  • Preheat a 10-inch skillet over medium heat. Add oil; swirl to coat pan.
  • Add remaining ingredients. Cook, flipping over occasionally, for about 10 minutes, or until potatoes are lightly browned. Serve immediately.

1 -20 ounce Simply Potatoes® Shredded Hash Browns
1 large egg, beaten
4 tablespoons cornstarch
1/2 lb deli corned beef, cut in strips
1 1/2 cups swiss cheese, shredded

Steps:

  • Preheat oven to 375 degrees.
  • Place the hash browns in a large bowl and sprinkle half of the cornstarch on top. Toss until well-coated. Repeat with the remaining cornstarch. Mix in the beaten egg.
  • Divide the mixture evenly among 9 standard muffin tin cups that have been greased. Press the mixture to the bottom and sides of the cup. Bake 20-23 minutes or until golden brown.
  • Fill the baked hash brown cups with equally divided amounts of the corned beef strips. Top with equal amounts of the shredded cheese. Bake an additional 7-9 minutes.
  • Let cool 5 minutes. Carefully loosen the edges of cups using a knife. Use a fork to remove each tater cup.

Steps:

  • Heat vegetable oil on medium high heat, add the Simply Potatoes Diced Potatoes with Onions, and cook according to directions until lightly browned.

1 lb 80% lean ground chuck
12 ounces mixed vegetables
23 3/4 ounces prego chunky garden spaghetti sauce
1 1/2 cups grated gouda cheese

Steps:

  • Preheat oven to 450.
  • Brown Ground chuck in a skilliet.
  • Heat mixed vegetables in the microwave with 1/2 cup of water.
  • Once the beef is brown, put the vegetables in the beef and simmer for 5 minutes.
  • Drain the beef/vegetable mixture.
  • Put back in the skillet and add spaghetti sauce and simmer for 10 minutes.
  • Meanwhile,add 1 cup of the gouda cheese to the potatoes and microwave for 1 1/2 minutes.
  • Pour the beef mixture into a 9x9 casserole dish.
  • Put the potato mixture on top and top with remaining gouda cheese.
  • Brown in the oven until the cheese is slightly golden.

2 lbs top sirloin steaks, 1/2 - 3/4 inches thick cut into 4 pieces
2 (8 ounce) packages sliced button mushrooms
8 tablespoons butter, Divided
1 (20 ounce) package Simply Potatoes® Shredded Hash Browns
2 1/2 teaspoons seasoning salt, Divided

Steps:

  • For the steak: If using a grill, preheat to very hot. If using a skillet, spray with cooking spray and preheat to very hot, but not smoking.
  • Melt 4 Tbs. of the Butter in an 8 " skillet over medium high heat . Sprinkle with ½ teaspoons seasoned salt.
  • Add mushrooms and sauté for about 5 minutes until mushrooms are tender. Remove from skillet with a slotted spoon, cover with aluminum foil and set aside to keep warm.
  • Add remaining butter to the skillet used to cook the mushrooms. Sprinkle with ½ teaspoons of the seasoned salt.
  • Blot the Hash Browns with paper towels pressing out most of the liquid. Place hash browns in the skillet and press down firmly with your fingers or a wooden spoon until compressed into the skillet. Sprinkle with another ½ teaspoons seasoned salt. Cover the skillet and cook for 15 minutes over high to medium high heat until very golden brown on the bottom. Do not stir or turn with a spatula while potatoes are cooking. After 15 minutes, lift up edge of the potatoes to see if they are crispy. If not, cook another 5 minutes.
  • While potatoes are cooking, blot steaks with a paper towel, then rub remaining seasoned salt on both sides. Cook on very hot grill or in hot skillet for 2 ½ minutes per side for medium rare. Turn only once so steak gets a nice sear. Remove steak from heat and let rest 5-7 minutes before slicing into ½" wide slices.
  • To assemble: Invert a serving platter over the potatoes and flip so the Hash Browns are in a circle in the middle of the platter. Pour mushrooms on top and in the center of the potatoes. Arrange steak slices around the outside of the potatoes.

1 cup shredded parmesan asiago and romano cheese blend
32 medium peeled and de-veined raw shrimp
1 cup vegetable oil (for frying)
4 -6 ounces refrigerated basil pesto

Steps:

  • Mix the potatoes and cheese.
  • Heat a thin layer of oil in large oil or on griddle, to medium heat.
  • Spread potato mixture in small circles (about 2 tablespoons per circle, spreading to about 2 inches round), in skillet, and place two shrimp in a single layer in center of each.
  • Spread another 2 tablespoons potato mixture on top of each. Cook until golden and crispy on bottom, then turn and cook until golden and crisp on second side, and shrimp is just cooked through.
  • Transfer to drain; keep warm. Repeat until all are cooked (should have 16 rounds).
  • Serve 4 per person, with pesto.

I made these all the time when my children were growing up and now they make them, With the ease of Simply Potatoes they can be made up in no time at all. Be creative, you can add jalapenos, chipotle peppers, onions. Enjoy!!

