This easy Fish Florentine recipe, made with a pan seared firm white fish served on a creamy bed of spinach feels like something you would order out in a fancy restaurant!

4 5 oz thick pieces of skinless white firm fish fillet (such as grouper, bass or halibut)
1 tablespoons extra virgin olive oil
1 tablespoon salted butter
1 cup red bell pepper chopped
2 cloves garlic minced
9 ounces fresh baby spinach (from two bags)
2 ounces 1/3 less fat cream cheese (I like Philadelphia)
¼ cup half & half cream
3 tablespoons grated Parmesan cheese
kosher salt
fresh black pepper

Steps:

  • In a large skillet over medium heat add 1/2 tablespoon of olive oil and 1/2 tablespoon of butter, red bell pepper and garlic and cook for about 4 minutes.
  • Add spinach season with a pinch of salt and pepper mix until the spinach wilts down.
  • Add cream cheese, half & half and parmesan cheese mix well until cream cheese is melted and resembles creamed spinach.
  • Heat a separate skillet on medium high heat, add remaining oil and butter.
  • Season fish on both sides with salt and pepper and place on the hot pan.
  • Cook 6 minutes on first side and flip fish over and cook other side an additional 5 minutes, until cooked through and browned.
  • Divide the spinach mixture on the bottom of each plate and top with piece of fish.

1 can (18.5 oz) Progresso™ Traditional New England clam chowder
1 cup milk
1/2 cup shredded Parmesan cheese (2 oz)
2 cloves garlic, minced
2 tablespoons olive oil
1 1/2 lb uncooked peeled deveined large shrimp, tails peeled
1 package (8 oz) sliced fresh mushrooms (3 cups)
4 medium green onions, chopped (1/4 cup)
1/4 to 1/2 teaspoon crushed red pepper flakes
1/2 cup chopped fresh parsley
Salt and pepper to taste, if desired
1/2 cup shredded Parmesan cheese (2 oz), if desired

Steps:

  • In 5- to 6-quart Dutch oven, cook linguine as directed on package. Drain well; return to Dutch oven and cover to keep warm.
  • Meanwhile, in blender, place clam chowder, milk, 1/2 cup Parmesan cheese and the garlic; blend on medium speed until mixture is smooth. Set aside.
  • In 12-inch nonstick skillet or wok, heat oil over medium-high heat until hot. Add shrimp, mushrooms and onions; cook about 5 minutes, stirring frequently, until shrimp turn pink.
  • Stir in pepper flakes and soup mixture; cook until thoroughly heated. Stir in parsley. Add salt and pepper to taste.
  • Pour over cooked linguine in Dutch oven; toss gently to coat. Top individual servings with Parmesan cheese.

1/2 pound small shrimp (unshelled)
1 pound squid (very small calamari, cleaned and cut into 1/2-inch rings)
1 pound mussels (unshelled)
1 pound clams (small littlenecks, unshelled)
1 1/2 teaspoons coarse or Kosher salt (divided)
2 cups cold water (plus more for soaking seafood and cooking pasta)
3/4 cup olive oil (divided)
2 large cloves garlic (chopped)
2 pounds canned tomatoes (preferably imported Italian, undrained)
1/2 cup dry white wine
Salt (to taste)
Pepper (to taste)
1 pound dried perciatelli pasta (preferably imported Italian)
20 sprigs Italian parsley (leaves only)

Steps:

  • Gather the ingredients.
  • Place shrimp, squid, mussels, and small clams in 4 different bowls of cold water with 1/2 teaspoon of coarse salt added to each and soak for 30 minutes.
  • Drain the shrimp and rinse under cold running water, then shell and devein them. Place the shrimp in a small bowl and put the shells in a small saucepan.
  • Pour the 2 cups cold water over shells, place the saucepan over medium heat, and simmer for 30 minutes.
  • Strain the broth (it should yield about 1 cup), discard the shells, and set aside broth until needed.
  • Meanwhile, place a large saucepan with 1/4 cup of the olive oil over medium heat. When the oil is warm, add the garlic and saute for 2 minutes.
  • Add the tomatoes and white wine. Simmer for 30 minutes, seasoning to taste with salt and pepper.
  • Pass the contents of the saucepan through a food mill , using the disc with the smallest holes, and into a flameproof enamel casserole dish.
  • Set the casserole dish over low heat to reduce the liquid for 15 minutes.
  • Meanwhile, drain the squid and rinse under cold running water.
  • Place another medium-sized saucepan with 1/4 cup of the olive oil over low heat. When the oil is warm, add the squid and saute for 5 minutes.
  • Season with salt and pepper and add the shrimp broth a little at a time and simmer until the squid is tender, for 10 to 20 minutes, depending on the size of the squid, adding more broth as it evaporates in order to keep the squid in liquid.
  • Bring a large pot of cold water to a boil and add salt to taste. Once the squid is cooked, add the pasta to the boiling water and cook for 8 to 11 minutes depending on the brand: that is, 1 minute less than for normal al dente.
  • As the pasta cooks , drain the mussels and clams, scrub them under cold water, then place in a large skillet with the remaining 1/4 cup of olive oil. Place over high heat, cover, and cook for 10 minutes, by which time they should be opened. Discard any that remain unopened.
  • Add the shrimp to the pan with the squid and cook for 3 minutes. When the pasta is ready, drain it and transfer it to the skillet with the mussels and clams. Add the tomato sauce with the shrimp and squid, then mix very well and let cook for 1 minute more to let the pasta to absorb some of the sauce.
  • Transfer to a warmed serving platter, sprinkle with the whole parsley leaves, and serve.

Florentine is just the expression given to a dish paired with spinach, so you can have steak Florentine or chicken. I have listed this as fish Florentine rather than stating a particular kind, as I usually make this with sole, but I have made it with cod, and this time I made it with perch. The sauce I think works well with most kinds of firm white fish so take your pick and make your favourite.

800 g frozen spinach or 1 -1 1/4 kg fresh spinach
4 fish fillets (a firm white fish sole, bass, cod etc.)
1 cup mushroom, sliced thinly
1 small brown onion, chopped finely
2 garlic cloves, crushed
1 tablespoon butter
1 tablespoon olive oil
1 1/2 cups milk
1 teaspoon paprika
1 pinch nutmeg
1 pinch cayenne
2 teaspoons cornflour
1/2 cup gruyere, grated
3 tablespoons parmesan cheese
2 -3 tablespoons parmesan cheese (extra to sprinkle over the top.)
3/4 cup dry white wine
1 tablespoon fresh parsley, chopped finely
1 teaspoon dried tarragon
500 g baby new potatoes
8 garlic cloves
3 tablespoons olive oil
20 g of fresh mint, chopped finely

Steps:

  • You will want get the potatoes on first as these take the longest.
  • Potatoes.
  • In a medium bowl mix potatoes with oil and season with salt and pepper. Place in roasting pan with garlic cloves and cook in 200c oven for 30-40 minutes.
  • Serve potatoes and garlic on the side and sprinkle with mint.
  • For the Fish.
  • In a saucepan bring some water to a boil and add spinach, for fresh cook until just wilted, for frozen cook until thawed, drain, let it cool and then squeeze excess liquid out.
  • In a pan combine oil and butter and heat, add onions and cook until soft, add mushrooms and garlic, cook until mushrooms are slightly browned and soft set to one side.
  • For the Sauce.
  • Heat milk in a pan, add cayenne, nutmeg and paprika. When milk is almost boiling mix a little water with cornflour and pour into milk, stirring until mixture thickens.
  • Add the cheeses, reserving the few tablespoons of Parmesan for the top, stir until melted.
  • Poaching fish.
  • In a large pan mix wine with herbs, add fish and poach for about 8 minutes until fish flakes but is not falling apart.
  • Assembly.
  • Mix mushroom and onion mixture into spinach, spoon into the bottom of a casserole dish covering the bottom.
  • Lay fish fillets on top of the spinach, Pour the sauce over fillets, sprinkle with remaining Parmesan cheese.
  • Grill until browned on top and bubbling.
  • While I am grilling fish I put my potatoes over low heat on stove top to keep warm.

½ pound raw shrimp (peeled and deveined)
½ pound squid or calamari (cut into slices)
½ pound bay scallops
2 tablespoons of butter
2 tablespoons of finely chopped white onion
6 garlic cloves (crushed or minced)
¼ cup white wine
½ cup heavy cream
Salt and pepper to taste
Chopped parsley
Patacones/tostones (or fried green plantains)
Rice (Latin style)
Tomato and onion curtido side salad
Bread

Steps:

  • Season the seafood with a sprinkle of salt.
  • Melt the butter over medium heat in a large skillet.
  • Add the onion and garlic, cook for about two minutes.
  • Add the shrimp and cook for 1 minute.
  • Add the white wine, mix well and cook over high heat for 1 minute.
  • Add the heavy cream and cook until the shrimp are almost done.
  • Add the squid and bay scallops, cook for about two minutes or until done, and immediately remove from heat.
  • Taste and add salt if needed. Add ground black pepper to taste.
  • Mix in the chopped parsley.
  • Serve the mixed seafood in garlic sauce immediately. You can serve it as an appetizer with bread. It can also be served as a main dish with rice, fried green plantains, salad, etc.

