CHOCOLATE ORANGE FONDUE
Steps:
- For serving: pound cake, doughnuts, long-stemmed strawberries, bananas or pretzels
- Chop the chocolate and place it in a heat-proof bowl set over a pan of simmering water. Add the cream, zest, coffee, and liqueur and stir constantly until the chocolate is melted and smooth. Transfer the mixture to a fondue pot and serve warm with pound cake, doughnuts, strawberries, bananas or pretzels.

- In 2-quart heavy saucepan, heat both chocolates and the whipping cream over low heat, stirring frequently, until cream is hot and chocolate is melted. Stir with wire whisk until smooth. Stir in vanilla. Pour into fondue pot. Keep warm with fuel canister on low heat.
- Arrange cake and fruit dippers on platter. Set fondue pot in center of platter.

My sister made this during my visit. I'm not a chocolate lover but this was delicious! We ate it with sliced apples, bananas, strawberries, crisp cookies, pretzels, and cubed poundcake! My times are probably off as I've never prepared this myself ... just enjoyed my sister's efforts :)

Steps:
- In large saucepan over medium heat, combine cream and butter.
- Bring to a simmer, stirring constantly.
- Remove from heat.
- Add morsels. Stir until melted and smooth.
- Cool slightly. Then transfer to a fondue pot or ceramic bowl.
- Serve immediately.
- TO REHEAT: Reheat in microwave, 30 seconds, stir -- another 30 seconds, stir -- repeat until heated. Do not microwave for a longer time; you may burn the fondue.

Stir until melted and smooth. Cool slightly. Transfer to a fondue pot, chafing dish, or ceramic bowl. Serve immediately with sliced apples, sliced bananas, strawberries, cookies, pretzels, and pound cake.
CHOCOLATE FONDUE
Steps:
- In a small saucepan heat cream and Grand Marnier to a boil. Place chocolate in a fondue pot or top of a double broiler. Pour cream mixture over chocolate and heat over low heat, stirring constantly, until smooth. Arrange fruits on a pretty platter, garnished with mint sprigs. Place pot of chocolate over a small candle or alcohol burner and adjust so heat is very low. Use long forks to dip fruits and sweets into chocolate.
CHOCOLATE FONDUE
Steps:
- Completely melt the chocolate in a double boiler. Add the cream to a medium bowl and pour in the chocolate. Whisk the mixture very slowly creating a shiny, elastic emulsion.
- Whisk in the butter, then add the liqueur, to taste, until well combined.
- Pour the mixture into a fondue pot. Dip your choice of bites into the fondue using fondue forks and enjoy!

- In a large saucepan, stir together the half-and-half, the milk, the orange juice, the zest, and a pinch of salt and bring the mixture just to a boil over moderate heat.
- In a small heatproof bowl, whisk together the chopped chocolate and about 2/3 cup of the hot milk mixture until the mixture is smooth and whisk the chocolate mixture into the remaining milk mixture.
- Simmer the hot chocolate, whisking, for 2 minutes, discard the zest, and stir in the Grand Marnier.
- (For frothy hot chocolate, in a blender blend the hot chocolate in batches.) Divide the hot chocolate among heated mugs and garnish each drink with some of the whipped cream and grated chocolate.

- Bring whipping cream and grated orange peel to simmer in heavy medium saucepan. Reduce heat to low. Add chopped chocolate and 1 tablespoon Grand Marnier; whisk until mixture is smooth. Remove fondue from heat and blend in remaining 2 tablespoons Grand Marnier.
- Transfer fondue to fondue pot. Place over candle or canned heat burner. Serve with cake pieces and fruit for dipping.
FROZEN GRAND MARNIER TORTE WITH DARK CHOCOLATE CRUST AND SPICED CRANBERRIES
Steps:
- For crust:
- Finely grind cookies, chips, and sugar in processor. Add melted butter; blend until wet crumbs form. Set aside 1/2 cup crumb mixture. Press remaining crumb mixture onto bottom and 2 inches up sides of 9-inch-diameter springform pan with 2 3/4-inch-high sides.
- For filling:
- Whisk first 3 ingredients in medium metal bowl. Set over saucepan of simmering water and whisk vigorously until candy thermometer registers 175°F, about 8 minutes. Remove bowl from over water. Add spices. Using mixer, beat until thick and cool, about 5 minutes.
- Using electric mixer, beat whipping cream, sour cream, Grand Marnier, orange juice concentrate, and grated orange peel in large bowl until peaks form. Add egg yolk mixture and fold together. Pour 2/3 of filling into crust. Sprinkle with reserved 1/2 cup crumb mixture. Gently spoon remaining filling over. Cover; freeze overnight or up to 3 days.
- For topping:
- Whisk Port and cornstarch in large skillet to blend. Add sugar, honey, and spices. Bring mixture to boil over high heat, stirring often. Add 3 cups cranberries; cook until mixture boils and cranberries begin to pop but still hold shape, about 5 minutes. Mix in remaining 2 cups cranberries. Chill topping at least 6 hours or overnight.
- Release pan sides from torte. Transfer torte to platter. Spoon topping over filling. If desired, garnish torte with white chocolate curls.

- Heat oven to 350°F.
- Grease 12-cup muffin pan or line with baking cups.
- In large bowl, beat butter and 3/4 cup sugar at medium speed 5 to 6 minutes or until light and fluffy.
- Beat in egg, 1 tablespoon orange peel and 1 teaspoon Grand Marnier.
- In medium bowl, stir together flour, baking powder, baking soda and salt.
- At low speed, beat sour cream into butter mixture alternately with flour mixture.
- Spoon batter into muffin pan, filling two-thirds full.
- Bake 20 to 25 minutes or until golden brown and toothpick inserted in center comes out clean.
- Cool on wire rack 10 minutes.
- Remove from pan; cool completely.
- Meanwhile, in small saucepan, heat 1/3 cup sugar and orange juice over medium heat until sugar dissolves.
- Remove from heat; stir in 2 tablespoons Grand Marnier.
- Poke holes with toothpick in top of each cupcake.
- Using pastry brush, brush tops liberally with Grand Marnier glaze.
- Place chocolate in small heavy resealable plastic bag; add shortening and seal.
- Place in pan of simmering water; turn off heat.
- Allow bag to sit several minutes; remove from water.
- Smooth melted chocolate by working bag with hands.
- Cool 5 minutes.
- Cut off tiny corner of bag; drizzle chocolate over cupcakes.
CHOCOLATIER DARK CHOCOLATE ORANGE FONDUE
This recipe comes from inside a wrapper of a Nestle Chocolatier Premium Baking Chocolate, Dark Chocolate 53% Cacao Bar. It's suggested that it be served with fresh fruit, cake cubes and/or pretzels. I haven't made it yet, but would probably increase the amount of orange zest.
