Grilled Clams with Basil Breadcrumbs image

Categories     appetizer

Time 30m

Yield 6 servings

Number Of Ingredients 11

1 1/2 cups coarse bread crumbs, toasted
2 cloves garlic, minced
3 tablespoons good olive oil
2 tablespoons fresh lemon juice
6 sun-dried tomato halves in oil, drained and coarsely chopped
1/2 cup chopped fresh basil leaves
1/4 cup toasted pine nuts
3/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
24 littleneck clams, scrubbed clean
2 1/2 tablespoons melted butter

Steps:

  • Heat a gas grill or prepare a charcoal grill with hot coals.
  • Combine the bread crumbs, garlic, olive oil, lemon juice, sun-dried tomatoes, basil, pine nuts, salt and pepper in a large serving bowl and set aside.
  • When the grill is hot, place the clams in 1 layer on the hot grate and allow the heat to open the clams. They'll open gradually for about 5 minutes, then pop-open wide when they're done. Using tongs, remove the clams from the grill and place them in the bowl with the bread crumb mixture and toss together. Drizzle with the melted butter, and serve hot.

CLAMS IN OLIVE OIL WITH JAMON AND PINE NUTS

Clams in Olive Oil With Jamon and Pine Nuts image

(Almejas Con Aceite De Oliva, Jamon Y Pinones) This recipe is adapted from "The New Spanish Table" cookbook. This popular dish is served at the El Suquet de l'Almirall restaurant in Barcelona, clams 'poached' in olive oil together with pine nuts and bits of serrano ham. Three simple flavors, each with its own elusively sweet aftertaste. And the dish is rediculously easy, to boot. For best results, use a lovely olive oil and good pine nuts, preferably imported from the Mediterranean, not from China. You'll want plenty of bread to mop up the sauce. Any leftover sauce is delicious tossed with pasta.

Time 30m

Yield 4 serving(s)

Number Of Ingredients 7

1 1/4 cups fragrant extra virgin olive oil
2 small garlic cloves, sliced
2/3 cup pine nuts
3 ounces piece serrano ham, finely diced (or proscuitto)
2 lbs small clams, scrubbed (Manillas or Littlenecks)
2 -3 tablespoons fresh flat-leaf parsley, minced
crusty bread, for serving

Steps:

  • Heat the olive oil and garlic in a wide earthenware cazuela, a very large heavy skillet, or a wide casserole over medium heat. Add the pine nuts and ham and cook, stirring, until the nuts just begin to color, about 2 minutes.
  • Add the clams, cover the cazuela, and cook until the clams open, 4 to 7 minutes depending on their size, shaking the pan occasionally. Discard any clams that don't open.
  • Serve the clams directly from the cazuela or spoon them into bowls, adding plenty of the cooking liquid to each bowl. Sprinkle the parsley on top and serve with plenty of bread as a first course.

LINGUINE WITH SMOKED BACON, LEEKS AND CLAMS

Linguine With Smoked Bacon, Leeks and Clams image

Briny clams come together with smoky bacon and sautéed leeks in this showstopper. Quick to prepare, this weeknight recipe is decidedly sophisticated. First, sauté the bacon, add the garlic and leeks and add some good white wine and tomatoes. Toss with al dente linguine and top with clams and lemon juice. Finish with it with parsley and pine nuts, and pour yourself a glass of that wine. With this simple, elegant meal, you've earned it.

Time 30m

Yield Serves 4

Number Of Ingredients 14

Salt
3 dozen littleneck clams
3 tablespoons olive oil
1/4 pound smoked bacon, cut into small cubes
8 cloves garlic, thinly sliced
2 cups thinly sliced leeks (white and light-green parts only)
1/2 cup dry white wine
1 teaspoon freshly ground black pepper, plus more to taste
Pinch cayenne or crushed red pepper flakes
1 to 1 1/2 cups cherry tomatoes, halved
1 pound linguine
3 tablespoons lemon juice (optional)
1/4 cup coarsely chopped flat-leaf parsley
1/4 cup lightly toasted pine nuts

Steps:

  • Bring a large pot of lightly salted water to a boil. Meanwhile, scrub the clams under cold running water with a stiff-bristled brush, then refrigerate.
  • Place a large saute pan over medium heat and add the olive oil. When the oil is hot, add the bacon and saute until the fat has rendered and the bacon starts to brown. Add the garlic and leeks and saute until the leeks have softened and released most of their liquid. Increase heat to high and add the wine, black pepper, cayenne and tomatoes; boil until the wine is reduced by half, about 5 minutes.
  • Add the linguine to the boiling water and cook until just before it is al dente. Meanwhile, add the clams and, if desired, the lemon juice to the saute pan. Cover and cook until the clams open completely, about 5 minutes. Season to taste with salt.
  • Drain the linguine and add to the pan with the clams; it will continue to cook when added to the mixture. Season to taste with salt and pepper. Garnish with parsley and pine nuts.
