8 tablespoons olive oil
1 cup (packed) fresh basil leaves
2 large shallots
4 garlic cloves
Nonstick vegetable oil spray
1 1/2 pounds red-skinned new potatoes
1 1/2 pounds Yukon Gold potatoes (each about 1 1/2 inches in diameter)
1 pound purple potatoes (each about 1 1/2 inches in diameter)
3/4 cup freshly grated Parmesan cheese

Steps:

  • Blend 4 tablespoons olive oil, basil, shallots, and garlic in processor until smooth. Season basil sauce to taste with salt and pepper. (Can be made 8 hours ahead. Cover and refrigerate.)
  • Preheat oven to 400°F. Spray large baking sheet with nonstick spray. Toss all potatoes with 4 tablespoons olive oil, salt, and pepper in large bowl to coat. Transfer to prepared baking sheet. Roast potatoes until almost tender, about 35 minutes. Pour basil sauce over potatoes and toss to coat. Continue roasting potatoes until golden brown and tender when pierced with skewer, about 20 minutes longer.
  • Transfer potatoes to serving bowl. Add cheese and toss to coat.

1 package (32 ounces) frozen cubed hash brown potatoes, thawed
2 cups shredded cheddar cheese, divided

Steps:

  • In a 4-qt. slow cooker, combine the first 6 ingredients. Stir in hash browns and 1-1/2 cups cheese. Cook, covered, on low until potatoes are tender, 4-5 hours, sprinkling with remaining cheese during the last 5 minutes.

6 sun-dried tomatoes packed in oil, drained, minced
2 tablespoons minced shallots

1/4 teaspoon white pepper
1 1/2 cups grated mozzarella cheese (about 6 ounces)
1 1/2 cups grated Jarlsberg cheese (about 5 ounces)

Steps:

  • Preheat oven to 375°F. Place potatoes in 18x12-inch rimmed baking sheet. Mix cream, sun-dried tomatoes, shallots, garlic, pesto and white pepper in large bowl to blend. Steps:

  • Place potatoes and garlic cloves in a large saucepan; cover with water. Bring to a boil. 1 small onion, chopped
3 cloves garlic, minced
1 (2 pound) package frozen hash brown potatoes, thawed
3 cups shredded Mexican cheese blend
1 pint sour cream
1 (10.75 ounce) can condensed cream of chicken soup
2 cups crushed corn flakes
2 tablespoons melted butter
2 teaspoons garlic salt

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Melt 6 tablespoons butter in a saucepan over medium heat; cook and stir onion and garlic until onion is slightly softened, 5 to 10 minutes.
  • Mix potatoes, Mexican cheese blend, sour cream, cream of chicken soup, and onion mixture together in a bowl; pour into a 9x13-inch baking dish.
  • Mix corn flakes, melted butter, and garlic salt together in a bowl; sprinkle over potato mixture. Cover baking dish with aluminum foil.

5 large russet potatoes, peeled and cut into about 1/2-in pieces
2 cups whipping cream
6 -7 sun-dried tomatoes (packed in oil and minced)
2 tablespoons minced shallots (or use finely chopped yellow onions)
2 tablespoons minced garlic (can use more)
2 tablespoons pesto sauce, can use a bit more if desired (store-bought or homemade, I use my Kittencal's Perfect Pesto for this)
black pepper
3 cups grated mozzarella cheese (can use more)
salt

Steps:

  • Set oven to 375 degrees,.
  • Place the cubed potatoes in a large baking sheet in one layer if possible.
  • Sprinkle with salt and pepper.
  • In a bowl, mix together sun-dried tomatoes, whipping cream, shallots, garlic, pesto and black pepper; pour over the potatoes and toss gently to coat.
  • Sprinkle with mozzarella cheese.
  • Bake the potatoes until fork-tender and the cheese is lightly browned (about 45 minutes).
  • Season with salt.
  • **NOTE** if desired you can sprinkle the cheese on top the last 20 minutes or so of baking.
