TROPICAL JACONDE

Butter, for greasing
13 ounces plus 4 ounces egg whites
7 ounces granulated sugar
6 ounces almond flour
3 ounces all-purpose flour
6 ounces confectioners' sugar
1 1/2 ounces heavy cream
Handful desiccated coconut
Fruit puree of your choice
16 ounces heavy cream
16 ounces white chocolate

Steps:

  • For the jaconde: Preheat the oven to 375 degrees F. Line a baking sheet with parchment paper and coat lightly with butter.
  • Combine the 13 ounces egg whites and the granulated sugar and whip into a meringue with stiff peaks, using an electric mixer.
  • Sift the almond flour, all-purpose flour and confectioners' sugar into a bowl. Add the heavy cream and the remaining 4 ounces egg whites to make a paste. Fold one-third of the meringue into the paste; once incorporated, fold in the remaining meringue. Pour into the prepared baking sheet and sprinkle the top with desiccated coconut.
  • Bake for 15 minutes, then flip the cake out of the baking sheet and let cool. Soak the jaconde with fruit puree, making sure the sponge is wet but not soaked.
  • For the ganache: Heat the heavy cream in a saucepan until boiling. Remove from the heat and pour into a bowl with the white chocolate. Let sit for 5 minutes, then stir until smooth. Let sit until cool, about 30 minutes.
  • Whip the ganache with an electric mixer until thick and creamy.
  • Spread the ganache on the cake, and slice. The cake can also be chilled.

3 cups buttermilk
1/4 cup kosher salt
1 tablespoon ground black pepper
4 jalapenos, roughly chopped
4 cups all-purpose flour

1 tablespoon ground cumin
1 tablespoon garlic powder
2 pounds unsalted butter, chopped into pieces
1 quart honey
2 1/2 tablespoons cayenne pepper
6 cups all-purpose flour
1 pound unsalted butter, plus more for greasing
1 cup grated Cheddar
3 tablespoons baking powder
2 1/2 tablespoons granulated sugar
1 1/4 tablespoons kosher salt
1 1/4 tablespoons brown sugar
1 cup buttermilk
1 cup milk
1/4 cup heavy cream
Frying oil, for frying
5 green onions, finely chopped

Steps:

  • For the disco chicken marinade: Put on your best disco clothes and shoes. Lay chicken breasts flat on a cutting board. Carefully slice each breast in half, horizontally. Take cut chicken and place flat in a resealable plastic bag, then close bag. Now it's time for Poundtown. Put bag back on cutting board and use a meat hammer, large pot or rolling pin and pound out chicken without breaking bag to 1/4- to 1/2-inch-thick. Remove chicken from bag and place in a large deep container. Repeat with remaining chicken breasts.
  • Add buttermilk, salt, pepper and jalapenos to a food processor or blender. Process until jalapenos are pulverized, 2 to 3 minutes. Pour buttermilk mixture from processor into the container on top of chicken and return to refrigerator. Let chicken marinate in mixture for at least 8 hours.
  • For the disco flour: Mix flour, salt, pepper, paprika, cumin and garlic powder in a bowl until combined. Take a break and put on some disco music. Set disco flour aside until ready to dredge disco chicken.
  • For the spicy honey butter: Add butter, honey and cayenne pepper to a large pot. Bring mixture to a simmer and whisk vigorously. Cook until all butter is melted, then remove pot from stovetop and let mixture cool completely. Pour cooled spicy honey butter into a squirt bottle. Again, take a break and ponder if disco was the best music of the 70's. Maybe so, maybe not. Do not refrigerate spicy honey butter; store at room temp!
  • For the Cheddar biscuits: Preheat oven to 350 degrees F.
  • Combine flour, butter, cheese, baking powder, granulated sugar, salt and brown sugar in a mixer fitted with a paddle attachment. Turn on mixer and mix until slightly grainy, not doughy, then turn off mixer. Add buttermilk, milk and cream and mix until doughy and well-mixed, then turn off mixer and remove dough from mixer bowl.
  • Grease a muffin tin and form 5-ounce dough balls with your hands. Add dough balls to muffin tin and press down in muffin slots. Bake until tops are golden brown, 40 to 45 minutes. Now dim the lights and turn on the disco ball.
  • For the assembly: If pan-frying, add oil to a pan and heat up to 350 degrees F. If using a deep-fryer, add oil and set fryer temperature to 350 degrees F.
  • Remove chicken breasts one at a time from disco marinade and dredge in disco flour, pressing down on chicken to ensure a good coating on both sides. Remove chicken from disco flour and place into hot oil. Fry until chicken is golden brown and a meat thermometer inserted in the center registers an internal temperature of 165 degrees F, 5 to 7 minutes. Grab a regular thermometer and place it under your tongue-it should read above 98.6 because you're on fire!
  • Grab a plate and make a design on it with the spicy honey butter. Cut a biscuit in half and put on plate. Add a little more spicy honey butter on biscuit halves. Place disco chicken on top of biscuits and cover chicken in spicy honey butter. Grab finely chopped green onions and sprinkle on top of disco chicken. Give yourself a high five! If you're not dancing, then start! With a knife (optional) and fork, cut into disco biscuit and savor the flavor(town). You have just made and now eaten a Guyutes Disco Biscuit. You are special, and don't let anyone tell you differently. (Make 7 more sandwiches in same manner.)

