1/2 cup hot sauce, such as Frank's
2 tablespoons grapeseed oil, plus more for frying
1/2 teaspoon cayenne pepper
Kosher salt and freshly ground black pepper
3/4 cup arrowroot or cornstarch
1 cauliflower head, cut into florets
4 stalks celery, cut into thin sticks
Ranch Dressing, for serving, recipe follows
1/2 cup vegan mayonnaise
1/2 cup almond milk
3 tablespoons finely chopped flat-leaf parsley
2 tablespoons finely chopped chives
4 teaspoons fresh lemon juice
1 medium clove garlic, finely chopped
1/2 teaspoon kosher salt, plus more if desired
1/8 teaspoon freshly ground black pepper, plus more if desired

Steps:

  • Preheat the oven to 300 degrees F.
  • Whisk together the hot sauce, 2 tablespoons grapeseed oil, the cayenne and 1/4 teaspoon salt in a small saucepan. Heat over low heat until ready to coat the cauliflower.
  • Heat 1 inch of oil in a large heavy deep skillet over medium-high heat to 375 degrees F.
  • Meanwhile, place the arrowroot in a large bowl. Season the arrowroot and cauliflower with salt and black pepper. Working in 3 batches, moisten the cauliflower with a bit of water, dredge in the arrowroot, shaking off the excess, then carefully lower into the oil. Fry the cauliflower, turning occasionally, until cooked through and the crust is golden brown and very crisp, 5 to 7 minutes. Transfer to a wire rack set inside a rimmed baking sheet and keep warm in the oven while you fry the remaining cauliflower.
  • Transfer the fried cauliflower to a large bowl, add the warmed Buffalo sauce and toss to coat. Serve immediately with celery sticks and ranch dressing, for dipping.
  • Whisk together all of the ingredients in a small bowl. Add salt and pepper to taste. Serve right away or refrigerate in an airtight container for up to 1 week.

¾ cup all-purpose flour
1 teaspoon paprika
2 teaspoons garlic powder
1 teaspoon salt
½ teaspoon pepper
¾ cup milk or milk alternative
1 head cauliflower
¼ cup buffalo sauce or hot sauce
2 tablespoons coconut oil or vegetable oil
1 tablespoon honey

Steps:

  • Preheat the oven to 450˚F (230˚C). Line a baking sheet with parchment paper.
  • In a large bowl, add the flour, paprika, garlic powder, salt, pepper, and milk, and stir until well-combined.
  • Break the head of cauliflower into florets, about 1½-inches wide. Add the cauliflower florets to the batter, making sure each piece is evenly coated. Arrange the coated cauliflower on the baking sheet. Bake for 20 minutes, flipping halfway.
  • Meanwhile, in a small bowl, combine the buffalo sauce, coconut oil, and honey and stir until evenly combined. Brush the buffalo sauce mixture on the cauliflower and bake for another 20 minutes.

1/2 large head cauliflower, (cut into florets)
oil spray or oil
1/4 cup flour (or almond meal)
1/4 tsp garlic powder
3 tbsp milk of choice
optional 1/2 cup breadcrumbs
1/2 cup buffalo sauce or hot sauce
1-4 tsp oil or butter spread

Steps:

  • Preheat the oven to 425 F. Line a large baking dish with parchment. Spray florets with oil spray or toss with a little oil. Place in either a very large bowl or a large ziploc bag. Toss with the flour and garlic powder until evenly coated. If using the breadcrumbs for added crunch, finely crush them. Add the milk of choice and then the breadcrumbs to the cauliflower, and toss to coat. Arrange in one layer in the baking pan. Bake on the center rack 25 minutes. Combine the oil or melted butter spread with the buffalo sauce (because the fat helps the sauce adhere to the cauliflower). Dip cauliflower in sauce. Bake another 15 minutes. 4 cups cauliflower florets (~1 medium head)
1 cup superfine almond meal
1 tablespoon garlic powder
1/2 teaspoon smoked paprika
1/4 teaspoon salt
1/4 teaspoon pepper
2 large eggs
1/2 cup Franks Hot Sauce
2 tablespoons maple syrup
3/4 cup nonfat Greek yogurt
1/3 - 1/2 cup blue cheese crumbles
1 tablespoon lemon juice
1/8 teaspoon salt

