MOM'S SUSHI RICE
Simple and easy sushi rice from my mom's recipe. Can be modified to your taste.

Steps:
- Place rice into a large, deep bowl. Fill with cold water and rub rice together with hands until the water turns milky white. Pour off the cloudy water, being careful not to pour out the rice. Repeat 3 or 4 times until you can see the rice through 3 inches of water.
- Drain the rice in a fine strainer, then place into a saucepan along with konbu and 3 cups water. Allow to stand for 30 minutes. Stir together rice vinegar, sugar, and salt until dissolved in a small bowl, set aside.
- Cover, and bring rice to a boil over high heat, then reduce heat to low, and simmer for 15 minutes. Remove from heat and allow to stand, covered, for 5 minutes.
- Scrape rice into a bowl; remove and discard the konbu. Stir in vinegar mixture until well incorporated and no lumps of rice remain. Allow to cool at room temperature. For a shinier appearance, use an electric fan to cool the rice rapidly.

- Place the rice into a mixing bowl and cover with cool water. Swirl the rice in the water, pour off and repeat 2 to 3 times or until the water is clear.
- Place the rice and 2 cups of water into a medium saucepan and place over high heat. Bring to a boil, uncovered. Once it begins to boil, reduce the heat to the lowest setting and cover. Cook for 15 minutes. Remove from the heat and let stand, covered, for 10 minutes.
- Combine the rice vinegar, sugar and salt in a small bowl and heat in the microwave on high for 30 to 45 seconds. Transfer the rice into a large wooden or glass mixing bowl and add the vinegar mixture. Fold thoroughly to combine and coat each grain of rice with the mixture. Allow to cool to room temperature before using to make sushi or sashimi.
FRESH FRUIT SUSHI RECIPE BY TASTY

- In a medium pot combine the rice, water, sugar and salt. Cook on low heat for about 20 minutes or until all the rice absorbs the water.
- Add the coconut milk and vanilla. The mixture should be moldable. Cook a few minutes longer if it's too runny.
- Slice fruit of choice into long pieces.
- *Note: Use a potato peeler to shave thin slices off the mango.
- Lay a bamboo rolling pad on a counter top, and place a square of wax paper over top. Spread the rice about ½ inch (1 cm) thick over the paper into approximately a 7x5 inch (17x12 cm) rectangle.
- Toast a ¼ cup (25g) of coconut shreds for 3 minutes.
- Lay the fruit pieces on the rice, and roll up carefully. If rice sticks to the paper too much, try spreading it a little thicker.
- Coat the rolls with either the mango slices, or the toasted coconut.
- Slice each roll into 6 pieces.
- With the rest of the rice, roll into balls (like nigiri).
- Place thin slices of kiki or strawberries over top with half a blackberry on top to look like fish eggs.
- Blend ¼ cup (25 g) raspberries with ¼ cup (60 ml) water to make a dipping sauce.
- Enjoy!

SUSHI RICE WITH SUSHI VINEGAR
Sushi from the store can be quite expensive...sushi's quite good for you, very easy to make and extremely tasty! Here's a recipe for sushi rice so that you can get rolling!

- Bring water to a boil.
- Pour in rice and boil for one minute, uncovered.
- Cover and reduce heat to simmer.
- Simmer for 20 minutes.
- Let sit for 10 minutes, uncovered.
- Put into large non-metal bowl and cut in sushi vinegar with a wooden spatula.
- Let the rice cool further- one method is to spread the rice out on aluminum foil on a cookie sheet to cool.
- Use to roll your sushi!

- The most important thing to get right when cooking sushi rice is the ratio of rice to water. It's better to use a volume measure rather than weighing. Use a cook's 250ml measuring cup if you have one, or a short glass, teacup or small mug. Once you've made one batch, you'll know how much cooked rice that measure makes - it should be about 2½ cups.
- Measure out 1 cup rice into a saucepan, rinse the rice, swirling it around the pan, then drain off the water. Try not to lose any of the rice. Add 1½ cups water (about 375ml).
- Bring the rice to a simmer quickly, put on a tight-fitting lid and reduce the heat to low. Cook for 13 mins - don't take the lid off.
- Check a couple of grains at the top - the rice should be just about cooked and the water evaporated. If not, continue to cook and check at 2 min intervals, each brand of rice will differ. Turn the heat off and leave the rice to stand with the lid on for 10 mins so all the moisture is absorbed. Add sushi rice seasoning, if you like, and serve.

SUSHI RICE
I like this recipe because it is pretty easy and I have gotten good results everytime I use it. It is adapted from a couple of different recipes. (This makes almost 2 cups of seasoning, I put what I have left in a jar or bottle and refrigerate)

- For the seasoned vinegar: Combine ingredients in a small sauce pan over med-low heat until sugar and salt are dissolved.
- Allow to cool and store in the refrigerator.
- For the rice: Put 3 cups of rice in a large bowl and rinse until the water is clear.
- Drain the rice and add the 3 cups of cold water to a pot with a good-fitting lid.
- DO not cover the pot yet, though.
- Over high heat, bring to a simmer.
- Once the rice is simmering, cover rice and reduce the heat to medium low.
- Cook for 10 minutes without removing the pot lid at all.
- Turn heat down to the lowest setting and cook for another 10 minutes.
- Now, turn off the heat and let the rice sit in the pot ON the stove for 15 minutes.
- Turn the rice into a wooden, glass, or stainless steel bowl and sprinkle with 6 tbsp of seasoned vinegar.
- Mix the vinegar with the rice with a cutting motion being careful to only mix for about 5 minutes Max.
- Cover rice with a damp towel and allow to cool to room temperature.
- This rice is easiest to manipulate while it is room temperature or warmer.
- If you refrigerate the rice it gets harder to work, but you could save it for leftovers--just keep it covered with a damp cloth.
- This makes enough for about 10 rolls of Maki-sushi or 60 pieces of Nigiri-sushi.
