1 medium onion, chopped
1 tablespoon parsley, chopped
1 tablespoon oil
1 small tomatoes, chopped
1/2 cup peas
1 carrot, chopped
1/2 cup peanut butter

Steps:

  • Sauté onion and parsley in oil until brown.
  • Add remaining ingredients and simmer for at least 30 minutes or until carrots are done.

vegetable oil cooking spray
3/4 cup sweet potato (peeled and cubed)
1/4 cup onion (chopped)
1/4 cup red bell pepper (chopped)
1 medium garlic clove (minced)
1/2 medium jalapeno pepper (seeded and minced)
1 cup cooked chicken breast, chopped
1/2 cup salsa
1/4 teaspoon ground cumin
1 (16 ounce) can chicken broth
1 (15 ounce) can healthy choice low-fat low-sodium chicken and rice soup (undiluted)
1 (15 ounce) can black beans (drained)
3 tablespoons peanut butter

Steps:

  • Place a large Dutch oven coated with cooking spray over medium high heat until hot.
  • Add sweet potato, onion, bell pepper, garlic, and jalapeno; saute 5 minutes.
  • Stir in chicken and next 5 ingredients (chicken through beans); bring to a boil.
  • Reduce heat; simmer 10 minutes.
  • Add peanut butter, stirring with a whisk; cook 2 minutes.

Steps:

  • Combine all ingredients and cook in a saucepan over medium heat, stirring often until paste-like in consistency.
  • Then transfer into buttered pan and spread to ½ inch thick.
  • Let cool and cut into pieces.
  • Cut wax paper and place pieces on individual paper and wrap.

1 teaspoon oil
1 cup chopped onion
1 teaspoon ground cumin
1 lb sweet potato, peeled and cut into chunks
1 large green apple, peeled and cut into chunks (Granny Smith is good)
1 (10 ounce) can chicken broth
3/4 cup apple juice
1/8 teaspoon cinnamon
1/2 cup creamy peanut butter
salt and pepper
sour cream
chopped peanuts
chives
apple, sliced thin

Steps:

  • Heat oil in large saucepan over medium heat.
  • Add onion and cumin.
  • Cook, stirring occasionally until onion is transparent.
  • Add sweet potato, apple, chicken broth, apple juice, cinnamon and salt and pepper to taste.
  • Cover and bring to a boil.
  • Reduce heat and simmer until sweet potato and apples are tender, about 20 minutes.
  • Add peanut butter and stir until melted.
  • Puree soup in fool processor or blender until smooth.
  • Return to pan and heat through.
  • To serve, ladle soup into warm bowls and garnish with sour cream, chopped peanuts, chives and thinly sliced apples.

1 cup roasted peanuts, ground fine
2 -3 small dried hot red chili peppers or 1/2 teaspoon dried red pepper flakes
1 small green bell pepper, minced
1 small onion, minced

Steps:

  • Heat the broth to a bare simmer and, in a small bowl, stir together the peanuts and ½ cup of the broth until the mixture forms a paste.
  • Stir paste into the simmering broth, add chili peppers, bell pepper and onion, and bring to a boil.
  • Simmer, stirring occasionally, for 15-20 minutes, or until the soup thickens to desired consistency, and season to taste.
