add to flour mixture, using fork to toss until moist clumps form. Knead dough briefly on lightly floured surface until smooth. Pat dough into 8-inch round. Cut into 8 equal wedges. Transfer to prepared baking sheet, spacing apart. Brush with melted butter; sprinkle with raw sugar.
  • Bake until golden brown, about 12 minutes. Serve warm or at room temperature. (Can be made up to 1 month ahead. Cool completely. Wrap in aluminum foil; freeze. Serve at room temperature.)
  • Also called turbinado or demerara sugar; available at natural foods stores and most supermarkets.

Yes, they're lumpy, bumpy and misshapen. But dang! These things are good. As scones go, they're very tender and flaky - not dry at all. The tangerine glaze highlights the bright citrus zest along with the wonderful dried cranberries tucked throughout these bad boys.

Scones
2 cups all-purpose flour
4 teaspoons baking powder
3/4 teaspoon salt
1/3 cup sugar
5 tablespoons unsalted butter
2 tablespoons vegetable shortening
3/4 cup heavy cream
1 egg
1 tablespoon tangerine zest (from approx. two small tangerines)
3/4 cup dried cranberries
Glaze
2/3 cup powdered sugar
2 tablespoons fresh-squeezed tangerine juice (use the tangerines you zested)

Steps:

  • Preheat oven to 350 degrees Fahrenheit.
  • In a large bowl, mix together the flour, baking powder, salt, and sugar.
  • Cut the butter into small pieces and add, along with the shortening, to the flour mixture.
  • Using two butter knives, a pastry blender or (my favorite) your hands, work the butter and shortening into the flour mixture until the mixture resemble coarse crumbs.
  • In a small bowl, beat the egg and then mix in the heavy cream and tangerine zest.
  • Create a well in the dry mixture, then pour the cream mixture in.
  • Mix just until the dough starts to stick together. I try to work it as little as possible after this point.
  • Turn the scone dough out onto a floured board, and gently knead it together enough to form one cohesive chunk of dough.
  • Work the dough into a round disc shape about 3/4 inch thick.
  • Cut the disc into 8 wedges.
  • Place the wedges on an ungreased cookie sheet.
  • Bake for 15 - 17 minutes or until the scones just begin to brown.
  • Pull from the oven and let rest on the cookie sheet for about 5 minutes, then carefully transfer to a wire rack. Allow to cool about 10 minutes.
  • Make the glaze! In a small bowl, whisk together the powdered sugar and tangerine juice.
  • Using a spoon, drizzle the glaze over the scones. Let cool and serve.
