2 tablespoons balsamic vinaigrette, divided
3 cups fresh baby spinach
1/4 cup cubed avocado
1 tablespoon chopped walnuts, toasted
1 tablespoon sunflower kernels, toasted
1 tablespoon dried cranberries

Steps:

  • Drizzle salmon with 1 tablespoon vinaigrette. Place on a broiler pan coated with cooking spray. Broil 3-4 in. from the heat for 10-15 minutes or until fish flakes easily with a fork. Cut salmon into 2 pieces., Meanwhile, in a large bowl, toss spinach with remaining vinaigrette. Divide between 2 plates. Top with the salmon, avocado, walnuts, sunflower kernels and cranberries.

2 salmon fillets (4 ounces each)
1/4 teaspoon salt
1/8 teaspoon pepper
1 teaspoon canola oil
4 cups fresh baby spinach
2 tablespoons balsamic vinaigrette
1/2 medium ripe avocado, peeled and cubed
2 tablespoons dried cranberries
2 tablespoons sunflower kernels or pepitas (salted pumpkin seeds)
2 tablespoons chopped walnuts, toasted, optional

Steps:

  • Sprinkle salmon with salt and pepper. In a large nonstick skillet, heat oil over medium heat. Add fillets, skin side up; cook until fish just begins to flake easily with a fork, 4-5 minutes on each side., In a large bowl, toss spinach with vinaigrette; divide between 2 plates. Place salmon over spinach; top with remaining ingredients. Serve immediately.

My sister attended a cooking class and she sent me this recipe, it's not just pretty on the plate but also delicious.

2 tablespoon(s) olive oil, extra virgin
16 ounce(s) salmon filets divided skin off
6 ounce(s) fresch baby spinach
1 tablespoon(s) fresh garlic chopped
1/2 cup(s) shredded parmesan
20 - cherry tomatoes 10 each serving
- salt and pepper
- lemon

Steps:

  • Preheat oven to 375. Heat 3 Tbl olive oil until smoking. Sprinkle salmon with salt and pepper and carefully place in the saute pan.
  • Sear the salmon for 3-4 minutes on each side, or until the salmon has a golden crust.
  • Remove salmon from pan and place in oven to finish approximately 5 minutes
  • While salmon is finishing, pour out the used oil from the saute pan, but do not clean. Add fresh 2 tbl of olive oil and heat until just smoking. Add the cherry tomatoes to the pan and cook for 1 minute. Add fresh garlic to the pan and cook 1 minute, Add the baby spinach to the pan and cook for 1 minute constantly fluffing the tongs. Remove from heat, add Parmesan cheese, and fluff until melted into the spinach.
  • Plate the spinach mix. Remove salmon from oven and serve over the spinach. Squeeze the juice of the lemon over the salmon and serve

4 tablespoons high-quality balsamic vinegar
1 teaspoon Dijon mustard

1 pound salmon filets, with skin

1 (5 ounce) package fresh baby spinach
1 medium red bell pepper, chopped
8 medium fresh mushrooms, sliced
16 large fresh strawberries, sliced
4 tablespoons chopped pecans
4 slices cooked bacon, crumbled

Steps:

  • Combine olive oil, balsamic vinegar, Dijon mustard, salt, and pepper in a small bowl for the vinaigrette. Stir briskly to combine.
  • Brush salmon with 1 teaspoon of the vinaigrette on the cut side, and season with salt and pepper. Reserve the remaining vinaigrette.
  • Clean the grates of an outdoor grill and preheat to 375 degrees F (190 degrees C).
  • Place the salmon on a grilling mat or fish grill basket on the hot grill, skin side down. Grill for about 10 minutes. Using a turner, carefully flip the salmon, or turn the grill basket, and cook for 4 to 5 minutes more. Salmon should flake easily with a fork when done. An instant-read thermometer inserted into the center should read at least 145 degrees F (63 degrees C).
  • Transfer salmon to a plate, tent with foil, and allow to rest while preparing the salad.
  • Combine spinach, red bell pepper, mushrooms, strawberries, and reserved vinaigrette in a large bowl. Toss to combine. Remove skin from salmon and flake.
  • Divide salad among individual plates, top with flaked salmon, and garnish with chopped pecans and crumbled bacon.

