2 cups all-purpose flour
1 cup sugar
4 teaspoons baking powder
1 3/4 teaspoons cinnamon
1/2 teaspoon salt
1 cup buttermilk
1/3 cup oil
1 1/2 teaspoons vanilla
2 eggs
2 tablespoons sugar
1 teaspoon cinnamon
2 tablespoons butter, softened

Steps:

  • Preheat oven to 350 degrees F.
  • Grease and flour the bottom of a 9x5-inch loaf pan.
  • In a mixing bowl, combine all the ingredients for the loaf, beating until well mixed, about 3 minutes.
  • Pour into prepared pan.
  • In a small bowl, combine all streusel ingedients, mixing until it is crumbly.
  • Sprinkle streusel evenly over batter, and swirl with a knife to marble somewhat.
  • Bake in the preheated oven for 45-55 minutes or until a toothpick inserted in the middle comes out clean.
  • Cool 10-15 minutes in the pan, then finish cooling on a wire rack.
  • Refrigerate unused portions.

Steps:

  • Preheat oven to 325°F For the Streusel Topping, mix flour, brown sugar and cinnamon in medium bowl. Cut in cold butter with pastry blender or 2 knives until mixture resembles coarse crumbs. Stir in pecans. Set aside.
  • For the Cake, beat softened butter, granulated sugar and sour cream in large bowl with electric mixer on medium speed until light and fluffy. Add eggs, 1 at a time, beating well after each addition. Mix in vanilla. Gradually beat in flour and baking soda on low speed until well mixed.
  • Spoon 1/2 of the Streusel Topping into greased and floured 12-cup Bundt pan. Spoon 1/2 of the batter over top. Repeat layers.
  • Bake 1 hour or until toothpick inserted in center comes out clean. Cool in pan 10 minutes. Remove from pan. Cool completely on wire rack. Sprinkle with confectioners' sugar or drizzle with Vanilla Glaze, if desired.
  • Vanilla Glaze: Mix 1 1/2 cups confectioners' sugar, 2 tablespoons water and 1/2 teaspoon McCormick® Pure Vanilla Extract in medium bowl until smooth. If necessary, stir in 1 to 3 additional teaspoons water until glaze is of desired consistency. Drizzle over cooled cake. Let stand until glaze is set.
  • Cinnamon Apple Streusel Cake: Prepare cake batter as directed, stirring in 1 cup chopped peeled apple.

Dough:
1/2 cup lukewarm water (85°F to 95°F)
2 teaspoons active dry yeast
1 1/2 cups lukewarm milk (85°F to 95°F)

2 large eggs
5 1/2 cups (about) all-purpose flour
Streusel:
2 1/4 cups (packed) golden brown sugar
2 cups pecans, toasted, chopped (about 8 ounces)
4 1/2 teaspoons ground cinnamon
3/4 cup unsalted butter, melted

Steps:

  • For dough:
  • Stir 1/2 cup lukewarm water and yeast in large bowl to blend. Whisk in lukewarm milk, melted butter, sugar and salt, then eggs. Add enough flour, 1/2 cup at a time, to form smooth but very sticky dough, stirring vigorously with wood spoon. Butter large bowl. Transfer dough to bowl; turn to coat with butter. Cover bowl with plastic wrap. Refrigerate overnight (do not punch down dough).
  • For streusel:
  • Mix brown sugar, pecans and cinnamon in 4-cup measuring cup. Stir in melted butter; set aside.
  • Butter 15x10x2-inch glass baking dish. Set aside 2 cups streusel; cover bottom of dish with remaining streusel. Turn dough out onto generously floured surface, scraping bowl with rubber spatula if dough sticks (do not punch down dough). Sprinkle dough lightly with flour. Roll out dough to 14-inch square. Sprinkle reserved 2 cups streusel over dough, leaving 3/4-inch plain border on all sides. Roll up jelly-roll style, enclosing streusel completely. Cut rolled dough crosswise in half, then cut each half crosswise into 7 rounds, each about 1 inch thick. Place rounds cut side down and evenly spaced atop streusel in dish (rounds will not cover streusel completely).
  • Cover dish loosely with plastic wrap. Let dough rise in warm draft-free area until rounds are puffed and almost touching, about 45 minutes.
  • Meanwhile, position rack in center of oven and preheat to 400°F. Bake buns 10 minutes. Reduce oven temperature to 375°F. Continue to bake buns until golden brown, about 20 minutes longer.
  • Immediately place large baking sheet atop dish with buns. Invert buns onto baking sheet. Cool at least 30 minutes. Serve warm or at room temperature.

