CHICKEN KAPAMA: GREEK-BRAISED CINNAMON CHICKEN image

Chicken Kapama is a Greek classic! It's basically a braised cinnamon chicken in a nice sauce that you can serve over pasta or rice for a great weeknight meal.

Number Of Ingredients 15

1 chicken, 3-4 pounds
1 teaspoon ground cinnamon
Salt and pepper to taste
1/3 cup olive oil
1 large onion, finely chopped
3 garlic cloves, grated
2 cinnamon sticks
28 ounces canned tomatoes, unflavored and pureed
2 tablespoons tomato paste
½ to 1 teaspoon granulated sugar
1 teaspoon dried oregano
Pinch of crushed red pepper flakes, optional
2-4 tablespoons chopped fresh parsley
1-pound pasta, cooked al dente
½ cup grated Parmesan or Kefalotyri cheese, for serving

Steps:

  • Cut the chicken into about 10 pieces. Wash and pat dry. Season both sides with cinnamon, salt and black pepper.
  • Heat the olive oil over medium-high heat in a pot and brown the chicken (in 2-3 batches) about 4 minutes on each side. Set the chicken aside.
  • Reduce the temperature to low and add the chopped onions to the pot. Cook for about 10 minutes or until very soft. Add the grated garlic and stir just until heated through.
  • Add the chicken with all of its juices back into the pot along with the pureed tomatoes, tomato paste, cinnamon sticks, salt, pepper, oregano, and sugar. Mix to combine.
  • Bring to a boil and immediately reduce to a simmer. Cover the pot with the lid and simmer for one hour.
  • Remove the lid and increase the heat to medium. Cook uncovered for an additional 30 minutes so that the sauce thickens. Taste the sauce and add more salt (and sugar if acidic) if needed.
  • Garnish with chopped parsley and serve over pasta and grated cheese.

Every time I hear the words "Cinnamon Chicken" I am reminded of the tv series Little House on the Prairie and the famous episode where Nellie asks Laura to help her cook Almanzo's favorite meal. Laura is jealous of Nellie and replaces the cinnamon with tons of black pepper. Anyway, here is a recipe I clipped from a magazine a long time ago that brings the image of what that dish might have tasted like(if Laura had not tampered with it lol). This was adapted from a magazine clipping.

1 1/2 cups apple juice (or half juice and half sherry wine)
1/4 cup honey
1/4 cup lemon juice, freshly squeezed
1 tablespoon garlic, minced
1 teaspoon cinnamon
1 teaspoon kosher salt
1 teaspoon fresh ground black pepper
3 lbs chicken pieces (8 pieces total)
2 tablespoons canola oil, approximately
1 lemon, for garnish, cut into wedges

Steps:

  • Combine juice, honey, lemon juice, garlic, seasonings in a large ziptop container.
  • Add chicken pieces, seal bag, shake to coat well and let marinade in the refrigerator for 8 hours or overnight.
  • Heat oven to 350°F and have ready a large roasting pan, 9" x 13".
  • Remove chicken from the marinade, shake off the excess and set chicken aside on a plate.
  • Pour marinade into a small saucepan and bring to a boil, reduce heat to medium and boil until it has reduced to 1 cup and has begun to thicken (about 10-15 minutes).
  • Heat oil in a skillet and brown chicken parts over fairly high heat just a few minutes per side, lowering heat if needed to prevent from charring- you want the chicken to be evenly browned, but not fully cooked yet.
  • Place chicken in the roasting pan and pour the reduced marinade on top.
  • Bake 30-55 minutes, or until chicken is fully cooked and no no longer pink (will vary based on the chicken pieces you use).
  • Skim fat from the pan juices and serve juices as a dipping sauce if you like.
  • Garnish with lemon wedges.

While watching FoodTV, I saw a piece about Amy Ruth's restaurant in New York where the owner made fried chicken dipped in a honey cinnamon mixture. It looked so good I began searching on the web for a recipe which approximated it... and after much browsing of webpages I put together a recipe that I thought might taste something like it. I don't fry my chicken, so here's a baked version, tweaked to my own tastes.