1/2 teaspoon Greek seasoning
1/2 cup quinoa, rinsed

1 cup grape tomatoes, halved
1/4 cup crumbled feta cheese

3 day-old plain bagels, halved horizontally and cut into pieces
2 to 3 tablespoons olive or canola oil
1 teaspoon poppy seeds
1 teaspoon sesame seeds
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
Kosher salt
1 teaspoon finely grated lemon zest
3 tablespoons lemon juice
3 tablespoons finely chopped fresh dill
2 tablespoons capers in brine, drained
1 tablespoon Dijon mustard
Kosher salt and freshly ground black pepper
1/2 cup extra-virgin olive oil
4 ounces smoked salmon or lox, sliced paper thin and torn into pieces
2 tablespoons cream cheese, softened but cool, torn into rough chunks
4 ounces baby spinach
1 small bulb fennel, sliced paper thin
1/2 English cucumber, sliced paper thin
1/2 small red onion, thinly sliced

Steps:

  • For the croutons: Preheat the oven to 350 degrees F. Put the bagel pieces in a large bowl, drizzle with the olive oil, and toss to coat. Add the poppy seeds, sesame seeds and some salt; toss again. Spread the bagel pieces out in a single layer on a baking sheet and bake until light golden brown and crispy, 8 to 10 minutes.
  • For the vinaigrette: Put the lemon zest and juice, dill, capers, mustard, and some salt and pepper in a medium bowl; whisk to combine. Slowly whisk in the olive oil to make a thick creamy dressing. Taste, and season with salt and pepper.
  • For the salad: Put the croutons, smoked salmon and cream cheese in a large bowl, and then mound the spinach, fennel, cucumber and red onion on top. Spoon some of the vinaigrette around the side of the bowl and toss gently to coat the salad with dressing. Spoon the remaining vinaigrette nicely on individual serving plates and gently mound some salad on top. Serve immediately.

salmon - two 8-to 9-ounce (225 to 250g) pieces
olive oil
spinach - 1 pound (500g)
For the Salad
lemons - 2
superfine sugar - 2 teaspoons
olive oil - 2 tablespoons
flat-leaf parsley - a small bunch
capers - a heaping tablespoon

Steps:

  • Brush the salmon on both sides with olive oil, then season with salt. Get a nonstick frying pan hot. Place the fish, skin side down, in the pan and cook over medium heat for four or five minutes, until the skin has crisped. Turn, cover with a lid, and cook for a further five minutes or so, until the fish is lightly cooked through to the center.
  • Meanwhile, make the salad by cutting away the skin and white pith from the lemons with a sharp knife and slicing the lemons thinly. Put them into a bowl with the sugar, olive oil, and a good handful of parsley leaves, left whole. Add the capers and toss the salad gently. Let sit for a few minutes, during which time the sharpness of the lemon will mellow a little.
  • Wash the spinach thoroughly, then steam in a lidded pan for a minute or two, until tender. Drain.
  • Put the lemon salad and the spinach on warm plates and slide on the salmon.

zest and juice ½ small lemon
pinch smoked paprika (we used sweet smoked paprika)
1 tbsp extra-virgin olive oil
100g bag young leaf spinach
2 x 140g (2 x 5oz) skinless salmon fillets
400g can chickpeas

Steps:

  • Heat the grill. Squash the pepper quarters flat and grill for 5 mins or until well blackened. Leave the grill on, then transfer the peppers to a bowl, cover with cling film and leave to cool slightly before peeling off the skins and cutting the flesh into strips.
  • Make the dressing by whisking together the lemon zest, juice, smoked paprika, olive oil and seasoning. Toss half the dressing with the spinach leaves and divide between 2 bowls.
  • Season the salmon and grill for 5 mins or until just cooked through. Meanwhile, heat the chickpeas in their canning liquid in a saucepan for 3-4 mins. Drain well, then mix with the remaining dressing and strips of pepper. Spoon over the spinach and top with the salmon to serve.

4 tbsp extra virgin olive oil
salt and freshly ground black pepper
350g/12oz salmon fillet
450g/1lb fresh spinach, washed
2 tbsp toasted pine nuts
Extra virgin olive oil for drizzling

Steps:

  • Heat 2 tbsp extra virgin olive oil in a pan and fry seasoned salmon fillet skin side down to begin. Watch carefully and when the fish has cooked up to almost halfway up the side edge, turn over and cook the other side for around 2 minutes, depending on thickness. This ensures perfectly cooked, moist fish. Remove from pan and keep warm. Add remaining oil to another pan and add spinach. Lightly wilt, then season and add toasted pine nuts. Place in a large shallow bowl. Peel the skin away from the salmon fillet and break the flesh into large chunks. Add to spinach and gently toss. Drizzle with extra virgin olive oil.

  • Preheat oven to 425F. Peel the beets and cut into thin wedges. Toss with a tablespoon of olive oil and season with salt and pepper. Spread on a rimmed baking tray and roast until fork-tender, about 30 minutes.
  • Place a skillet over medium-high heat. Melt the butter together with a teaspoon of oil in the pan. Season the salmon generously with salt and pepper and place, skin side up, into the sizzling butter. Sear the salmon for 2 minutes, then flip so that the skin is down and send the pan to the oven.
  • Roast the salmon for 5 - 7 minutes or until it is cooked though but still slightly pink inside. Remove from the oven and cool slightly.
  • In a small bowl, whisk together balsamic, minced garlic and dijon with a pinch of salt and pepper. Drizzle in the remaining olive oil.
