20-Minute Baked Lime Cilantro Chicken Breasts image

Super juicy, EASY, tender chicken that's ready in FAST and made on ONE sheet pan!! Bursting with robust Mexican-inspired lime-cilantro flavors that will make it an automatic family FAVORITE!!

Provided by Averie Sunshine

Categories     30-Minute Meals

Time 25m

Number Of Ingredients 12

3 pounds boneless skinless chicken breasts (4 extra-large breasts or 6 average)
3 to 4 tablespoons olive oil
kosher salt, to taste
freshly ground black pepper, to taste
1/4 cup light brown sugar, packed
2 to 3 tablespoons chili powder
2 teaspoons cumin
1 to 2 teaspoons paprika or smoked paprika
1/2 teaspoon garlic powder
1/4 teaspoon cayenne pepper, optional and to taste
freshly squeezed lime juice, to taste
2 to 3 tablespoons fresh cilantro finely minced, for garnishing; or to taste

Steps:

  • Preheat oven to 425F (use convection if you have it) and line a baking sheet with foil (optional but highly recommended, see Notes below)) for easier cleanup.
  • Place the chicken on the baking sheet, and pound to an even thickness. I use an empty wine bottle, but a meat pounder or tenderizing tool, a rolling pin, or a heavy frying pan all work. The chicken doesn't need to be pounded 'thin', but it needs to be of pounded to a uniform thickness so it all cooks through at the same time.
  • Evenly drizzle the chicken with olive oil and generously season with salt and pepper; set aside.
  • To a small bowl, add the remaining ingredients (except the lime juice and cilantro), stir to combine, and evenly spoon the dry rub over the chicken on both sides. I add a bit more to the side that's facing up than the side that's on the bottom in contact with the baking sheet.
  • Bake for about 20 minutes, or until chicken is cooked through (165F) and done.
  • Evenly drizzle the chicken with fresh lime juice and evenly garnish with fresh cilantro. Allow the chicken to rest for 5 to 10 minutes before slicing into it (cover with foil if desired to keep it warmer). Resting the chicken really helps lock in the juices and moisture so don't skip this step.

CILANTRO CHICKEN BREASTS

Before I made this chicken breast recipe I had never cooked with cilantro. This is a great way to start. Now I am not afraid of sprinkling it into tacos, or any Mexican type of dish. This is also great to have for leftovers.

CILANTRO LIME CHICKEN

Cilantro Lime Chicken image

My husband has recently declared my kitchen a cilantro-free zone :( so unfortunately I haven't yet tried this dish, but I am posting it because it sounds good to me and thought it might appeal to others as well. The recipe comes from Ainsley Harriott, a British chef, and he cautions not to marinate the chicken longer than two hours as the lime juice will break down the chicken to the point that it will fall apart. Preparation time does not include marinating time.

CILANTRO LIME CHICKEN

Lime and cilantro make a zesty marinade for chicken breasts before grilling.

Provided by Kristen Winston

Categories     Chicken

Time 2h30m

Yield 6 servings

Number Of Ingredients 8

½ cup fresh lime juice
2 teaspoons kosher salt
½ teaspoon fine pepper
1 teaspoon crushed red pepper
2 teaspoons garlic, minced
½ cup cilantro, chopped

Marinate at least 2 hours or overnight.. Remove from bag.. On gas grill over medium-high heat, grill chicken breasts with lid down for six minutes. Turn and grill with the lid up 6 to 10 more minutes or until chicken reaches 170 degrees on a meat thermometer.

CILANTRO LIME CHICKEN

Cilantro Lime Chicken image

This Cilantro Lime Chicken can be grilled, baked or fried so you can enjoy it year round. The best part about our cilantro lime chicken recipe - marinate from 30 mins to 48 hours. So much flavor either way!

Provided by Olena Osipov

Categories     Dinner

Time 30m

Number Of Ingredients 9

2 lbs chicken breasts or thighs (boneless & skinless)
1 bunch cilantro
4 limes (juice of)
3 garlic cloves
2 tbsp olive oil
1 tbsp cumin
1/2 tsp salt
1/8 tsp cayenne pepper
Ground black pepper (to taste)

Steps:

