I won first prize in a recipe contest with these yummy swirl cookies. The taste of raspberry and walnuts really comes through and they're so much fun to make!

- In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Beat in egg and vanilla. In another bowl, whisk flour and baking powder; gradually beat into creamed mixture., Roll out dough between 2 sheets of waxed paper into a 12-in. square. Remove waxed paper. Spread dough with jam; sprinkle with nuts. Roll up tightly, jelly-roll style; cover. Refrigerate until firm, about 2 hours., Preheat oven to 375°. Uncover dough and cut dough crosswise into 1/4-in. slices. Place 2 in. apart on ungreased baking sheets. Bake until edges are light brown, 9-12 minutes. Remove from pans to wire racks to cool.

PUFF PASTRY CINNAMON WALNUT SWIRLS
No need to go to the bakery when you can make these scrumptious puff pastry swirls, dripping with cinnamon sugar, right in your own kitchen...they're easy and delicious!

- Heat the oven to 400°F. Beat the egg and 3 teaspoons water in a small bowl with a fork. Stir the granulated sugar, brown sugar, walnuts, flour and cinnamon in a small bowl.
- Sprinkle additional flour on the work surface. Unfold the pastry sheet on the work surface. Roll the pastry sheet into a 12 x 10-inch rectangle. Brush the pastry sheet with the egg mixture. Sprinkle the granulated sugar mixture on the pastry. Starting at a long side, roll one side of the pastry to the center. Roll the opposite side to the center and press the rolls together. Cut the pastry into 24 (1/2-inch) slices. Place the slices, cut-side down, onto 2 baking sheets. Brush the slices with the egg mixture.
- Bake for 15 minutes or until the pastries are golden brown. Let the pastries cool on the baking sheets on wire racks for 10 minutes.
- Place the confectioners' sugar into a medium bowl. Stir in the remaining water, 1 teaspoon at a time, until the mixture is desired consistency. Drizzle over the pastries.
- For Cranberry Orange Dessert Swirls, stir 1/3 cup chopped cranberries and the grated zest from 1 orange into the granulated sugar mixture.
- For Mocha Dessert Swirls, stir 1 tablespoon unsweetened cocoa powder into the granulated sugar mixture. Sprinkle 2 tablespoons mini semi-sweet chocolate chips onto the granulated sugar mixture before rolling up the pastry. Substitute 5 teaspoons espresso for the water stirred into the confectioners' sugar.

- Heat oven to 400°F. Line cookie sheet with parchment paper. In medium bowl, stir Bisquick mix and 1/2 cup milk until soft dough forms. Place dough on surface generously sprinkled with Bisquick mix; roll in Bisquick mix to coat. Knead 5 times.
- Press or roll dough into 11x8-inch rectangle. Spread dough with 1 tablespoon softened butter. In small bowl, mix granulated sugar, cinnamon, walnuts and currants; sprinkle over top of dough; press in slightly. Starting with an 11-inch side, roll up dough tightly; seal edge. CINNAMON PINWHEELS

- Measure flour into a large bowl. Add the salt and shortening. Using two dull butter knives or a pastry blender, blend the flour, salt and shortening until the shortening is the size of peas. Fill a wide-mouthed glass with ice. Add water to the top. Measure or pour the ice cold water into the flour mixture. Using a spatula or your hands, mix the water into the flour to form a large ball of dough. You may need to add an extra tablespoon of water if you have excess flour. If you added too much water, add additional flour until the dough is well formed but not too sticky. Handle and mix the dough as little as possible. Separate dough into two equal pieces and wrap the pieces separately in wax paper and put them in the freezer for 10 minutes or the refrigerator for 20 minutes. Preheat oven to 350°F. Line two baking sheets with parchment paper. Melt butter and reserve. In a small bowl or measuring cup, whisk together sugar and cinnamon to combine. Set aside. On a well floured surface, roll out one piece of chilled dough into a rectangular shape about 12' by 8'. Using a pastry brush, brush melted butter evenly over the pastry. Sprinkle half of the reserved cinnamon-sugar over the melted butter and spread out evenly with a spatula. Roll up the dough along the short side so that you have a 12' long jellyroll. Using a pastry knife, cut roll into 1/2' pieces. Place pieces onto a prepared baking sheet. Repeat with second piece of dough, using remaining butter and cinnamon-sugar. Bake at 350°F until rolls have turns golden brown, about 40 min. If using two oven racks, switch position of the baking sheets after 20 min. Remove from oven and let cool for 15 min. - Position the racks in the top and lower thirds of the oven and preheat to 350 degrees F. Line 2 baking sheets with parchment. Whisk together the flour, baking soda, cinnamon, salt and allspice in a large bowl.
- Beat the butter, brown sugar and granulated sugar with an electric mixer on medium-high speed in a large bowl until light and fluffy, scraping down the sides of the bowl occasionally. Beat in the eggs 1 at time until blended, then beat in the vanilla.

