CHUY'S STYLE SALSA FRESCO

Steps:

• Wash vegetables well. Stem and chop coarsely Serrano pepper. Peel and coarsely chop onion. Squeeze fresh lime juice Core and coarsely chop tomatoes Place Serrano, cilantro, onion, lime juice, salt, and garlic salt in food processor, or blender and pulse on low for five seconds. Add tomatoes and pulse on low until desired consistency. (Chuys is pretty chunky) makes 1 quart. Serve with tortilla chips and enjoy!

CHUY'S CREAMY JALAPENO LIME SAUCE

Steps:

• Pulse all ingredients in a blender, in batchs, until smooth.
• Chill and use as needed.

CHUY'S ISLAND HOT SAUCE

Steps:

• Combine Scotch Bonnet Peppers, Carrots, and Onion in a large saucepan
• Bring to boil for 5 minutes
• Cool
• Add to blender with Tomato, Salt, Pepper, Garlic Powder, Lime Juice, and White Vinegar
• Purée in blender
• Let mixture cool, then pour into freshly sterilized bottles, and top with sterilized lids

CHUY'S HATCH GREEN CHILI SAUCE RECIPE

Steps:

• In a large sauce pot, make beef stock by dissolving all beef base in 1 quart water.
• Place stock over medium to high flame.
• Add pepper, garlic salt, salt and diced onions to the stock. Bring mixture to simmer. Allow to simmer long enough for onions to soften, about 12 minutes. Onions may be slightly crunchy in center.
• After onions have softened, add green chiles. This will bring temperature down - bring stock back to simmer, stirring with slotted spoon.
• In a bowl, combine 1/2 cup water and corn starch. Whisk until smooth and all cornstarch is dissolved.
• Add the cornstarch mixture to the hot and simmering stock. Slowly stir in cornstarch mixture with slotted spoon.
• After adding cornstarch mixture, allow sauce to continue to simmer an additional 8 to 10 minutes, stirring occasionally. The sauce will be gaining more body at this time.
• Remove from heat and allow to cool.
• Store in a tightly sealed container, in the refrigerator, until ready to serve.

CHUY'S DELUXE TOMATILLO SAUCE

Steps:

• Blend all ingredients, in blender or food processor.
• Cover whatever you're cooking generously with this sauce, as it soaks in, as it cooks(but make sure it does cook, on top of your enchiladas, burritos, etc, as it contains raw egg).