1 pound haddock, cut into bite-sized pieces
1 pound shrimp, peeled and deveined
1 pound sea scallops, cut into bite-sized pieces
2 medium sweet potatoes, peeled, halved, and boiled until fork tender
1 bag baby spinach leaves, rinsed and stems removed
2 cups heavy cream, plus 2 cups
Salt and freshly ground black pepper
1 cup fresh grated Parmesan
Fresh parsley, for garnish

Steps:

  • Preheat the oven to 350 degrees F.
  • In a mixing bowl, combine haddock, shrimp, and scallops and mix well. Spray a medium-sized casserole dish lightly with baking spray. Sliced the cooked sweet potatoes very thinly. Layer sliced sweet potato in the bottom of the baking dish and cover with uncooked baby spinach leaves. Gently pour 2 cups cream over the potatoes and spinach. Season with salt and pepper. Sprinkle with 3/4 of the Parmesan, then add the seafood mixture. Cover with remaining 2 cups cream and Parmesan.
  • Bake for 25 to 30 minutes. When ready to serve, garnish lightly with fresh chopped parsley or put a sprig of parsley on side of dish.

1 onion, chopped
1 garlic clove, chopped
1 tsp paprika
400g can chopped tomatoes
1l chicken stock (from a cube is fine)
300g spaghetti, roughly broken
240g frozen seafood mix, defrosted
handful of parsley leaves, chopped, and lemon wedges, to serve

Steps:

  • Heat the oil in a wok or large frying pan, then cook the onion and garlic over a medium heat for 5 mins until soft. Add the paprika, tomatoes and stock, then bring to the boil.
  • Turn down the heat to a simmer, stir in the pasta and cook for 7 mins, stirring occasionally to stop the pasta from sticking. Stir in the seafood, cook for 3 mins more until it's all heated through and the pasta is cooked, then season to taste. Sprinkle with the parsley and serve with lemon wedges.

A light version of baked stuffed portobello mushrooms, suitable for Phase 1 of the South Beach diet and probably other diets as well. Submitted for Ready Set Cook Winter 2005. Note: spinach or mushroom haters should avoid this recipe.

4 portabella mushrooms
2 teaspoons lemon juice
2 teaspoons olive oil
1/2 teaspoon dried basil
5 cups chopped fresh spinach
3 garlic cloves, minced
1/2 teaspoon lemon juice
1/2 teaspoon olive oil
1 teaspoon dried basil
2 eggs
4 tablespoons grated lowfat mozzarella cheese (or a little more if you prefer)
salt and pepper (to taste) (optional)

Steps:

  • Brush the mushrooms and remove the stem and scoop out some of the gills so that a shallow cup is formed.
  • Chop the stems and gills into small pieces.
  • Mix 2 teaspoons olive oil, 2 teaspoons lemon juice and 1/2 teaspoon basil in a small glass bowl for a minute or so until well combined (should be cloudy looking).
  • Turn the mushrooms gill side down on a nonstick baking pan and brush the non-gill side throughly with the olive oil mixture, sprinkle with a little salt and pepper as desired.
  • Preheat the oven to 350 degrees F.
  • Use the brush to coat a non stick frying pan with any remaining olive oil mixture then add 1/2 teaspoon more olive oil, the garlic and chopped mushroom and cook over medium heat for about 5 minutes stirring frequently.
  • Add the spinach, 1 teaspoon basil and 1/2 teaspoon lemon juice and cook stirring frequently for another 5 to 10 minutes until the spinach is completely wilted, remove from heat and add salt and pepper if desired.
  • Whisk the eggs until yolk and white are well combined and then mix in the spinach mixture.
  • Flip the mushrooms so that the gill side is upward and divide the spinach mixture evenly between the mushrooms being careful not to spill egg on the pan.
  • Sprinkle each mushroom with 1 tablespoon grated mozzarella cheese.
  • Bake for 25-30 minutes until the mushrooms are done and cheese is lightly browned.