- Preheat oven to 425 degrees F (220 degrees C). Grease 12 muffin cups or line with paper muffin liners.
- In a large bowl, combine flour, baking powder and salt. Cut in shortening until mixture resembles coarse cornmeal. Add milk all at once to dry ingredients and stir with a fork until a soft dough is formed. Turn dough out onto lightly floured surface and knead gently 8 to 10 times. Roll out to a 12 inch square.
- Gently spread butter over dough. Combine brown sugar, cinnamon and raisins. Sprinkle evenly on top of dough. Roll up dough lightly like a jelly-roll. Seal edge. Cut into twelve 1 inch thick pieces. Place in prepared muffin tins.
- Bake in preheated oven for 14 to 18 minutes, until golden. Remove from heat immediately. Serve warm.

- In small bowl, combine cream cheese, feta, walnuts and green onion.
- Stir in craisins.
- Evenly spread 1/3 of mixture onto each tortilla.
- Roll up tightly and evenly, do not tear, though.
- Make sure some of the spread is right to the end edge to seal.
- Wrap each tightly in plastic wrap, refrigerate.
- To serve, slice ends off, then slice into about 24 slices. More if sliced thinner. (About 8 slices per tortilla is what I got.).
- Place on plate and sprinkle with more sliced green onion for garnish if desired.

Divide dough into 3 portions; shape each into a disk. Cover and refrigerate 1 hour or until firm enough to roll., For filling, place dates, water and sugar in a large saucepan. Bring to a boil. Reduce heat; simmer, uncovered, until dates are tender and liquid is almost evaporated. Stir in walnuts; cool completely., Roll each dough portion between 2 sheets of waxed paper into a 12x10-in. rectangle. Refrigerate 30 minutes. Remove waxed paper. Spread a third of the filling over each rectangle. Roll up tightly jelly-roll style, starting with a long side. Wrap securely. Refrigerate until firm., Preheat oven to 350°. WALNUT-RAISIN COOKIES
Steps:
- Place raisins in medium bowl. Pour enough boiling water over to cover; let stand 1 minute. Drain raisins well. Sift flour and baking powder into another medium bowl. Beat sugar and butter in large bowl until creamy. Beat in vanilla. Beat in 1 egg, then 1/3 of dry ingredients. Repeat with remaining eggs and dry ingredients in 2 batches. Stir in raisins (dough will be very soft). Chill dough 1 hour to firm slightly.
- Preheat oven to 375°F. Line 3 heavy large baking sheets with foil. Butter foil. Coarsely grind walnuts in processor. Mound ground walnuts on work surface. Working in batches, drop dough by scant tablespoonfuls onto walnuts (dough will be sticky). Using hands, roll dough in ground walnuts, coating completely and forming balls. Transfer to prepared baking sheets, spacing 2 inches apart.
- Bake until cookies spread and are golden brown, about 14 minutes. Transfer to racks; cool completely. (Can be made 2 days ahead. Store in airtight container.)
WALNUT RAISIN PINWHEELS
This is a dessert sandwich or maybe a breakfast sammie? I made this for my sandwich challenge.

- 1. pre-heat oil for frying to medium heat prepare a cinnamon sugar mix in a bowl and a powdered sugar bowl to top immediately out of the oil, if they cool it will not adhere.
- 2. remove dough from can unroll just as it is don't stretch it into a pizza size.
- 3. put cinnamon sugar mix, raisins and walnuts all over dough.
- 4. roll like a jelly roll and slice into 3/4" rolls put a toothpick all the way through to keep it from unraveling.
- 5. carefully place in oil until golden brown, it does not take very long don't burn them, if they cook too hot or too fast adjust oil or the middle will not get cooked. Once removed from oil you must dust immediately or it will not adhere properly. Serve Warm

- Thaw dough according to package directions.
- Preheat oven to 350 degrees.