565 g (3¾ cups or 1 lb 4 oz) plain (all-purpose) flour, plus extra
150 g (⅔ cup or 5⅓ oz) caster (superfine) sugar
1 teaspoon salt
60 ml (¼ cup or 2 fl oz) warm water
10 g (1½ sachets or 3½ teaspoons) active dried yeast
1 teaspoon white (granulated) sugar
2 eggs
1 egg yolk
155 g (5½ oz) unsalted butter
80 ml (⅓ cup or 2¾ fl oz) pure (35%) cream
60 ml (¼ cup or 2 fl oz) milk
Filling:
100 g (3½ oz) unsalted butter, melted and lukewarm
80 g (½ cup or 2¾ oz) sultanas (golden raisins)
Cinnamon sugar:
25 g (2 ½ tablespoons or 1 oz) ground cinnamon
375 g (1⅔ cups or 13¼ oz) caster (superfine) sugar
Streusel topping:
90 g (⅔ cup or 3¼ oz) plain (all-purpose) flour
45 g (1½ oz) unsalted butter, at room temperature, chopped
55 g (¼ cup or 2 oz) caster (superfine) sugar
Also needed:
50 g (1¾ oz) unsalted butter, melted

Steps:

  • To make the dough:
  • Combine the flour, caster sugar and salt in the bowl of a stand mixer and make a well in the centre. In a separate bowl, combine the warm water, yeast and white sugar and allow to stand for 10 minutes or until frothy, to ensure the yeast is active. In a separate bowl, mix together the eggs and the yolk.
  • In a small saucepan, warm the butter, cream and milk together until the butter is just melted; do not allow the mixture to boil. Set aside until it is lukewarm. Pour the yeast mixture into the well then add the eggs and the milk mixture. Using a wooden spoon, stir to combine then gradually incorporate the flour until you have a rough dough. Using the dough hook attachment, knead on low-medium speed for 10 minutes or until you have a smooth dough that starts to come away from the sides of the bowl. Cover the bowl with baking paper and plastic wrap and allow to rise in a warm place for 3 hours or until doubled in volume.
  • To make the cinnamon sugar:
  • Combine the cinnamon and sugar in a bowl and set aside.
  • To make the streusel topping:
  • Rub together the flour, butter and sugar with your fingertips to make a fairly fine crumble. Set aside.
  • To assemble and bake:
  • Line a round 30 cm (12 inch) cake tin or a deep square 25 cm (10 inch) baking dish. When the dough has risen, punch it down by throwing the dough onto a lightly floured benchtop. Do not knead or add more flour, as this will toughen the dough. Divide into 2 equal pieces. Roll out 1 piece to a large rectangle, about 65 x 40 cm (25½ x 16 inches). Brush with half the melted butter, sprinkle with half the cinnamon sugar and scatter over half the sultanas. Roll up lengthways to form a log. Repeat with the remaining dough.
  • Cut each log into 5 cm (2 inch) sections. Place these in a circular fashion into the prepared tin, starting from the outside, cut side up, leaving about 1 cm (½ inch) between each one. Once the pieces are all in place and evenly distributed in the tin, press down gently with your hand so they are all the same height. Brush with the extra melted butter and then sprinkle evenly with the streusel topping. Cover with a light tea towel and allow to rise for a further 2 hours or until almost doubled in volume.
  • Preheat the oven to 170°C (340°F/Gas 3). Bake for 1 hour or until a skewer inserted into the centre comes out clean. Remove from the oven. Serve warm or cover with a light tea towel until cool. If you wish, reheat it later, wrapped in foil.