3 cups all-purpose flour, plus more for dusting
2 tablespoons baking powder
2 tablespoons za'atar
1 tablespoon sugar
1 1/2 teaspoons salt
6 tablespoons cold butter, cut into cubes
1 1/2 cups cold milk
2 tablespoons vegetable oil

Steps:

  • Preheat the oven to 400 degrees F.
  • Combine the flour, baking powder, 1 tablespoon of the za'atar, the sugar and salt in a medium bowl using a whisk. Using a bowl scraper or your fingers, mix in the butter until the mixture resembles coarse meal; using your fingers will create a more cake-like texture. Make a well in the center and pour in the milk. Stir until just combined.
  • Turn the dough out onto a floured surface and knead 5 or 6 times. Roll the dough into a 1-inch-thick disc and cut out biscuits using a 3-inch biscuit cutter. Make sure you don't twist the cutter otherwise you'll squish the sides and the biscuit won't rise. Knead the scraps together, re-roll and cut out biscuits until all the dough has been used.
  • Place the biscuits bottom-side up on a baking sheet lined with parchment paper. Whisk together the vegetable oil with the remaining 1 tablespoon za'atar and brush the mixture on each biscuit. Bake until golden brown, 18 to 20 minutes.

CHIPOTLE BRISKET SANDWICH ON A CHEDDAR BISCUIT

4 yellow onions, 2 sliced and 2 finely diced
One 4-pound beef brisket (point-cut or flat-cut)
Kosher salt and freshly ground black pepper
12 cloves garlic, peeled
6 cups ale
2 tablespoons vegetable oil
4 large jalepenos, minced
3 to 4 chipotle peppers in adobo sauce, pureed
2 tablespoons granulated garlic
1 tablespoon smoked paprika
3 cups all-purpose flour, plus more for dusting
1 tablespoon baking powder
1 teaspoon baking soda
1 teaspoon kosher salt
1 cup (2 sticks) cold unsalted butter, cut into small cubes, plus more melted butter, for brushing
1 1/2 cups shredded Cheddar
1 1/2 to 2 cups buttermilk
1 cup homemade or store-bought guacamole
1/2 cup mayonnaise
3 to 4 chipotle peppers in adobo sauce, pureed
1/4 cup lemon juice
Kosher salt
2 tablespoons unsalted butter
2 yellow onions, sliced
6 to 8 slices white or yellow Cheddar

Steps:

  • For the brisket: Preheat the oven to 275 degrees F.
  • Lay the sliced onions in the bottom of a roasting pan. Place the brisket on top of the onions and season with salt and pepper. Top with the garlic cloves and ale. Cover tightly with foil and roast until tender, 5 to 6 hours. Loosen the cover and let cool to room temperature.
  • Heat the vegetable oil in a large saute pan over medium heat. Add the jalapeno and diced onion and cook until tender, 8 to 10 minutes. Add the pureed chipotle peppers and cook until warmed through, about 2 minutes. Remove from the heat and let cool to room temperature.
  • Remove any excess fat from the cooled brisket with a spatula. Slice the brisket across the grain into 1 1/2-inch-thick pieces and gently pull the meat apart by hand. Place the meat in a large bowl and season with the granulated garlic, paprika, 1 teaspoon pepper and 2 teaspoons salt. Add the cooked onion and jalapeno mixture and toss gently to combine.
  • For the biscuits: Increase the oven temperature to 375 degrees F and line a baking sheet with parchment paper.
  • Combine the flour, baking powder, baking soda and salt in a large bowl. Cut in the 2 sticks of cold butter until the mixture is crumbly, being careful not to overmix. Add the Cheddar. Add the buttermilk a little at a time, just until the mixture is combined and moist. Turn the mixture out onto a lightly floured surface. Gently roll or press the dough into a 1-inch-thick rectangle. Cut the dough into 4-by-4-inch squares or use a large biscuit cutter, place on the baking sheet and brush with the melted butter. Bake until golden brown, about 45 minutes. Brush with additional melted butter while the biscuits are still warm. Set aside.
  • For the chipotle sauce: Combine the guacamole, mayonnaise, chipotle peppers and lemon juice in a medium bowl and mix well. Season with salt, cover and refrigerate.
  • To serve: Heat the butter in a large saute pan over medium heat. Add the onions and cook, stirring occasionally, until deep golden brown, about 20 minutes.
  • Preheat the oven to 350 degrees F.
  • Loosely wrap the biscuits in foil and place in the oven until warm. For each sandwich, place 6 to 8 ounces of the brisket mixture in a small saute pan. Heat until very warm, stirring so the brisket does not brown. Turn off the heat and top with 1 slice of Cheddar and some caramelized onions. Cover the pan until the cheese melts. Cut the warm biscuit in half lengthwise and fill with the brisket mixture. Top with the desired amount of chipotle sauce and serve.

1/4 cup sour cream
6 small breakfast (pork or chicken) sausages (about 8 ounces)
Honey mustard

Steps:

  • Preheat oven to 425 degrees F.
  • Whisk the flour, baking powder, baking soda, salt, and sugar together in bowl. Rub in 2 tablespoons of butter until absorbed, and then rub in the remaining butter until mixture resembles coarse sand. Whisk the milk and sour cream into a liquid measuring cup; stir the sour cream and milk into the dry ingredients.
  • Turn the dough out of the bowl and knead very lightly and flatten into a square. Using a rolling pin, roll the dough into a 9 by 12-inch rectangle. Trim dough's rough edges with a pizza cutter or a knife, and then cut it in half lengthwise to make 2 rectangles. Lay 3 sausage links end to end, lengthwise, down the center of each piece of dough. Fold the dough over the sausages into long rolls with overlapping dough on the bottom. Slice each roll crosswise into 8 (1 1/2-inch) pieces.
  • Transfer rolls to a baking sheet. Bake until golden, about 20 minutes. Serve warm with honey mustard.

4 ounces almond paste
1/2 teaspoon almond extract
1/2 cup confectioners' sugar
1 large egg white
Tortoni cream, recipe follows
1/4 cup almonds, sliced
2 cups heavy cream
1 1/4 cups macaroon crumbs
1/4 cup confectioners' sugar
2 tablespoons dark rum
1 teaspoon vanilla extract
8 candied cherries

Steps:

  • Set a rack in the middle of the oven and preheat the oven to 350 degrees. In a mixing bowl, with an electric mixer, slowly beat the almond paste, almond extract, and confectioners' sugar until completely blended. Add the egg white and beat until smooth. Let the batter rest in the refrigerator for 15 minutes. Spoon the batter into a pastry bag fitted with a 1/2-inch tip. Pipe out 1-inch mounds of the batter onto a parchment-lined or nonstick cookie sheet. Bake for 15 to 20 minutes, until puffed and tan. Set on a rack to cool. When completely cool and crisp, chop the macaroons in a food processor. You should have approximately 1 1/4 cups of crumbs.
  • Tortoni Cream: Spread out almonds on a cookie sheet and place in a preheated 325 degree oven for 3 minutes. Turn tray around, toss nuts with a metal spatula and toast for another 3 minutes. In a large bowl, mix together 1 cup of cream, the macaroon crumbs and confectioners' sugar. Chill for 30 minutes. Mix in the rum and vanilla and chill for another 30 minutes. Whip the remaining 1 cup of cream to soft peaks and fold into the macaroon mixture.
  • Divide the mixture among eight 4-ounce paper cups. Top with the almonds and cherries, if desired. Freeze for 4 hours or until firm.

CINNAMON COOKIES

Leave out a few of these cinnamon-spiced cookies for Father Christmas on Christmas Eve. Perfect for the festive biscuit tin, you could add some raisins too

120g softened salted butter
50g light brown muscovado sugar
150g golden caster sugar
3 tsp ground cinnamon
1 egg, lightly beaten
220g plain flour
50g raisins (optional)
1 tbsp icing sugar

Steps:

  • Beat the butter, muscovado sugar, caster sugar and 2 tsp cinnamon together with an electric whisk for 2-3 mins until well-combined. Add the egg, flour, baking powder and raisins, if using, and continue to beat until the mixture becomes a uniform dough. Roll tablespoons of the dough into balls between the palms your hands (you should have 12-15). Chill in the fridge for at least 2 hrs until firm, or overnight. The unbaked dough balls will keep in an airtight container in the freezer for up to three months (see tip, below).
  • Heat the oven to 180C/160C fan/ gas 4 and line two large baking trays with baking parchment. Place the dough balls 3-4cm apart on the prepared baking trays to allow the mixture to spread without touching. Bake for 10-12 mins until lightly golden at the edges but still soft and gooey in the centre. Leave to cool completely on the baking trays.
  • Mix the icing sugar with the remaining cinnamon, then dust over the cookies. Will keep in an airtight container for up to five days.

These cinnamon flavoured Christmas biscuits are great for getting the kids involved in cooking, and they will look great on the tree too

175g dark muscovado sugar
85g golden syrup
100g butter
3 tsp ground ginger
1 tsp ground cinnamon
350g plain flour, plus extra for dusting
1 tsp bicarbonate of soda
1 egg, lightly beaten
100g white chocolate
edible silver balls

Steps:

  • Heat the sugar, golden syrup and butter until melted. Mix the spices and flour in a large bowl. Dissolve the bicarbonate of soda in 1 tsp cold water. Make a well in the centre of the dry ingredients, add the melted sugar mix, egg and bicarbonate of soda. Mix well. At this stage the mix will be soft but will firm up on cooling.
  • Cover the surface of the biscuit mix with wrapping and leave to cool, then put in the fridge for at least 1 hr to become firm enough to roll out.
  • Heat oven to 190C/170C fan/gas 5. Turn the dough out onto a lightly floured surface and knead briefly. (At this stage the dough can be put into a food bag and kept in the fridge for up to a week.) Cut the dough in half. Thinly roll out one half on a lightly floured surface. Cut into shapes with cutters, such as gifts, trees and hearts, then transfer to baking sheets, leaving a little room for them to spread. If you plan to hang the biscuits up, make a small hole in the top of each one using a skewer. Repeat with remaining dough.
  • Bake for 12-15 mins until they darken slightly. If the holes you have made have closed up, remake them while the biscuits are warm and soft using a skewer. Cool for a few mins on the baking sheets, then transfer to a wire rack to cool and harden up completely.
  • Break up the chocolate and melt in the microwave on Medium for 1-2 mins, or in a small heatproof bowl over simmering water. Drizzle the chocolate over the biscuits, or pipe on shapes or names, then stick a few silver balls into the chocolate. If hung up on the tree, the biscuits will be edible for about a week, but will last a lot longer as decorations.
