Cider Brined Grilled Stuffed Pork Chops image

Provided by Food Network

Categories     main-dish

Time 2h45m

Yield 3 servings

Number Of Ingredients 17

3 bone-in, or boneless pork chops, about 2 pounds total
4 cups apple cider
2 cups oatmeal stout or other dark beer
1/2 cup kosher salt
1/2 cup raw sugar
1 tablespoon chipotle chili powder
2 cups apple cider
1 1/2 apples (Pink Lady, Honey Crisps, or Cameo) cored and sliced 1/4-inch thick, grilled, about 1 minute each side, and diced
1 tablespoon mesquite honey
1 teaspoon chipotle chili powder
1 teaspoon ground cinnamon
Red Chili Caramelized Pecans, recipe follows
1/2 pound white cane sugar
1/4 cup water
1 pound whole pecans
1 tablespoon vanilla extract
1 teaspoon red chili powder

Steps:

  • For the brine:
  • Combine all ingredients in a large container with a tight fitting lid.
  • Take the pork chops and insert a fillet knife into the side of each pork chop. Create a 2-inch slice along the side moving your knife along the inside of the chop creating a pocket. Be careful not to pierce the outer sides of the chop. Place the pork chops in the brine for anywhere from 1 hour or up to 24 hours in the refrigerator.
  • For the reduction:
  • Add the cider to a medium saucepan over medium heat. Cook the cider, skimming off any scum that comes to the surface, until is becomes syrupy and is reduced to about 1/4 cup.
  • For the stuffing:
  • Combine all the ingredients in a large bowl.
  • Preheat grill to high.
  • Remove the pork chops from the brine, rinse and pat dry with paper towels. Stuff the cavity with the apples and grill for about 10 minutes on each side. Remove from grill to a serving platter and let rest for about 10 minutes. Brush with the cider reduction, sprinkle with the chopped caramelized pecans and enjoy!
  • In a heavy-bottomed pot, cook the sugar and water until the temperature reaches 275 degrees F on a candy thermometer. Add the pecans and stir to coat with the sugar. Once the sugar begins to caramelize add the vanilla extract and stir gently but constantly until fully caramelized. Pour onto a silpat lined baking sheet to let cool, then sprinkle with the red chili powder.

FALL-APART TENDER PORK CHOPS

Fall-Apart Tender Pork Chops image

The title of the recipe says it all. I've made this many times for both friends and family and everyone that's tasted it has loved it. You need to use 1" or thicker boneless loin chops. I sometimes double the sauce because its so delicious. I wish I could take credit for this recipe, but its from my favorite cookbook, that will remain nameless since my dog ate the cover and I can't remember the title.

BRINED PORK CHOPS WITH APPLE HASH

Brined Pork Chops with Apple Hash image

Provided by Robert Irvine : Food Network

Categories     main-dish

Time 4h45m

Yield 6 servings

Number Of Ingredients 14

Juice of 1 lemon
Juice of 1 lime
Juice of 1 orange
1/4 cup fresh fennel sprigs
2 tablespoons kosher or sea salt
Six 8 to 10-ounce bone-in pork chops
2 tablespoons grapeseed oil
2 tablespoons grapeseed oil
2 cups thin-sliced Yukon potatoes
1 cup thin-sliced red onion
1 teaspoon sea salt
1 teaspoon white pepper
2 cups thin-sliced apple, such as Granny Smith or Gala
1 teaspoon hot sauce, such as Tabasco

Steps:

  • For the brine: Blend 8 cups water, the fruit juices, fennel and salt in a large saucepan over medium heat. Simmer for 20 minutes. After heating, remove the brine from the heat, allow to cool. Add the chops and allow to brine for 3 hours and up to 24 hours under refrigeration. (The longer the chops are brined the more salt and fruit flavor will be absorbed.)
  • For the pork: In large saute pan over high heat, add the oil, allow to warm until on the verge of smoking and then add 3 chops to the pan. Reduce the heat and cook for 6 to 7 minutes per side, this should yield a golden brown chop. Repeat the process with the remaining 3 chops. Hold warm until serving
  • For the hash: Return the same pan to medium-high heat and add the oil and the potatoes. Stir the potatoes until softened and browned on the edges, this will take 6 to 8 minutes. Once the potatoes are cooked, add the onions, season with the salt and pepper and continue to cook until the onions have softened, 3 to 4 minutes. Finally, reduce the heat to medium, add the apples and finish cooking for a final 4 minutes. Once cooked, remove from the heat and serve with hot sauce if desired.

PORK CHOPS WITH WHITE WINE AND LEEK PAN SAUCE RECIPE

Pork Chops With White Wine and Leek Pan Sauce Recipe image

Creating a pan sauce that has body and richness doesn't just happen by mistake: You have to use certain techniques to get there. In this easy dinner, pork chops are served with a light, bright pan sauce made from leeks, white wine, chicken stock, and lemon zest. The leeks, though, add more than just flavor: they also fortify the sauce with bulk and texture, adding body and substance where there might not otherwise be any.

