A refreshing orange and gin cocktail that will brighten up the cold and dark days of winter!

Ingredients

500 milliliters / 2 cups fresh orange juice
2 limes, halved
1 tablespoon superfine/caster sugar
Handful of fresh mint
250 mililiters / 1 cup gin
2 cups crushed ice to serve

Steps:

Sieve the orange juice to ensure there is no pulp and pour into a serving jug.
Place the limes, sugar and mint into a cocktail shaker and muddle to get as much juice as possible. You should get about 1/4 - 1/3 of a cup of juice.
Strain and pour into the orange juice.
Add the gin to the mixture.
Add crushed ice to your glasses and top with the cocktail.
Serve immediately.

This is from the South Beach Diet Taste of Summer cookbook. This is okay for phases 2 and 3. I changed regular water to sparkling. I enjoyed this tart, refreshing and pulpy drink. The orange flavor is especially nice.

Ingredients

1 pint strawberry, hulled
1 large seedless oranges, peeled and roughly chopped
2 tablespoons fresh lime juice
1 -2 tablespoon Splenda granular
1 1/2 cups sparkling water, chilled
ice cube

Steps:

In a blender, combine strawberries, orange, lime juice and sugar substitute. Puree until smooth.
Stir in water.
Fill 4 (10oz) glasses with ice cubes.
Pour blended juice over ice.
Garnish with fresh strawberries, orange slices or lime slices if desired. Fresh mint would probably be good with this too.
