This dish is one of my favorites for the grill. If a fish comes whole from the store, leave the head and tail on when you cook it, to help retain moisture. The fish is done when the inside of the stomach is dry.

2 whole branzini, cleaned (scaled, gutted, and fins removed, but head left on)
1 teaspoon salt
4 tablespoons extra-virgin olive oil
3 lemons
2 oranges
1/2 cup fresh basil leaves

Steps:

  • Clean the grill or grill pan, grease it generously with olive oil (or any vegetable oil), and preheat it over medium heat.
  • Season the insides and outsides of the fish with salt, then rub them with 2 tablespoons of the olive oil.
  • Grate the zest from 1 of the lemons and 1 of the oranges; squeeze the juice from 1 of the lemons. Combine the zests and the juice and stir. Cut the remaining lemons and oranges into ¼ inch rounds. Fill the cavity of each fish with the citrus slices and the basil leaves. To the zest-and-juice mixture, add the remaining 2 tablespoons of olive oil. Stir well, then let the zest sink to the bottom.
  • Put the fish on the heated, oiled grill, using indirect medium heat, and cook with the lid closed (see Note). After grilling them for about 10 minutes on one side, turn the fish over and cook them for 7 to 10 minutes longer.
  • While the fish are still hot, spoon the oil and lemon juice mixture over them, leaving the bitter zest behind.

2 tablespoons olive oil, plus more for the pan
Six 3- to 4-ounce branzino fillets, bones removed
Kosher salt and freshly ground black pepper
2 lemons
2 oranges
1/2 cup flat-leaf parsley, finely chopped
1 tablespoon good-quality extra-virgin olive oil
Pinch crushed red pepper flakes

Steps:

  • Preheat the oven to 375 degrees F. Generously grease a large rimmed baking sheet with olive oil.
  • Arrange the fillets on the baking sheet in one layer. Drizzle the 2 tablespoons of olive oil over the fish and season with salt and black pepper. Bake until the fish is flaky and just fully cooked through, about 12 minutes.
  • Meanwhile, finely grate the zest of 1 lemon and 1 orange into a small bowl and add the parsley, good olive oil, red pepper flakes, a pinch of salt, a few grinds of black pepper, juice of half the lemon and juice of half the orange. Stir gently to combine.
  • Slice the remaining lemon and orange. Serve the fish topped with the gremolata and citrus slices.

Iranians love eating fish with rice to celebrate Nowruz, the Persian new year. It's an old tradition honored by Iranians living in other countries, too. A white fish is the classic choice; both branzino and Mediterranean sea bass (lavaraki) work well. The fish is flavored with saffron and lemon and stuffed with an onion, walnut, herb and pomegranate molasses filling. Sabzi polo (Persian herb rice) is the perfect accompaniment.

Cooking spray
1 teaspoon saffron threads, ground in a mortar and pestle
3 ice cubes
Two 1 1/2-pound whole branzino, cleaned, gutted and patted dry
Kosher salt and freshly ground pepper
4 tablespoons olive oil
1 large onion, chopped
2 cloves garlic, minced
Juice from 2 lemons (about 1/2 cup)
1 cup fresh flat-leaf parsley leaves, chopped
1/2 cup walnuts, chopped
3 tablespoons pomegranate molasses
1/2 teaspoon turmeric
Sabzi polo (Persian herb rice), for serving

Steps:

  • Preheat the oven to 420 degrees F with a rack in the middle position. Line a sheet pan with parchment paper and coat with cooking spray.
  • Place the saffron and ice in a small bowl and set aside at room temperature until the ice melts. This will be your saffron water.
  • Using a sharp knife, cut 5 or 6 slits, 1 inch apart, through the skin and flesh of each fish on one side. Salt and pepper both sides of the fish and set aside.
  • Heat 2 tablespoons of the olive oil in a medium skillet over medium heat. Add the onions and cook, stirring occasionally, until golden, about 8 minutes. Add the garlic and cook, stirring occasionally, until fragrant, 1 minute more.
  • Add 2 tablespoons of the lemon juice, the parsley, walnuts, pomegranate molasses, turmeric, 1 tablespoon of the saffron water, 1 teaspoon salt and 1/4 teaspoon pepper. Cook, stirring occasionally, for 5 minutes. Remove from the heat and set the onion filling aside.
  • Stir together the remaining 2 tablespoons olive oil, the remaining lemon juice and the remaining saffron water in a small bowl. Brush the insides of the fish with some of this saffron-lemon mixture, then stuff the cavities with the onion filling. Seal the cavities shut using 3 toothpicks along each open edge. Brush the top of the fish with some of the saffron and lemon mixture, then transfer the fish to the prepared sheet pan.
  • Bake for 10 minutes. Brush the top of the fish with some of the saffron mixture, then bake until cooked through and the flesh flakes easily, about 15 minutes more (see Cook's Note). Remove the sheet pan from the oven and turn on the broiler.
  • Brush the top of the fish with more of the saffron lemon mixture, then broil until the skin is golden and somewhat crispy, 3 to 5 minutes; keep a close eye to make sure the tops don't burn. Remove the toothpicks and serve with sabzi polo (see Cook's Note).

2 1- to 1 1/2-pound whole branzini, scaled, gutted, and cleaned
Coarse salt and freshly ground black pepper
1 lemon, very thinly sliced, plus wedges for serving
2 large sprigs fresh dill
1/4 small bulb fennel, cored and very thinly sliced (about 1 cup), fronds reserved
4 sprigs fresh flat-leaf parsley

Steps:

  • Preheat oven to 450 degrees. Oil a large rimmed baking sheet.
  • Rinse fish well, pat dry with paper towels, and place on baking sheet. In the cavity of each fish, place 2 lemon slices, 1 sprig dill, 1/2 of the fennel, 2 sprigs parsley, and 1/2 of the reserved fennel fronds. Season the cavity and exterior of each fish with salt and pepper. Lay 3 slices lemon over the top of each fish. Drizzle oil lightly over fish and roast until cooked through, about 15 minutes.
  • Transfer fish to serving plates and serve with lemon wedges.