  • In a food processor or blender, add cilantro (whole and with stems), lime juice, garlic, olive oil, cumin, salt, cayenne and black pepper. Process until marinade forms, pausing and scraping the walls.
  • Add chicken in a medium bowl and poke with a fork randomly. This will allow marinade to penetrate the meat. Pour marinade on top and toss with a fork to coat well. Cover and refrigerate for 30 mins - 48 hours. The longer you marinate, deeper the flavor, but even after 30 mins cilantro chicken tastes awesome.
  • To pan fry (pictured): Preheat large ceramic non-stick skillet on medium heat and swirl a bit of avocado oil to coat. Add as many chicken breasts as fit, cover and cook for 5-6 minutes. Flip and cook for another 5-6 minutes or until the thickest part juices run clear when poked with a knife or fork. Discard marinade.
  • To grill: Preheat grill on medium-high (450-500 degrees F) and rub with oiled paper towel. Place chicken on the grill, close the lid and grill for 8-10 minutes turning once. Do not overcook. Discard marinade.
  • To bake: Preheat oven to 450 degrees F. Rub bottom of large baking dish with oil and lay chicken breasts in a single layer. Bake uncovered for 25 minutes (thinner) to 35 minutes (2″+) or until 150 degrees F internal temperature. Discard marinade.
  • For all methods: Make sure you let chicken rest. Remove from heat and cover dish with tin foil, silicone lid or paper towel. Let rest for 5 minutes. This step helps juices to settle back into the meat.

  • If the chicken breasts are uneven in thickness, pound them down so they’re all even. This way all the breasts will cook through simultaneously. Sprinkle each with salt and pepper.
  • In a large ovenproof skillet, heat the oil over medium-high heat. Add the chicken and cook for 6-7 minutes, turning once. You want the chicken nice and browned on the outside. (It doesn’t have to be cooked all the way through yet.) Set chicken on a plate and cover tightly with foil until step 5.
  • Remove skillet from heat and add the broth, lime juice, onion, cilantro, and red pepper. Return to heat. Cook and stir to scrape up the browned bits from the bottom of the skillet. Bring to a boil. Allow to boil gently, uncovered, for 10 minutes or until the liquid is reduced to around 1/4 cup. (During this time you can steam some veggies to have on the side, like asparagus.) Reduce heat to medium-low, then add the cream and butter. Stir until butter has melted.

  • For even thickness, set down a 10” piece of plastic wrap on your counter. Place 1-2 chicken breasts on top, then set another piece of plastic wrap right on top. Using a kitchen mallet, lightly strike the chicken breast(s) from the center, moving outward to form a uniform piece of meat. Strive for ¾” to 1” thickness. Repeat the process with the remaining breasts.
  • Place all marinade ingredients into a food processor or blender. Pulse 10 times to create a nice thick mixture. If the marinade is too thick, add a little more olive oil. The mixture should not be a puree but rather a fine chop.
  • Pour marinade over chicken breasts and toss to coat. Cover dish with plastic wrap or seal bag, and place into the refrigerator for 2-4 hours.

  • The first step is to make the marinade: This marinade is made with a combination of 4 garlic cloves (minced), 2 tablespoons of lime juice (about 2 limes), 1 tablespoon rice vinegar, 1 teaspoon avocado oil, 1/2 teaspoon salt, 1/4 teaspoon black pepper, 1/4 teaspoon onion powder, 1 teaspoon chili powder, 1/8 teaspoon paprika, and a pinch of cumin (optional). Mix all these ingredients in a small container, whisk until all well combined.
  • Place the chicken in a storage bag or airtight container and add the marinade. Place it in the fridge and marinate the chicken for at least 30 minutes to get the full flavor experience.
  • Preheat the oven to 350 F . Place the chicken breast on a baking sheet or pan, add the vegetables. Add 1/3 cup of white wine or chicken stock.
  • Bake in the oven for 40 minutes or until the chicken reaches an internal temperature of 165F degrees. Use a meat thermometer, or you can pierce the chicken with a knife; if the chicken’s juices run clear, it means it needs more cooking time. After the meat is done, remove it from the oven and let it rest for at least 10 minutes before serving it.

  • To make marinade: In a mixing bowl whisk together lime zest, lime juice, olive oil, cilantro, garlic, honey, cumin and salt and pepper to taste (I use 1 1/4 tsp salt and 1 tsp pepper - not included in nutrition estimate as this is per personal preference).
  • Place chicken thighs in a gallon size resealable bag, pour marinade over chicken. Seal bag while pressing out excess air. Rub marinade over chicken until it cilantro appears more evenly distributed.
  • Grill instructions: Preheat a gas grill to medium-high heat (about 425 degrees). Remove chicken from marinade (I like to brush most of the cilantro off as it just turns to an unappetizing color and it's already seasoned the chicken). Grill chicken thighs until center reaches 165 degrees, about 5 - 6 minutes per side.
