CHUNKY MONKEY BANANA BREAD
My Chunky Monkey Banana Bread recipe is moist and tender with an intense banana flavor, sweet chocolate chips and crunchy walnuts.

Steps:
- Preheat oven to 325 degrees F and spray a 9" loaf pan generously with cooking spray or line with parchment paper.
- Cream together the butter and sugar until light and fluffy. Stir in eggs one at a time until well combined.
- In a separate bowl, mash the bananas with a fork. Stir in milk. Add the banana mixture to the butter mixture and stir until combined.
- In another bowl, sift together the flour, baking soda, baking powder and salt. Add the dry mixture to the wet mixture and still just until combined - do not overmix.
- Gently fold in chocolate chips and walnuts.
- Pour batter into the prepared loaf pan. Bake for 1 hour or until golden brown and a toothpick inserted into the center comes out clean.
- Cool in the pan for half an hour before removing and transferring to a wire rack to cool completely.

VEGAN CHOCOLATE CHIP BANANA BREAD

- Preheat the oven to 350°F (180°C). Spray a 9x5 inch loaf pan with non-stick spray and cut out parchment paper to line the bottom.
- Sift the flour into a mixing bowl and add the white granulated sugar, light brown sugar, baking powder, salt, cinnamon and nutmeg and mix together.
- Measure the correct amount of banana and add it to your blender jug along with the soy milk and coconut oil. Blend until just blended.
- Prepare your flax egg by mixing 1 Tablespoon ground flaxseed with 3 Tablespoons Hot Water and allowing to sit for a minute until it becomes gloopy.
- Pour the blended banana mix over the dry ingredients and add the flax egg and mix into a thick batter.
- Add the vegan chocolate chips and fold them in.
- Pour the batter into your prepared loaf pan and spread it out evenly. Sprinkle vegan chocolate chips on top.
- Place into the oven and bake for 60-70 minutes or until a toothpick inserted into the center comes out clean (melted chocolate is fine, wet batter is not).
- Let it cool in the pan for a few minutes before transferring it to a wire cooling rack to cool.

- 1. Preheat oven to 375 degrees F. 2. In a big bowl, combine all dry ingredients and sift well with a fork or a whisk. In a medium bowl, mash the bananas, leaving some small chunky bits. Add the oil and lemon juice to the bananas, and combine well. 3. Add the wet ingredients and the chocolate chips to the big bowl with the dry ingredients, and combine well until just mixed. (Don't overmix-when in doubt, just stop, since it's better that two chocolate chips are touching than that your loaf is tough). 4. Pour the batter into a loaf pan or 2 mini loaf pans. Bake for 45-50 minutes (big loaf) or 25 minutes (small loaf). Since heat varies by the oven, you should check the loaves using the toothpick method. When it's golden on top and toothpick comes out clean, it's done. Enjoy!

Steps:
- Cut two bananas into half coins.
- Cut one banana into coins and line the bottom of a greased bundt pan.
- In a bowl mix sugar and cinnamon, set aside.
- Preheat oven to 350˚F (180˚C).
- Cut each biscuit round in half and flatten into rounds.
- Stuff each round with one piece of the halved banana coins and chocolate chips. Close the round together by pinching at the seam and roll into a ball in your hands.
- Place the balls in the cinnamon sugar mix and gently toss to coat. Place half the balls in the pan.
- In a saucepan over medium heat melt the butter and brown sugar until one, stirring occasionally. Set aside to cool.
- Pour half of the glaze on top.
- Sprinkle a handful of chocolate chips over top. Then place rest of the balls on top followed by the rest of the glaze.
- Bake for 40-50 minutes until the crust is a deep dark brown on top. (If the top is browning too much you can cover it with aluminum foil.)
- Remove from oven and allow it to cool or about 15-30 minutes before turning it over onto a plate.

CHOCOLATE CHUNK BANANA BREAD
Everyone has their favorite banana bread recipe, and this one, from Hot Chocolate chef Mindy Segal, happens to be ours-in large part because it's studded with chocolate chunks!

- Melt the chocolate in a double boiler, stirring occasionally with a rubber spatula. (Alternatively, use a heatproof bowl set over a pot of simmering water, making sure the bottom of the bowl is not touching the water.) Flip a sheet pan upside-down, spray it with nonstick baking spray, and line it with parchment paper. Using an offset spatula, spread the melted chocolate in an even layer over the parchment paper. Place in the freezer to set, 30 minutes.
- In a small bowl, combine water and flax meal. Set aside to thicken, 30 minutes and up to overnight.
- Preheat oven to 350 F. Combine dry ingredients in a mixing bowl: both flours, baking powder, baking soda, salt, and cinnamon. Set aside.
- Put the bananas and vanilla extract in a plastic deli container, then purée with an immersion blender, 30 seconds. Add the puréed banana to a large mixing bowl along with canola oil, apple cider (or orange juice), the flax mixture, and the sugar. Stir to combine. Add the dry ingredients and stir just to combine, until there's no visible flour. Stir in the chopped pecans.
- Pull chocolate from the freezer and break it up into shards. Using a rubber spatula, fold the shards into the batter. The folding motion will further break up the chocolate, which is okay.
- Spray a standard loaf pan with nonstick baking spray. Scrape batter into the pan and smooth out the top. Tap the pan on a hard surface to settle the batter. In a small bowl, mix the sugar and cinnamon and sprinkle on top of the batter. Bake 1 hour.
- Banana bread is done when a cake tester comes out clean. Let cool completely in the pan, then run a knife around the edge, invert onto a plate, slice, and serve.
