CILANTRO-LIME DRESSING
After having a delicious TGI Friday's grilled chicken salad, I was determined to figure out the cilantro-lime salad dressing served with it. This is what I came up with. Delicious for a quick summery dinner. Grilled boneless chicken breasts served over a hearty green salad, and this dressing, voila!

I wanted to reproduce the cilantro lime dressing from el Pollo Loco®. I have been on a poblano pepper kick lately, so here is my version.

LIME-CILANTRO VINAIGRETTE
This is a delicious, tangy vinaigrette. It's so versatile, it can be used for mixed greens or taco salads. Enjoy! Serve immediately or keep in the fridge for 4 to 5 days. I prefer white wine vinegar in this recipe, as opposed to regular white vinegar. You can also use Dijon mustard if you prefer to spicy brown.

CREAMY CHILI DRESSING
This comes from the most recently published edition of "The Joy of Cooking." I make it a lot lately because I'm on a low carb diet. I love this stuff, it's like Ranch dressing kicked up a few notches!

CILANTRO AND GREEN CHILE DRESSING
This is a spicy salad dressing that goes very well with for example Ceasar salad. Cilantro and chilies are widely used in Tex-Mex cooking and this recipe puts those flavours in a more modern (and healthy) setting.
