These pancakes use applesauce for a moister pancake. The recipe doesn't use eggs or milk, due to my daughter's food allergies. It also makes great waffles.

- In a bowl, combine all dry ingredients: flour, sugar, baking powder, and cinnamon. Whisk together to remove clumps.
- Add egg, applesauce, and vanilla to the dry ingredients. Stir until JUST combined. If your batter looks too thick to pour (this will depend on your brand of applesauce), add 1-3 tablespoons of water and stir to incorporate.
- Let the finished batter sit for 5 minutes. During this time, heat up a nonstick skillet or griddle over medium-low heat and grease lightly with butter or cooking spray.
- Measure about 1/3 cup of batter into your hot skillet for each pancake. Once you see bubbles across your pancake and the sides start to look dry, flip the pancake over (this will take around 2 minutes depending on the heat of your skillet). Cook the second side until lightly browned. Repeat with remaining batter.

- Preheat: Heat griddle as per instructions or if using a large skillet heat over medium to medium-high heat. Meanwhile, preheat oven to 200 degrees F, and place a baking sheet on the middle rack while oven is heating.
- Prepare: In a large mixing bowl, add flour, sugar, baking powder, cinnamon, nutmeg and salt, mix well. Next, add in the applesauce, non-dairy milk and vanilla extract, mix until just combined, do not over mix. Your mixture may seem to swell up a bit due to the baking powder, this is normal.
- Cook: Place 1 teaspoon of oil on the griddle/skillet and spread evenly over the cooking area (I use a silicone brush). Place 2 apple slices on griddle, side by side, where pancake batter is going to cook. Using a 1/4 cup measuring cup, scoop batter and place on top of apple slices. Cook until bubbles form on the top and edges start to look leathery, about 2 1/2 – 3 minutes per side. Flip pancakes, cook another 2 – 3 minutes. Repeat until batter is gone.

- Rolled Oats. The first ingredient you’ll need to make this recipe is rolled oats. Rolled oats are super inexpensive to buy at the grocery store–you can buy a large container of rolled oats for less than $3, which is a steal if I do say so myself.
- Cinnamon. The next ingredient you’ll need is cinnamon, which adds the perfect flavor to these pancakes. Cinnamon is one of my go-to spices for all of my breakfast and dessert recipes, and I highly recommend adding cinnamon to your pancakes.
- Baking Powder. Next, you’ll need 1/2 tsp of baking powder. This helps make the pancakes a bit fluffier.
- Unsweetened Applesauce. You’ll then need unsweetened applesauce. This helps make the pancakes sweeter and adds the perfect apple-flavor to them. I typically use banana in my pancake recipes, but since I didn’t want the banana to mask the apple flavor, I chose to use unsweetened applesauce instead.
- Almond Milk (I used unsweetened vanilla) The next ingredient you’ll need is almond milk. I used unsweetened vanilla almond milk, but you can use any nut milk of your choice.
- Dice Apple Pieces. The last ingredient you’ll need to make these apple cinnamon pancakes is diced apples. I used 1/4 cup of diced apples, and I highly recommend chopping the apple pieces into really small pieces.

- Stir together all ingredients in a medium bowl. Heat a cast iron or nonstick skillet or griddle over medium heat. Coat with neutral oil, butter, or nonstick spray.
- Spoon out 1/4 cup of the batter at a time—or less to make smaller pancakes—and spread to an even thickness about 1/4-inch thick. Let cook about 3-4 minutes OR until the edges are totally set and bubbles start to appear. You wan the pancakes to be mostly cooked before you flip them. (The first batch may take longer to cook as the pan heats up.)
- Serve immediately and repeat with the rest of the batter, or keep warm on a baking sheet in a 200 degree F oven.

- Whisk together all dry ingredients (flour, sugar, baking powder, salt, and cinnamon) in large bowl.
- Add milk, applesauce, oil, and vanilla to dry mix and whisk together just until combined. Allow batter to rest for about 3 minutes. If batter is too runny, add 1 Tbsp of flour at a time until it reaches the desired consistency. Once ingredients are mixed, do not stir again (otherwise pancakes will be less fluffy)
- Pour batter onto skillet to desired size. Bake until top has formed bubbles and bottom is golden brown.
