Roasted Cabbage Steaks are an easy, flavorful side you can eat with so many things. Just slice a head of cabbage then bake or grill it to crispy perfection!

1 small head green cabbage (any dark, loose leaves removed)
1/4 cup extra virgin olive oil
2 cloves garlic (minced)
1 teaspoon kosher salt
1/4 teaspoon ground black pepper
1/3 cup raw pecan halves or walnut halves (optional)
1 small lemon (halved (optional but very good))
For serving: grated Parmesan (highly recommended) (chopped fresh herbs, such as thyme or parsley (optional))

Steps:

  • Preheat oven to 400 degrees F. Generously coat a rimmed baking sheet with nonstick spray and set aside.
  • Cut off the bottom (root) end of the cabbage and place it on a cutting board sitting up so that the flat end is on the cutting board. Cut top to bottom into 3/4- to 1-inch thick slices. Place on the prepared baking sheet. If you have more slices than fit on your baking sheet without touching, divide them between two baking sheets.
  • In a small bowl, whisk together the olive oil, garlic, salt, and pepper. Brush over one side of the cabbage, then flip the cabbage over and brush the other side. Roast the cabbage for 26 to 28 minutes, or until crispy at the edges and tender in the center. (If you are using one pan, roast it on the center rack; if two, use the the upper and lower-third racks.) Halfway through the baking time, rotate the pan(s) 180 degrees; if you are using two pans, switch their positions on the upper and lower racks at this point too. No need to flip the cabbage over. Don't worry about any extra crispy, dark leaves around the very outsides; they'll taste incredible.
  • While the cabbage bakes, toast the pecans in the oven at the same time: spread the pecans onto a small, ungreased baking sheet. Toast them in the oven with the cabbage until fragrant and the center of a pecan is light tan when broken in half, about 8 minutes, tossing them once halfway through. DO NOT WALK AWAY during the last several minutes of baking. Nuts love to burn the second you do. Remove the pecans from the oven and transfer immediately to a cutting board (if you leave them on the hot pan and they are super toasted already, they may burn). Let cool, then roughly chop.
  • Sprinkle the roasted cabbage with Parmesan and fresh herbs. Squeeze the lemon over the top, then finish with the chopped pecans. Serve hot.

1/2 cup all-purpose flour
2 teaspoons salt, divided
1/2 teaspoon pepper
2 pounds beef top round steak, cut into 1/2-inch pieces
2 to 3 tablespoons canola oil
6 medium onions, thinly sliced
7 to 9 small red potatoes (about 1-1/4 pounds), halved
1 bay leaf
1 can (10-3/4 ounces) condensed tomato soup, undiluted
2 cups frozen cut green beans, thawed

Steps:

  • In a large resealable plastic bag, combine the flour, 1-1/2 teaspoons salt and pepper. Add beef, a few pieces at a time, and shake to coat. , In a large skillet over medium heat, brown beef in oil on all sides. Transfer to a greased 3-qt. baking dish. Top with onions and potatoes. Sprinkle with remaining salt; gently toss to coat. Add the bay leaf. Spoon tomato soup over top. , Cover and bake at 350° for 1-1/2 hours. Place beans around edge of dish. Bake 15-20 minutes longer or until meat and vegetables are tender. Discard bay leaf.

One of my favorite side dishes, as it's very easy to make! I personally love garlic so I go crazy with it, but put as much as is good for you. This is a very simple recipe and you can put as much or as little of the seasonings you want.

1 head cabbage
2 tablespoons light olive oil
2 tablespoons minced garlic
½ teaspoon salt, or to taste
½ teaspoon ground black pepper, or to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Cut the bottom off of the cabbage and set it so that the flat end is on the cutting board; cut into 1-inch thick slices. Arrange slices in a single layer in a large casserole dish.
  • Drizzle olive oil over the cabbage slices and top with garlic. Season cabbage with salt and pepper. Cover the dish with aluminum foil.
  • Bake in preheated oven until the cabbage core is easily pierced with a fork, about 45 minutes.

1/4 teaspoon dry mustard
1/4 teaspoon pepper
3 lbs chuck steaks or 3 lbs round steaks, cut in 8 pieces
2 tablespoons oil
2 cups beef broth
2 onions, sliced
1 large cabbage, cut in 6-8 wedges

Steps:

  • Combine flour, salt, paprika, mustard and pepper.
  • Coat steak well on all sides with flour mixture.
  • Heat oil in large skillet.
  • Brown steak well on both sides.
  • Pour off excess drippings if necessary.
  • Add broth and onions to meat.
  • Cover and simmer slowly about 2 hours or until meat is tender.
  • Add enough water if necessary to bring liquid level up to 1/2 inch.
  • Arrange cabbage wedges around meat.
  • Cover and let simmer 10-15 mins or til cabbage is just tender.

4 beef cube steaks (4 ounces each)
1 tablespoon canola oil
1 medium onion, chopped
1 celery rib with leaves, chopped
1 garlic clove, minced
1 can (14-1/2 ounces) stewed tomatoes, cut up
1 can (8 ounces) tomato sauce
1 teaspoon beef bouillon granules
1 tablespoon cornstarch
2 tablespoons cold water

Steps:

  • In a large nonstick skillet, brown cube steaks on both sides in oil over medium-high heat; remove and set aside. In the same skillet, saute the onion, celery and garlic for 3-4 minutes or until tender. Add the tomatoes, tomato sauce and bouillon. Return steaks to the pan. Bring to a boil. Coarsely crushed black peppercorns star in this quick weeknight dish, which is built primarily from pantry staples. Don't be shy about adding the entire tablespoon of pepper, as it balances out the richness of the beef and adds a lightly spicy bite to the dish. A quick rub of garlic, brown sugar, salt, pepper and cornstarch seasons the beef; the cornstarch helps tenderize the beef and later imparts a silky texture to the sauce. Feel free to marinate the beef up to 8 hours ahead and cook when you're ready. If leftovers remain, tuck them into a crunchy baguette or roll them into a wrap.

Steps:

  • Add peppercorns, garlic, brown sugar, cornstarch and 1 teaspoon salt to a medium bowl and stir to combine. Add sliced steak and toss to coat.
  • Heat the oil in a large cast-iron skillet over medium-high. Add steak and cook, stirring frequently, until some of the edges are lightly browned, 3 to 4 minutes. Add soy sauce and toss beef to coat, about 1 minute. Using a slotted spoon, transfer beef to a bowl or plate.
  • Add cabbage to skillet, spread in an even layer and let cook, undisturbed, for 1 minute so that some pieces caramelize in the pan. Toss and cook cabbage, stirring occasionally, until crisp-tender, 4 to 6 minutes. Stir in vinegar and season with salt.
