This mint and feta cheese rice is simple delicious. Perfect as a side dish.

1 cup rice (basmati)
2 tablespoons olive oil (extra virgin)
½ medium onion (chopped)
2 cloves garlic (minced)
16 ounces broth (chicken or vegetable)
½ cup Feta cheese (diced)
3 tablespoons mint (minced)

Steps:

  • Heat olive oil in a medium sized Dutch oven over medium-high heat. Add chopped onions and minced garlic and sauté for about 5 minutes until translucent and soft.
  • Add rice and cook for one minute. Add broth and bring to a boil.
  • Reduce the heat to a simmer and cook for about 20 minutes or until all the liquids have dissolved.
  • Meanwhile finely mince fresh mint and cut the Feta cheese into ¼ inch cubes.
  • Remove the rice from the oven and use a fork to fluff the rice. Add minced mint and Feta cheese and combine well. - Serve and Enjoy.

2 tablespoons olive oil
1 small onion, minced
1 cup long grain brown rice, well-rinsed
1 3/4 cups chicken stock
salt, pepper, to taste
3/4 cup cumbled feta cheese
3 tablespoons minced of fresh mint
1 tablespoon freshly grated orange zest

Steps:

  • Heat the oil in a medium saucepan over medium heat. Add the onion and garlic, saute 5 minutes or until translucent.
  • Add the rice and stir to coat. Add the stock, salt, and pepper and bring to a boil. Lower the heat and simmer, covered, for 45 minutes or until all liquid is absorbed. Remove from heat and let pan stand, covered, for 5 to 10 minutes.
  • Using a fork, fluff the rice and toss in the feta, mint, and orange zest just to combine. Serve hot or at room temperature.

4 large garlic cloves, unpeeled
0.25 cup roasted, salted pistachios
0.5 cup packed fresh basil leaves
0.5 cup packed fresh mint leaves
1 teaspoon lemon juice
0.5 cup extra-virgin olive oil
Coarse salt and freshly ground black pepper

Steps:

  • Heat a small skillet over medium. Add the unpeeled garlic cloves. Cook 7 to 10 minutes or until the skins are browned and the cloves are softened, shaking skillet occasionally. Remove from skillet; let cool.
  • Remove garlic skins and transfer cloves to a food processor along with the pistachios, basil, and 1/4 cup mint; pulse until very coarsely chopped, about five pulses. Add the lemon juice and a pinch of coarse salt. With machine running, add 1/3 cup of the olive oil; process until combined. Transfer mixture to a bowl.
  • Coarsely chop the remaining 1/4 cup mint leaves and stir into the pistachio mixture. Stir in the remaining olive oil. Season with salt and freshly ground black pepper. Serve sauce immediately, or press a sheet of plastic wrap directly onto the surface of the sauce and refrigerate 1 to 2 hours. Stir sauce to reemulsify before serving. Makes 3/4 cup.

1 pound orzo
1/2 cup extra-virgin olive oil
1 medium shallot, finely chopped
1 clove garlic, peeled and smashed
2 pints cherry tomatoes, quartered
1 cup crumbled feta
1 cup arugula
1/2 cup chopped fresh mint
3 tablespoons white balsamic vinegar
1 1/4 teaspoons kosher salt, plus for the pasta water
1/4 teaspoon freshly ground black pepper

Steps:

  • Bring a large pot of salted water to a boil over high heat. Add the orzo and cook until tender but still firm to the bite, about 7 minutes.
  • While the pasta is cooking, heat 1/4 cup of the olive oil in a large saute pan over medium-low heat. Add the shallots and garlic, and saute until the shallots begin to soften and the garlic is fragrant, about 1 minute. Add the cherry tomatoes and cook just to warm through, about 1 minute.
  • Add the warm tomato mixture to a large bowl along with the feta, arugula, mint, balsamic vinegar, salt and pepper. Drain the orzo and add it to the bowl. Drizzle with the remaining 1/4 cup olive oil. Toss well and serve.

Steps:

  • Pomegranate relish:
  • Place a rack in upper third of oven; preheat to 350°F. Toast walnuts on a rimmed baking sheet, tossing once, until golden brown, 5-8 minutes. Let cool, then coarsely chop. Increase oven temperature to 450°F.
  • Toss walnuts, pomegranate seeds, olives, oil, mint, parsley, pomegranate molasses, and garlic in a medium bowl to combine. Season with salt and pepper.
  • Rice and assembly:
  • Combine rice, butter, and salt in a 13x9" baking dish, then pour in a scant 3 1/2 cups water; top with mint sprigs. Cover tightly with foil and bake until rice is tender and water is absorbed, 30-35 minutes. Remove from oven; pluck out mint. Fluff rice with a fork.

250g pack beetroot , peeled, cooked or raw
juice 1 lemon
3 tbsp olive oil
1 garlic clove , crushed
2 heads chicory (or crunchy lettuce)
200g pack feta cheese
bunch mint
handful toasted almonds or walnuts (optional)

Steps:

  • Using a coarse grater or food processor, grate the carrots and beetroot. In a large bowl, whisk together lemon juice, olive oil and garlic. Season to taste, then toss the carrot and beetroot through the dressing along with the leaves from the chicory (or a crunchy lettuce). Crumble the feta cheese, roughly tear the mint leaves and toss them through the salad. Add crunch with a handful of toasted almonds or walnuts, if you like.

