GRANDMA'S WONDERFUL PICNIC CAKE
Grandma was about the best baker I've ever known. This is the cake she brought to every picnic or family reunion. It can't be beat.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking pan.
- Whisk flour, white sugar, cinnamon, baking powder, baking soda, salt, and ground cloves together in a bowl. Beat eggs and vegetable oil in a separate large bowl until creamy; mix applesauce into egg mixture. Add dry ingredients to wet ingredients; stir until batter is smooth. Fold 1/2 cup walnuts and raisins into batter. Pour into prepared baking pan.
- Mix brown sugar, 1 cup walnuts, and chocolate chips together in a bowl; spread over the cake.
- Bake in the preheated oven until a knife inserted into the center of the cake comes out clean, 30 to 35 minutes.

CINNAMON PICNIC CAKE

Steps:
- Preheat oven to 180°C (350°F).
- Mix 1/4 cup sugar with the nuts and cinnamon and set aside.
- Cream the butter with the remaining sugar until light and fluffy.
- Add the eggs, vanilla and lemon juice. Beat well.
- Sift the flour, baking powder, baking soda and salt in a bowl.
- Add 1/4 of the flour mix and 1/4 of the sour cream to the butter mix, beating lightly. Continue adding in 1/4's until all ingredients are combined.
- Grease a 23cm square cake tin and line with paper. Pour batter into pan, sprinkle with the reserved cinnamon mixture.
- Bake for 35-40 minutes or until a skewer inserted in the centre comes out clean.
- Let sit in pan for 10-15 minutes before turning out onto a cooling rack.

- Combine the first 3 ingredients; let rest until cool.
- Cream margarine and sugar, adding eggs one at a time, beating well after each addition.
- Sift together flour, baking powder and salt. Add to egg mixture. Fold in cooled dates.
- Pour in a 9" x 13" baking pan. Mix TOPPING ingredients and sprinkle over batter.
- Bake at 350 F for 35-40 minutes.
NO-FUSS CINNAMON CHEESECAKE
When my friend Dee gave me this recipe I was very skeptical. Who ever heard of cheesecake made with crescent dough? I made it one day when I had 3 back-up desserts and it was one of the first to go. So easy to make and a popular demand by my family, I make it all the time. Hey!! Even my no-impress mother-in-law asked for the recipe!!! Enjoy!

- Preheat the oven to 350 degrees F (175 degrees C).
- Flatten one tube of crescent roll dough, and press into the bottom of a 9x13 inch pan. In a medium bowl, mix together the cream cheese with 1 cup sugar and vanilla until smooth. Spread the cream cheese mixture over the dough in the pan. Unroll the remaining crescent roll dough, and place over the top of the cream cheese layer. Spread melted butter over the top, and sprinkle the top with a mixture of 1/2 cup sugar and cinnamon.
- Bake for 30 minutes in the preheated oven, or until top is lightly toasted. Cool, and refrigerate before serving.

FAY'S PICNIC CAKE
This is very easy and simply delicious. Similar to some dump cakes but different ingrediants. I like it best served with either cool whip, whipped cream or vanilla ice cream on top. Fay was my mother and she was given the recipe by some unknown person many years ago.

- In a 9 x 13 ungreased baking pan place the peaches and juice.
- Sprinkle the dry cake mix over the peaches.
- Sprinkle the coconut on top of the dry cake mix.
- Sprinkle the nuts on the top of the coconut.
- Drizzle the melted margarine evenly over the cake.
- Bake 350 degrees for 45-50 minutes until it is nicely browned.

- Beat together butter and firmly packed brown sugar till light and fluffy. Blend in eggs and vanilla and mix well.Sift together flour, salt and soda.
