CROQUE MADAME

Croque Madame image

(A Monsieur, made better!)

Provided by Rachael Ray : Food Network

Time 20m

Yield 2 servings

Number Of Ingredients 11

4 tablespoons butter, divided
1 rounded tablespoon all-purpose flour
1 cup milk
Salt and pepper
1/8 teaspoon fresh grated nutmeg, eyeball it
2 teaspoons Dijon style mustard
2 slices white bread
2 large eggs
4 slices deli ham
4 slices deli Swiss cheese
Chopped parsley leaves, chives or thyme leaves, for garnish - choose from any or all on hand

Steps:

  • Place a small sauce pot over medium low heat and melt 2 tablespoons butter in it. Whisk in a rounded tablespoon of flour and cook 1 minute or so. Whisk in milk and bring to a bubble then drop heat to low. Season the sauce with salt, pepper, nutmeg and Dijon. When sauce coats back of a spoon, turn off heat.
  • Heat 1 tablespoon of butter in each of 2 medium nonstick skillets, both over medium low heat. When butter melts add 2 large eggs to the first skillet, keeping the whites separate from each other. To the second skillet add 2 slices bread and toast lightly on first side then turn the bread. Top turned bread liberally with sauce and 2 slices of the ham and the Swiss cheese on each slice of bread. Use a spatula to transfer the eggs to the tops of the open faced sandwiches. Cover the pan with foil and turn off heat. Let pan stand 5 minutes to melt cheese and set sauce and eggs.
  • Top sandwiches with chopped herb or herbs of choice and serve. Spoon any leftover sauce over top of the eggs before garnishing.

CROQUE MADAME

This classic ham sandwich from France is drizzled with bechamel sauce and topped with fried eggs.

Categories     Food & Cooking     Breakfast & Brunch Recipes

Yield Makes 2 sandwiches

Number Of Ingredients 11

5 tablespoons unsalted butter
1 tablespoon flour
1 cup milk
1/4 teaspoon salt
Pinch of freshly grated nutmeg
1 cup grated Gruyere cheese
4 slices white bread
2 teaspoons Dijon mustard
3 ounces best-quality deli ham, thinly sliced
2 large eggs
Ground pepper to taste

Steps:

  • Preheat the broiler with the rack in the top position. In small saucepan, melt 2 tablespoons butter over high heat. Whisk in flour and cook until lightly golden. Add milk and salt and whisk constantly until mixture thickens, about 2 minutes. Remove from the heat. Stir into the sauce the nutmeg and half the cheese.
  • Lay the slices of bread on a baking sheet. Divide the Dijon between 2 slices and top with ham. Divide half of the bechamel between the remaining 2 bread slices and top with remaining cheese. Close the sandwiches.
  • Melt 2 tablespoons butter in a large skillet over medium heat. Add sandwiches and cook both sides until bread is golden brown and the cheese is melted, about 3-4 minutes.
  • Return sandwiches to the baking sheet, top with remaining bechamel, and place under the broiler until bubbly, about 2 minutes. Meanwhile, melt remaining butter in the same skillet over high heat. Fry eggs, sunny side up, for about 2 minutes. Top sandwiches with fried egg, season with black pepper, and serve immediately.

CROQUE MADAME SANDWICH

Croque Madame Sandwich image

Provided by Alex Guarnaschelli

Time 30m

Yield 4 sandwiches

Number Of Ingredients 11

6 ounces unsalted butter, divided
2 tablespoons flour
1 cup whole milk
1 bay leaf
1/2 teaspoon kosher salt, plus more for seasoning
1/4 cup grated Parmesan
8 slices thick sourdough bread
8 to 12 slices good quality ham (about 3/4 pound)
12 ounces Gruyere cheese, grated, divided
Nonstick spray
4 eggs

Steps:

  • Preheat the broiler.
  • Make the bechamel sauce: In a small saucepan, melt 1 ounce butter over medium heat. Whisk in the flour and cook, stirring constantly, until you smell the flour and butter cooking, 2 to 3 minutes. Do not allow it to brown. Add the milk and bay leaf and cook, stirring from time to time, until the mixture thickens like a soup, 10 to 12 minutes. Remove the bay leaf and stir in the Parmesan. Transfer to a bowl to cool.
  • Arrange 4 slices of the bread on a flat surface. Top each with 2 to 3 slices of ham. Mix together half of the Gruyere cheese and the bechamel sauce. Taste for seasoning. Spread a little of the sauce on top of the ham and top each with another slice of bread.
  • Heat a large cast iron skillet and, when hot, add half of the remaining butter. Add 2 of the sandwiches and brown on one side, 2 minutes. Turn on the other side and brown 2 more minutes. Transfer to a baking sheet and repeat with the remaining butter and sandwiches. Spread the remaining bechamel on top of the sandwiches and top with the other half of the Gruyere cheese.
  • Wipe any crumbs from the cast iron skillet and spray with nonstick spray. Crack 4 eggs into the skillet, leaving a little room between each. (Alternatively, fry 2 at a time). While the eggs are frying, place the sandwiches under the broiler and broil until the top becomes golden brown, 1 to 2 minutes. Season the eggs with salt and top each sandwich with a fried egg. Serve immediately.