3 lbs chicken, jointed in 8 pieces (make sure to use good quality chicken!)
1/2 cup flour
2 teaspoons salt
3/4 teaspoon good quality cinnamon
1/4 teaspoon turmeric
1/4 teaspoon black pepper
1 pinch freshly ground nutmeg
1 egg
2 tablespoons milk
1/3 cup dried crushed breadcrumbs
cooking spray
2 tablespoons oil (optional)
1/4 cup butter
1/2 cup honey
2 pinches finely ground cinnamon
1 tablespoon fresh lemon juice

Steps:

  • Preheat oven to 350 degrees F.
  • Spray a large roasting pan lightly with cooking spray.
  • Combine the flour with the salt, cinnamon, turmeric, black pepper, and a pinch nutmeg.
  • Coat the chicken pieces well with the flour mixture (you can use chicken with or without skin on - it's up to you).
  • Beat together the egg and milk; dredge the flour-coated chicken pieces in the egg mixture, then into the breadcrumbs.
  • Arrange pieces skin side up (if using pieces with skin) in the sprayed roasting pan, making sure that the pieces are not touching each other (if possible) to ensure they bake crispy; spray chicken pieces with oil spray or sprinkle with 2 tablespoons oil and place the chicken in the oven to bake.
  • While the chicken is baking, in a saucepan over medium low heat combine the butter, honey, pinches of cinnamon, and lemon juice.
  • After the chicken has baked for 25 minutes, pour the butter and honey mixture generously over the pieces.
  • Bake for an additional 15 minutes or until the juices run clear and the chicken is crisp and brown.
  • Note: if you'd like to add a bit of kick to the recipe, you can try a pinch or two of cayenne (to taste) in the honey sauce, or perhaps some red pepper flakes!

1 teaspoon cinnamon
1/2 cup honey
1/4 cup lemon juice

1 frying chicken, 2 1/2 to 3 pounds, cut into pieces
2 tablespoons vegetable oil

Steps:

  • In a medium size bowl, mix the dry sherry, cinnamon, honey, lemon juice, garlic, salt and pepper. Add the chicken and toss to a evenly coat. Cover and marinate in the refrigerator 8 hours, or overnight.
  • To cook, preheat the oven to 350 degrees.
  • Remove the chicken, shaking off excess marinade. Pour the marinade into a small saucepan and bring to a boil. Boil until it begins to thicken and about 1 cup remains, 5 to 10 minutes.
  • Heat the oil in an ovenproof skillet over medium high heat. Sear the chicken until golden on both sides. Pour the reduced marinade over the chicken and place in the oven.
  • Bake about 20 minutes and serve.

1 cup honey
1/3 cup lime juice
2 large cloves garlic, crushed

3 3- to 3 1/2-pound chickens, cut in serving pieces

Steps:

  • Mix together sherry, cinnamon, honey, lime juice, garlic, salt and pepper.
  • Arrange chicken pieces in single layer in shallow oven-proof pans; pour over marinade, turn pieces to coat well. Refrigerate overnight, longer if desired; turn pieces occasionally.
  • Drain marinade and reserve. Bake at 350 degrees for 40 to 50 minutes, depending on the size of the pieces, basting with marinade and turning once or twice.
  • In warmer months chicken can be grilled on outdoor barbecue.

1 lb boneless skinless chicken breast (apprx 4 halves)

1 lemon, quartered

Steps:

  • In a shallow, non mettalic dish large enough to hold the chicken breasts in single layer combine the lemon juice, garlic, oregano, cinnamon, tomato paste& jalapeno.
  • Season with salt& pepper, stir to mix.
  • Place the chicken in the marinade, turn to coat evenly, cover with plastic wrap and place in fridge.

I recently discovered this on Epicurious and I'm in love! I think I could have this every night for a week. It's easy and fast enough to do when you get home from work too. I have been having it with some peas to add some green to the plate and iced mint tea. I am posting the original recipe but here are the comments of another user. I have been useing these recomendations: "Natalie from San Francisco, CA on 05/23/06 I love this recipe. One change I make is to use chicken thighs only, cook (boil in stock or saute) until they are about 95% done and then shred them when cool. I add the chicken at the last minute with the other ingredients so it finishes cooking in a couple of minutes. I find the dish is quicker, uses less oil and the spices get more evenly distributed. I usually use a sweeter dried fruit, like prunes or raisins, and a tart fruit, like apricots or cranberries. I've also made this dish with the larger size couscous (could be harder to find) as well as the traditional couscous and I find that the texture of the larger couscous is a nice addition."