Steps:

  • Preheat oven to 400ºF and spray a baking sheet with olive oil cooking spray.
  • Prep cauliflower, but cutting into "wing-sized" pieces. Set aside.
  • Make rub my mixing together almond flour, garlic powder, smoked paprika, salt, and pepper. Transfer into a gallon-sized bag.
  • Then, crack 2 eggs in a bowl and whisk.
  • Dip cauliflower into the egg mixture and thoroughly coat. Then transfer into gallon-sized bag. Repeat with all pieces of cauliflower.
  • Shake bag so that the cauliflower gets coated with rub.
  • Transfer cauliflower onto baking sheet and spread out evenly. Spray cauliflower with olive oil cooking spray or alternatively drizzle on some olive oil.
  • Bake at 400ºF for 20 minutes. Remove and flip cauliflower. Bake for 10 more minutes.
  • While cauliflower is baking, prepare buffalo sauce. Mix together Franks and maple syrup.
  • When cauliflower is done baking, toss in buffalo sauce, making sure all pieces are coated.
  • Place cauliflower back on baking sheet and then bake at 400ºF for 3-5 more minutes.
  • Remove from oven and let sit for 5 minutes.
  • Prepare blue cheese sauce, by mixing together all ingredients.
  • Enjoy!

1 tbsp sweet smoked paprika
1⁄2 tbsp ground cumin
1 tsp garlic powder
100g plain flour
200ml buttermilk or kefir
1 head of cauliflower (500g), broken into florets
80g hot sauce
1½ tbsp maple syrup
1 tbsp butter
celery sticks, to serve
100g Greek yogurt
3 tbsp mayonnaise
2 tbsp chopped chives
1-2 tbsp milk

Steps:

  • Heat the oven to 220C/200C fan/gas 7 and line a baking tray with baking parchment. Mix together the paprika, cumin, garlic powder, flour and ½ tsp salt in a large bowl. Make a well in the centre and whisk in the buttermilk. Tip in the cauliflower and toss to coat. Spread out the cauliflower on the baking tray and cook for 20-25 mins, turning halfway through, until crisp at the edges.
  • Warm the hot sauce, maple syrup and butter in a small pan set over low heat, for 2-3 mins. Liberally brush over the cauliflower and put back in the oven for 8-10 mins.
  • For the ranch dip, whisk together the yogurt, mayo, chives, milk and a pinch of salt in a bowl. Serve the with the cauliflower alongside some celery sticks for dipping.

i haven't tried this yet. saving for safekeeping. i don't usually like cauliflower but this seems different enough to be tasty. i'm told this works fine with gluten-free flour and/or soy milk if desired. a cup of hot sauce seems like an awful lot to me. i'll probably start with less. i'd also like to incorporate jack cheese into this somehow but haven't figured it out yet. i'll adjust after i've tried it. i see no reason you couldn't do this with bbq sauce or whatever instead

1 tablespoon butter
1/2 cup Frank's red hot sauce
1/2 cup blue cheese dressing

Steps:

  • Preheat oven to 450 Degrees. Trim the head of cauliflower into appetizer sized bites and set aside. In a bowl stir together milk, flour and garlic powder. Dip each piece of cauliflower into the batter and allow the extra batter to drip off. Place on a greased baking sheet. Spray the tops of the florets with cooking oil. Bake for 18 minutes.
  • Melt the butter in a saucepan over low heat and add the Frank's hot sauce and stir. Toss cooked cauliflower pieces with the sauce. Put back on cookie sheet and bake for 5 to 7 more minutes in the oven. Remove and serve with a side of Blue Cheese Dressing.
  • (I guessed on the yield - it really depends on how big your head of cauliflower is).