11 eggs, divided
1 (20 ounce) package Simply Potatoes® Shredded Hash Browns
1 lb bulk hot sausage
6 cups corn flakes, finely crushed
2 cups vegetable oil

Steps:

  • Hard boil 8 eggs, peel, set aside.
  • In a large bowl, place the potatoes. Pat the potatoes with several paper towels, to remove excess moisture.
  • Add sausage and 1 egg. Mix, until well combined.
  • Divide the potato-sausage mixture into 8 balls.
  • After you form each ball, place them on a plate and place them in the refrigerator. Remove 1 ball at a time, from the refrigerator.
  • Using your hands, flatten the potato-sausage mixture, place hard boiled egg on top and pat the potato-sausage mixture around the egg, making certain it is completely covered.
  • Try to keep the potato-sausage mixture an even thickness as you form a layer around each hard boiled egg.
  • Repeat, until the remaining 7 eggs are done.
  • In a small bowl, whisk the 2 remaining eggs until frothy.
  • In a shallow dish, place corn flake crumbs.
  • Take one wrapped egg, and roll it in the beaten eggs to coat and cover completely.
  • Using a large spoon, take the egg out of the egg wash, and place it in the corn flake crumbs.
  • Gently roll each egg in the corn flake crumbs to completely coat. Put each egg back on the plate with the other eggs, until they are all coated with egg wash and corn flake crumbs. Once you have them all coated, repeat the process, until you have two layers of crumbs.
  • Put the crumb-coated eggs back into the refrigerator, until you are ready to cook them.
  • Heat oil in a deep frying pan to 375 degrees.
  • Carefully place 4 eggs, one at a time, into the hot oil and leave them alone for 3 to 4 minutes. Using a pair of tongs, turn the eggs until you have cooked all of the sausage on each egg, approximately 3 to 4 minutes between each turn.
  • When done the eggs should be a nice dark brown. Remove from oil, place on paper towel to drain. Repeat with the remaining eggs. Allow to cool, for 8 minutes, then cut each in half.

Steps:

  • Drain canned peas and carrots.
  • In a bowl Mix Mashed Potatoes with cheese, peas and carrots.
  • Spoon veggie mixture onto each thin rolling steak.
  • Roll up the steaks and secure with toothpicks.
  • In a non-stick frying pan brown the rolling steaks on each side approximately 1 minute per side.
  • Once the rolling steaks are browned on each side pour the jar of brown gravy on top and let cook until hot and bubbly 15 minutes.

2 -3 lbs ground beef (85% lean preferred)
1 tablespoon Worcestershire sauce
16 ounces frozen mixed vegetables
24 ounces Simply Potatoes Traditional Mashed Potatoes
1 tablespoon butter

Steps:

  • Saute ground beef until fully cooked. Cook frozen mixed vegetables as directed. Mix together with butter and Worcestershire sauce. Place in pie plate (glass or foil) and top with Simply Potatoes Traditional Mashed potatoes.
  • Place in oven and cook at 375F for 20 - 25 minutes until heated through and potatoes are lightly browned.
  • Serve with a salad for a complete meal.

After my son came home telling me about his friends mom's Shepherd's Pie I set out to create a simple yet tasty alternative and this is what I came up with. We are a "meat & potatoes" kind of family and my kids love it!

1 (24 ounce) bag Simply Potatoes Traditional Mashed Potatoes
1 lb lean ground beef
2 cups mild cheddar cheese, grated
2 (8 ounce) cans beef consomme or 2 (8 ounce) cans beef broth
2 tablespoons self rising flour

Steps:

  • Brown ground beef over medium heat and season as desired. Drain, return to pan at medium high heat and add 2 tablespoons flour. Stir until you no longer see the flour. Add 2 cans beef consume and bring to a boil. Reduce heat to medium and simmer 5 minutes to thicken, stirring often.
  • Pour beef mixture into the bottom of a 9x13 pan and top with shredded cheese. Spread Simply Potatoes Mashed Potatoes over cheese and bake at 350 degrees for 25 minutes or until bubbly and heated through.
  • Option: Top with Pillsbury Cresent Rolls before baking for a more traditional Shepherd's Pie.

When we had roast beef and mashed potatoes, I always knew that if there was any left over, rare with 4 kids and always a lot of company, especially at dinner time, that there was a shepherd's pie in my future. One of my favs growing up and my mom made it so easy! * ! season the onions and carrots with salt pepper and a little ginger grated in, enough to enhance the flavor not overpower.

1 medium onion, finely sliced
4 small carrots, julienne style
1 1/8 cups beef gravy
1 (4 ounce) package Simply Potatoes Traditional Mashed Potatoes

Steps:

  • Sautee oniion and carrot in a skillet with EVO until translucent, stir in ground beef to brown, salt, pepper to taste, once meat has started to brown add beef gravy, (I use the left over gravy from pot roast) but you can use any prepared gravy you like. Bring that to a simmer. While that is simmering prepare the Simply Potatoes, Tradition Mashed Potatoes. according to the package directions.
  • Now preheat oven to 350; cover bottom of baking dish with ground beef mixture, spoon mashed potatoes on top and bake for 30 mins or until mashed potatoes are browned on edges. ENJOY.

  • Preheat oven to 375 degrees F. Rinse chicken breasts and pat dry. Remove any excess fat.
  • Using a sharp knife, cut a large pocket into the chicken breasts, cutting horizontally and lengthwise into the chicken, but not cutting through the back or sides.
  • Place the vegetables into a small bowl, add 1/2 cup of cheese and toss to mix. Divide mixture into 4 equal portions and put into the chicken pockets.
  • Use seasoned salt to sprinkle evenly over both sides of the chicken pieces.
  • In a small bowl, mix the Simply Potatoes® Shredded Hash Browns with 1 cup cheese.