Williams-Sonoma Essentials of Baking book recipe. This cake came out very delicious and taste great with a cup of coffee. Just a couple of words of wisdom to newbie bakers: Always sift your dry ingredients (this helps make your cake lighter instead of denser). Make sure your eggs and butter are at room temp (otherwise your cake would not be as smooth). Follow instructions/measurements PRECISELY! Grease and flour your pan very well (this will help very much when it comes time to removing the cake from the pan). Have all your ingredients on hand and read the recipe before beginning (take it from me, you don't want to end up skipping a step or missing an ingredient because you rushed thru it). Do not open the oven while it is baking. Invest in buying a pastry blender. Always let the cake cool in the pan the indicated time or your cake will fall apart to pieces if you remove it to soon from the pan. This recipe requires atleast 3 medium-large mixing bowls. The following ingredients include one recipe for streusel and one recipe for the cake batter.

  • FOR BATTER: in dry bowl, stir together the SIFTED flour, baking powder, baking soda and salt. Set aside.
  • In another large bowl, with mixers, beat together butter and sugar on medium low speed for 4-5 minutes or until creamy. Beat eggs in one at a time and stir in vanilla. Add the dry ingredients SLOWLY in 3 batches alternately with the sour cream and mix on low speed just until the batter is blended and almost smooth.
  • Pour HALF the batter into the prepared pan and smooth the surface with a rubber spatula. Sprinke evenly with HALF of the strusel filling. Cover with the remaining batter and sprinkle with the remaining streusel.
  • Bake until a toothpick inserted into the center comes out clean, 40-45 mins.Transfer to wire rack and let cool in pan for 10 minute Carefully loosen the edges with a butter knife and gently shake cake from side to side to loosen the bottom a bit then turn out of the pan and into a plate or cake plate and let cool completly. You can add decorative glaze on cake if you would like while the cake is still warm.

And we ended up making a ton of pancakes as a family.

Steps:

  • Whisk together the flour, sugar, baking powder, baking soda and salt in a medium bowl. Add the buttermilk and egg yolks to the flour mixture. Whisk together until everything is coated with the liquid.
  • Melt the butter in a saute pan over medium heat. Continue to cook, swirling the pan occasionally, until the butter is golden brown. Pour the butter into the batter and whisk everything together just until all ingredients are incorporated. Let the batter sit on the counter for 30 minutes or overnight in the fridge to thicken and let the buttermilk work its magic.
  • Before cooking, in a small bowl, whisk the egg whites until fluffy and stiff. Fold the egg whites into the pancake batter.
  • Heat a large cast-iron skillet over medium-low heat for about 5 minutes. Heavily grease the skillet with oil. Use a measuring cup to ladle about 1/3 cup batter per pancake into the skillet, being careful not to overcrowd the surface of the skillet. Sprinkle with some Cinnamon Streusel. Cook until bubbles form on the top of the pancakes and the bottoms are golden brown, 2 to 4 minutes. Flip and cook until the other sides are lightly browned. Serve hot with clarified butter and syrup.
  • Preheat the oven to 350 degrees F. Line a baking sheet with a silicone baking mat.
  • Using your fingers or a food processor, combine the flour, brown sugar, cinnamon and salt. Mix in the butter until crumbly. Spread the mixture on the prepared baking sheet and bake for 10 minutes. Break the mixture apart and mix the streusel. Let cool.

300g hulled strawberries
juice and zest ½ lemon
300g plain flour
175g golden caster sugar plus 3 tbsp for the topping
1 ½ tsp ground cinnamon
1 vanilla pod , halved lengthways
250g pack butter 200g at room temperature, 50g cold and diced
4 tbsp rolled porridge oats
3 tbsp chopped hazelnuts
2 tbsp strawberry jam

Steps:

  • Heat oven to 180C/160C fan/gas 4 and line a 22cm square tin with baking parchment. Slice the strawberries thinly and mix well with 4 tsp lemon juice, then put them in a sieve over a bowl and set aside to macerate, discarding the liquid that drips into the bowl.
  • Put the flour, 175g caster sugar, 1 tsp cinnamon and 1/2 tsp salt in a food processor. Scrape in the seeds from the vanilla pod, then add the softened butter and pulse until the mixture comes together. Spoon out a quarter of the mixture into a mixing bowl and set aside. Tip the rest of the mixture into the bottom of your tin and press down firmly to make an even base. Prick a few times with a fork, then bake for 25 mins until golden.
  • While the base is cooking, add the cold butter, remaining sugar, the oats, hazelnuts, remaining cinnamon and the lemon zest to the reserved mixture. Use your fingers to rub together until crumbly.