Provided by Daniel Gritzer

Categories     Mains

Yield 2

Number Of Ingredients 13

2 bone-in pork chops (about 1 pound total)
2 tablespoons kosher salt, plus more as needed
1 tablespoon sugar
Freshly ground black pepper
2 tablespoons vegetable or canola oil
1/2 cup dry white wine
1/2 cup homemade or store-bought low-sodium chicken stock
1 teaspoon powdered gelatin (optional; see note)
3 tablespoons unsalted butter, divided
1 1/2 cups chopped leeks, white and light green parts only (from about 1 large leek)
2 teaspoons minced garlic (from about 2 medium cloves)
1 teaspoon finely grated zest from 1 lemon
2 tablespoons finely chopped flat-leaf parsley

Steps:

  • Pat pork chops dry with a paper towel. Combine salt and sugar in a small bowl. Season pork chops generously on all sides with salt/sugar mixture (you may have some seasoning mixture left over; reserve for another use or discard). Transfer to a wire rack set in a rimmed baking sheet. If dry-brining chops overnight, refrigerate, uncovered, at least 8 hours and up to 24; otherwise proceed immediately to Step 2.
  • When ready to cook chops, preheat oven to 250°F. Season chops with pepper. Place baking sheet with pork chops in oven and cook until an instant-read thermometer inserted into the center of the chops registers 100 to 110°F for medium-rare, about 30 minutes, or 110 to 120°F for medium, about 35 minutes. To prevent overcooking, start checking temperature 5 to 10 minutes before suggested time. Remove from oven.
  • While pork cooks, combine wine and stock in a bowl or measuring cup and sprinkle gelatin all over, if using. Set aside.
  • Heat oil in a large stainless steel or cast iron skillet over high heat until lightly smoking. Place pork chops in skillet and cook, turning occasionally, until browned and an instant-read thermometer registers 120 to 130°F for medium-rare or 130 to 140°F for medium, about 3 minutes. Stack pork chops with tongs, hold them on their sides, and sear the fat caps on the edges until crisp, about 1 minute. Remove pan from heat, transfer chops to a clean rack set in a rimmed baking sheet, tent with foil, and let rest while making pan sauce.
  • Pour off excess fat from skillet and return to medium-high heat. Add 1 tablespoon butter and melt. Add leeks and garlic and cook, stirring, until softened, about 5 minutes. Add wine and stock, bring to a boil, and cook, stirring occasionally, scraping up any browned bits from the bottom of the pan with a wooden spoon. Continue cooking until sauce is reduced by about two-thirds, 5 to 8 minutes. Stir in remaining 2 tablespoons butter and cook at a hard boil until emulsified, about 30 seconds. Stir in lemon zest and half of parsley, and season to taste with salt and pepper.
  • Transfer pork chops to plates, spooning sauce all over (if pan sauce took too long to make and pork chops have cooled significantly, return to oven for a few minutes to reheat, being careful not to let them get above the maximum temperature reached in step 4). Garnish with parsley and serve.

Yield Makes 4 servings

Number Of Ingredients 13

4 1/4 cups apple cider
3 tablespoons coarse salt
6 allspice berries
1 bay leaf
4 10-ounce bone-in center-cut pork rib chops
4 tablespoons (1/2 stick) butter
5 large leeks (white and pale green parts only), thinly sliced
1 cup whipping cream
1 1/2 pounds Granny Smith apples, peeled, cored, halved, each half cut into 4 wedges
2 tablespoons sugar
1/2 cup chicken stock or canned low-salt chicken broth
1/3 cup Calvados
Olive oil

Steps:

  • Bring 4 cups cider, salt, allspice, and bay leaf to boil in large saucepan, stirring to dissolve salt. Cool completely. Place pork in 13x9x2-inch glass baking dish. Pour brine over. Cover; refrigerate overnight.
  • Melt 2 tablespoons butter in heavy large skillet over medium-low heat. Add leeks; sauté until tender, about 7 minutes. Add cream and simmer until slightly thickened, about 3 minutes. Season to taste with salt and pepper. (Creamed leeks can be made 1 day ahead. Cover and chill.)
  • Melt remaining 2 tablespoons butter in large nonstick skillet over medium heat. Add apples and sauté 10 minutes. Add sugar and sauté until apples are golden, about 6 minutes longer. Add stock, then Calvados and remaining 1/4 cup cider. Simmer until liquid thickens slightly and apples are tender, stirring occasionally, about 5 minutes. Set aside. Prepare barbecue (medium heat) or preheat broiler. Drain pork. Rinse under cold water; pat dry. Brush pork with oil. Grill or broil to desired doneness, about 5 minutes per side for medium.
  • Meanwhile, rewarm leeks, thinning with 1 to 3 tablespoons water if necessary. Bring apples to simmer. Spoon leeks onto plates. Top with pork, then apples.

  • In a large bowl, mix 4 cups cider, 2 cups cold water, 4 tbsp. salt, bay leaves, garlic cloves, and chile flakes. Add pork chops, cover bowl, and chill, turning meat occasionally, at least 3 hours and up to 1 day.
  • Preheat oven to 325º. Remove pork chops from the brine and blot dry. Melt 2 tbsp. butter in a large frying pan over medium-high heat. Add pork chops (you may need to do this in 2 batches) and cook for 3 to 5 minutes, or until well browned. Flip chops and cook another 3 to 4 minutes, until browned on that side. Layer chops in a 9- by 13-in. baking pan and bake until barely pink in the center (cut to test), 15 to 20 minutes.
  • Meanwhile, pour remaining 3/4 cup cider into the hot frying pan, scraping pan with a wooden spoon to dislodge browned bits. Add the chicken stock, turn the heat to high, and boil until liquid is reduced to about 1/2 cup, 8 to 10 minutes. Remove from heat and stir in remaining 1 tbsp. butter and the mustard. When sauce is no longer bubbling, stir in crème fraîche. Season with remaining 1/2 tsp. salt and the pepper. Remove the pork from oven and spoon a generous amount of sauce over each chop. Serve topped with sautéed apples.