Most of us immediately reflect on mom's home kitchen when it comes to our first grilled cheese experience. But chances are you ate your first restaurant grilled cheese in one of the many Greek-run diners in this country, especially if you lived along the Eastern Seaboard. This grilled cheese is an homage to that heritage. The olives in the bread heighten the saltiness of the feta; the lamb, a Greek staple, provides a gaminess to balance the saltiness; and the pomegranate and cucumber in the mint salad bring a unique freshness. And once you enjoy the crunch of fried chickpeas, you'll start adding them to nearly everything you make. I know I do.

12 ounces feta cheese, crumbled
8 slices olive bread
2 tablespoons canola oil
8 ounces ground lamb
Pinch of kosher salt
1 tablespoon chopped fresh oregano
1 tablespoon chopped fresh mint
Leaves from 2 bunches mint
1/2 red onion, thinly sliced
1/2 cucumber, thinly sliced
1/2 cup pomegranate seeds
1/4 cup fresh lemon juice
1/4 cup olive oil
1/2 gallon canola oil, for deep-frying
1 cup drained canned chickpeas
Pinch of chili powder
Pinch of kosher salt
4 tablespoon unsalted butter, for finishing

Steps:

  • To make the lamb, in a cast-iron or other heavy skillet, heat the oil over high heat. Add the lamb and cook, stirring to break up the meat with a wooden spoon, until it begins to brown. Add the salt, oregano, and mint and continue to cook, stirring occasionally, for about 4 minutes, until the lamb is cooked through. Remove from the heat.
  • To make the salad, combine all of the ingredients in a bowl and stir to mix well.
  • To fry the chickpeas, pour the oil to a depth of 1 to 2 inches into a heavy saucepan or deep sauté pan and heat to 350 degrees F on a deep-frying thermometer. Add the chickpeas and fry for about 5 minutes, until browned and crisp. Drain the chickpeas on a plate lined with paper towels. Transfer to a bowl. Sprinkle with the chili powder and salt and toss to coat evenly.
  • Line up half of the bread slices on a work surface. Top each slice with 2 ounces (about 1/3 cup) of the cheese, one-fourth each of the lamb, salad, and chickpeas, and then finish with another 1 ounce (about 2 1/2 tablespoons) of the cheese. Close the sandwiches with the remaining bread slices.
  • Line a large platter with paper towels. In a skillet over high heat, melt 1 tablespoon of the butter. Turn down the heat to low, add 1 sandwich, and cook, turning once, for 2 to 3 minutes on each side, until browned and crisp on both sides and the cheese is melted. Transfer to the prepared platter to blot the excess grease. Repeat with the remaining butter and sandwiches.
  • Cut the sandwiches in half, plate, and serve.

The authors call for using a 6 cup rice cooker, but I've had no problems using my 3 cup model. Cooking time includes 20 minutes resting time for the rice. This can also be made with brown rice- just increase the chicken stock to 2 2/3 cups.

2 cups chicken stock
2 tablespoons olive oil
2 small boiling onions, chopped
1/4 cup pine nuts
1/4 cup fresh lemon juice

1 cup crumbled feta
1 lemon, cut in 8 wedges

Steps:

  • Coat the rice bowl with cooking spray.
  • Add the rice and stock to the bowl.
  • Set the machine for the regular white rice cycle and start.
  • When the machine switches to keep warm, let it sit and steam for 10 minutes.
  • While the rice steams, heat the olive oil in a small skillet, then add the onions and cook for 5 minutes, stirring frequently, until soft.
  • Add the pine nuts and cook, stirring constantly until they turn golden (just a minute or so).
  • When the 10 minutes of steaming are up, add the onion and pine nut mixture to the rice, along with the lemon juice, dill, and mint (if using). Stir with a plastic rice paddle or a wooden spoon to combine.
  • Close the cover and continue on 'keep warm' for 10 more minutes.

2 large aubergines
4 tsp tamarind paste
2 tsp sesame oil
1 red chilli , deseeded and thinly sliced
1 tbsp sesame seeds
200g black rice
6 spring onions , finely sliced
100g feta , crumbled
2 small packs mint , roughly chopped
small pack coriander , roughly chopped, reserving a few leaves, to serve
zest 1 large lime
2 tbsp dark soy sauce
juice 1 lime
5cm/2in piece ginger , peeled and finely grated (juices and all)
pinch of sugar

Steps:

  • Heat oven to 200C/180C fan/gas 6. Cut the aubergines in half lengthways and, with the tip of a knife, score the flesh deeply in a criss-cross diamond pattern - but don't pierce the skin. Press on the edges of the halves to open the cuts. In a small bowl, combine the tamarind paste and sesame oil. Brush the mixture over the aubergine, pushing it into the cuts. Place on a baking tray, sprinkle over the chilli and sesame seeds, then roast, cut-side up, for 25-35 mins or until the flesh is really soft.
  • Put the rice in a small sieve and wash under running water for 1 min until the water runs clear. Tip the rice into a small saucepan and add 650ml cold water. Bring to the boil, reduce the heat and simmer for about 35 mins until the rice is tender. Drain under cold running water.
  • Make the dressing by whisking all the ingredients together with a pinch of salt. Adjust the seasoning to taste, adding a little more sugar, salt or lime juice, if you like.
  • In a big bowl, mix together the black rice, spring onions, feta, mint, chopped coriander, and the lime zest and dressing. Sprinkle the reserved coriander leaves over the aubergine halves and serve with the rice.