THE CLASSIC FRENCH BISTRO SANDWICH - CROQUE MONSIEUR

The Classic French Bistro Sandwich - Croque Monsieur image

My two versions of this classic French café/bistro sandwich - oven baked for large quantities and ease.......or, the traditional frying pan/skillet method! You can always rely upon the French to add a certain "je ne sais quoi" to even the simplest food ...including the humble cheese and ham sandwich. The croque-monsieur (which becomes a croque-madame if you top it with a fried egg) is a great favourite in French cafés & bistros, and there are as many methods of crafting it as there are cafés! This one works for me. But, please be warned ... it's not for calorie-counters, the Cholesterol Police or those of a nervous disposition!!

Provided by French Tart

Categories     Lunch/Snacks

Time 20m

Yield 4 Croque Monsieur, 4 serving(s)

Number Of Ingredients 8

8 slices white bread
4 ounces butter, softened
4 slices ham
4 slices gruyere cheese
2 eggs, slightly beaten
1 tablespoon water
salt
fresh ground black pepper

Steps:

  • Spread the bread with some of the softened butter, make 4 sandwiches, each with one slice of ham and one slice of cheese. Press them firmly together.
  • Beat the eggs with the water, add the salt and pepper to taste, and dip the sandwiches into the egg mixture, coating all sides well.
  • Heat the rest of the butter in a heavy- bottomed frying pan/skillet, when it has melted and is very hot - but not brown, fry the sandwiches for about 5 - 8 minutes, turning once.
  • Serve immediately.
  • If you prefer, although it is not traditional, you may place the croque-monsieur into a very well-buttered baking pan and bake in a moderately hot oven - 175°C/350°F - turning once, for about 10 to 15 minutes. It is easier to prepare a larger number this way and keep them warm until you are ready to serve them.

JACQUES'S CROQUE MADAME

Categories     Sandwich     Cheese     Chicken     Poultry     Appetizer     Bake     Kid-Friendly     Dinner     Lunch     Sugar Conscious     Kidney Friendly     Peanut Free     Tree Nut Free     Soy Free     Small Plates

Yield Yield: 1 sandwich

Number Of Ingredients 8

2 slices home-style white bread
1 Tablespoons soft butter, or more if needed
2 or more slices Swiss cheese (such as Gruyère or Emmentaler) about 1/8 inch thick (enough to cover both bread slices)
several slices cooked chicken, about 1/8 inch thick (enough to cover one bread slice)
1 teaspoon chopped fresh chives
dashes of Tabasco sauce (optional)
Special Equipment
A cookie sheet or shallow-rimmed baking sheet, large enough to hold all the sandwiches at once

Steps:

  • Preheat the oven to 400°F.
  • Spread a thin layer of soft butter on one side only of both bread slices, then cover the buttered sides neatly with a layer of cheese. Arrange a layer of chicken on one bread slice and sprinkle on the chives and a few dashes of Tabasco, if you like. Flip the other piece of bread over on top (cheese inside, of course), press together, and spread more butter on the outsides of the sandwich, coating the slices evenly. Lay the assembled sandwich in the baking dish and prepare others the same way.
  • Bake the sandwiches for 10 minutes or so, until the bottom sides are crisp and golden. Flip them over and bake for about 5 minutes more, until the second sides are also well toasted.
  • Serve hot. For appetizer portions, trim off the crusts and cut each sandwich diagonally into 4 small triangles.

THE PERFECT CROQUE MONSIEUR

The perfect croque monsieur image

Master the croque monsieur with soft sourdough, gruyère, smoked ham and creamy mustard mayo. You'll relish every mouthful of this brunch classic.

Provided by Emma Freud

Categories     Breakfast, Brunch, Lunch, Snack, Treat

Time 50m

Number Of Ingredients 16

4 slices from a white sourdough or crusty white
20g butter, melted
1 tsp Dijon mustard
100g grated gruyère
4 thin slices of great smoked ham
125ml milk
125ml cream
1 garlic clove, crushed
2 bay leaves
1 small onion, chopped
20g butter
20g plain flour
1 heaped tsp Dijon mustard
fresh nutmeg, grated
1 tsp Dijon mustard
1 tbsp mayonnaise

Steps:

  • First, make a perfect béchamel sauce. Put the milk, cream, garlic, bay leaves and onion in a small pan over a medium heat and stir together. Heat until nearly boiling, then turn the heat off and leave for 10 mins to infuse. Pass the liquid through a sieve and discard the bay and onion.
  • Melt the butter with the flour in another pan and cook over a gentle heat until it smells biscuity. Gradually whisk in the warm milk and bring to a gentle boil, stirring regularly, then add the Dijon mustard, a little grating of fresh nutmeg and some seasoning. It should be a lovely thick creamy sauce with a deep flavour.
  • Brush the slices of bread with melted butter. Place them on a baking tray and toast one side under a grill, buttered-side up, until golden. Take them out and heat oven to 220C/200C fan/gas 7.
  • Turn the bread over and spread each slice with a thin layer of Dijon, followed by a layer of the béchamel. Cover the sauce with grated gruyère, and then a slice of ham. Form the slices into two sandwiches, spread a thin layer of the sauce over the top slice and sprinkle more gruyère on top. Put the sandwiches in the oven and bake for 10-15 mins or until golden. Mix the mustard and mayo together and serve alongside.
