With warm cinnamon and rich brown sugar, these tender, flaky scones are simply sublime.

2 cups all-purpose flour
1 tablespoon baking powder
3/4 teaspoon kosher salt
1/2 cup brown sugar
2 teaspoons cinnamon
6 tablespoons unsalted butter (cut into 1/2 inch squares) (salted butter is fine, I just suggest you reduce the salt to 1/2 teaspoon)
3/4 cup heavy whipping cream
1 egg
2 teaspoons pure vanilla extract

Steps:

  • Whisk together the flour, baking powder, salt, brown sugar, and cinnamon. You may have a few brown sugar lumps; that's fine. Work in the butter with a pastry blender until the mixture resembles coarse crumbs.
  • In a separate bowl, whisk together the egg, heavy cream, and vanilla.
  • Make a well in the dry ingredients and pour the wet ingredients in. With a wooden spoon, stir just until a dough forms.
  • Turn dough onto a floured surface and form into a disc about 1-inch tall. Cut into 8 wedges.
  • Bake on an ungreased cookie sheet (a cookie sheet lined with a silpat is great, too) at 350 degrees for about 12 - 14 minutes until the scones begin to brown on the bottom.
  • Remove from oven and let cool for about 5 minutes before serving.

¼ cup loosely packed brown sugar

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Slice acorn squash into halves, removing insides and seeds. Spread butter on the inside and sprinkle brown sugar over the butter. Transfer to a baking sheet.
  • Roast in the preheated oven until tender, about 30 minutes. Remove, slice into thirds, and serve.

1/4 cup shopped pecans
1/4 cup brown sugar
1/4 teaspoon cinnamon
2 tablespoons butter

Steps:

  • Cut squash and remove seeds and stringy stuff.
  • place cut side down on microwave safe plate.
  • Microwave on high for 15-17 minutes.
  • Combine pecans, brown sugar and cinnamon.
  • Turn squash over and gently mash the guts leaving the shells intact.
  • Dot each half with real butter and sprinkle with sugar mixture.
  • Microwave on high 2 minutes more or until brown sugar is melted.

1/2 cup brown sugar
1/4 teaspoon ground cinnamon

Steps:

  • Place squash in 11x7-inch baking dish.
  • Dot 1 tbsp.
  • butter in each squash half.
  • Evenly sprinkle brown sugar and cinnamon in squash halves.
  • Add enough water to baking dish to just cover the bottom of the pan; cover with aluminum foil.

2 medium acorn squash, (about 1 1/2 pounds each)
2 tablespoons light-brown sugar
Coarse salt and ground pepper

Steps:

  • Preheat oven to 425 degrees. Generously butter a rimmed baking sheet.
  • Halve squash crosswise. Scoop out seeds; discard. Slice a small piece off bottom of each squash half just enough to level.
  • Set squash halves, scooped sides down, on prepared sheet. Bake until golden, 20 to 25 minutes. Turn squash; prick insides all over with a fork. Divide 2 tablespoons butter and sugar among halves; season with salt and pepper. Continue to bake until flesh is easily pierced with the tip of a paring knife, 25 to 30 minutes. Serve warm.

3 simple ingredients make a great dinner party or holiday dessert. My grandmother made this special treat during the holidays. Incredibly easy! Even the children will be asking for more! The acorn squash can be interchanged with pumpkin, butternut, buttercup, (almost any winter squash) and mangos. Do not handle the squash too much when serving as the meaty part will be soft and can easily me mashed by a heavy handed spoon. The squash is cooked with the skin on. Without it, the squash will be mushy.

1 acorn squash
3 sticks whole cinnamon sticks
2 1/4 cups golden brown sugar
2 1/2 cups water

Steps:

  • Cut squash in half and clean out interior (take out all the seeds and stringy part). Cut each half in quarters (4 pieces).
  • In a medium saucepan on medium heat, combine sugar, cinnamon, water and squash. Arrange the squash (skin down) in the sauce pan in a way that allows all the squash to be almost covered in water.
  • Cook on medium heat for about 2 hours, cheking on the squash every 30-45 mins making sure that it is not running out of water. Towards the end the sauce should be a light syrup. Let the squash cool and the syrup thicken for about 10-15 mins before serving. Serve with Vanilla ice cream or whip cream.
