Prosciutto Wrapped Figs with Blue Cheese served on a bed of baby arugula with a light vinaigrette. A delicious combination of salt, acid and sweet.

8 large figs
1/4 cup blue cheese ((2 ounces) crumbled)
4 thin strips prosciutto (cut in half lengthwise (2 ounces total))
6 cups baby arugula
1 tablespoon extra virgin olive oil
1 tablespoon golden balsamic vinegar
pinch salt
black pepper

Steps:

  • Divide and arrange arugula on 4 salad plates or one platter.
  • Starting at the stem end, cut figs in half nearly through but leave the blossom end in tact.
  • Press 1/2 tablespoon cheese in the center then press halves back together. Wrap each fig with prosciutto half and secure with a toothpick.
  • GRILL: Preheat the grill to high heat, grill 5 minutes turning often until crisp. Remove and set aside.
  • AIR FRYER: Preheat the air fryer 400F 3 minutes. Air fry the figs 5 to 6 minutes, until crisp. Remove and set aside.
  • Place figs over arugula and drizzle with vinaigrette.

4 large whole figs (or 16 small mission figs), quartered
Goat cheese
1 (3-ounce) package prosciutto
3 tablespoons honey
1/4 teaspoon pumpkin pie spice

Steps:

  • Preheat oven to 400 degrees F. Line a baking sheet with parchment paper; set aside.
  • Cut a small hole in the center of the flesh of each fig. Fill each hole with 1/4 teaspoon of goat cheese.
  • Take a prosciutto slice and tear in half. Use 1 half to diagonally wrap around the fig, starting from the top. Tuck underneath at the ends. Repeat until all figs are wrapped. (Secure with toothpicks if necessary.) Place wrapped figs on prepared baking sheet, evenly spaced.
  • In a small bowl, combine honey and pumpkin pie spice. Drizzle honey evenly over each fig.
  • Place in the oven on the top rack and roast for 8 to 10 minutes. Remove and serve immediately.

24 large dried Medjool dates with pits (14 ounces)
6 ounces sharp blue cheese, such as Bleu d'Auvergne
1/4 pound thinly sliced prosciutto (8 to 10 large slices)

Steps:

  • Preheat the oven to 400 degrees F.
  • With a small paring knife, slit each date lengthwise and spread open just enough to remove the pit while leaving the date intact. Fill the cavity of each date with a small piece of blue cheese and fold the date over the cheese, pressing it back into its original shape.
  • Cut a strip of prosciutto as wide as each date is long and wrap it around twice, enclosing the date almost completely. Place the dates on a sheet pan and bake for about 8 minutes, until the prosciutto is browned and the cheese starts to melt.
  • Cool slightly and serve warm.

Steps:

  • Preheat the oven to 400 degrees F.
  • Make a small slit in the side of each fig and stuff a raisin-size piece of cheese in the opening.
  • Wrap a piece of prosciutto around each to enclose like a little cocoon. Stand the figs on a sheet pan. Bake for 12 to 15 minutes so the prosciutto melts slightly and forms a skin around the figs. Season with lots of ground black pepper. These are terrific hot or at room temperature

  • Preheat oven to 375°F. Gently clean figs, remove stem and slice each in half lengthwise.
  • Stack gorgonzola cheese pieces on each half fig.
  • Wrap fig and gorgonzola with thinly sliced prosciutto all the way around.

One .25-ounce packet active dry yeast
2 teaspoons sugar
1 cup all-purpose flour, plus more for flouring the work surface
1 cup whole-wheat flour
1 teaspoon kosher salt
2 tablespoons olive oil, plus more for coating the bowl
4 slices prosciutto
8 fresh figs, cut in half
3 to 4 ounces blue cheese, crumbled

Steps:

  • For the dough: In a small bowl, combine the yeast with the sugar and 3/4 cup warm water. Let sit for 10 minutes until it begins to foam.
  • In a large bowl, combine the all-purpose flour, whole-wheat flour and salt and make a well in the center. Add the yeast mixture and the olive oil. Using a fork, incorporate the wet ingredients with the dry ingredients until a dough forms. On a lightly floured surface, continue to work and then knead the dough until it is smooth and elastic, about 8 minutes.
  • Lightly coat a clean bowl with additional olive oil and add the dough, turning once to coat the dough in oil. Cover and set in a warm place until doubled in size, about 1 hour.
  • Heat a grill pan over medium-high heat and preheat the oven to 400 degrees F.
  • Punch down the dough and divide it into 2 pieces, using 1 piece for the pizza. Wrap the remaining dough in plastic wrap and refrigerate or freeze for another pizza.
  • For the pizza: Stretch the dough into a 12-inch circle that will fit on the grill pan. Add the dough to the hot grill pan and cook until stiff and bubbles start to form, 1 to 2 minutes. Flip and cook on the other side until grill marks form and the dough is completely cooked through, 1 to 2 more minutes.
  • Transfer the crust to a baking sheet. Lay the prosciutto slices over the crust, then top with the figs and blue cheese. Bake until the cheese melts, about 7 minutes. Serve immediately.

Grilled Prosciutto-Wrapped Figs with Blue Cheese and Pecans image

These delicious grilled proscuitto-wrapped figs with blue cheese and pecans are an ideal accompaniment to many kinds of wine.

12 fresh black Mission figs, stems removed
2 ounces blue cheese, cut into 12 equal pieces
6 pecan halves, broken in half lengthwise
6 thin slices proscuitto, 2 to 3 ounces, cut in half lengthwise
Olive oil, for brushing
Honey, for serving

Steps:

  • Place 12 skewers (4 inches each) in water to soak for at least 10 minutes. Heat a grill pan over medium-high heat.
  • Slice the figs through the center vertically without cutting all the way through. Carefully open each fig, and place a slice of cheese and a pecan piece inside each. Gently squeeze figs to enclose the cheese. Wrap figs horizontally with a strip of proscuitto and skewer to secure. Brush the figs with oil and place on the grill. Cook, just until grill marks begin to appear, about 1 1/2 minutes. Turn and repeat with opposite side.
  • Transfer to a serving platter, and lightly drizzle with honey. Serve warm or at room temperature.

  • lay wonton wrapper on flat surface. Place one 1 x 1 inch piece of prosciutto on wrapper, top with 1/2 chopped fig and top with crumbled blue cheese. Fold wrappers over to meet in middle and then fold sides in to close. Place folded side down on sprayed baking pan. Bake for 12-15 minutes at 350 degrees

Steps:

  • Preheat the oven to 425 degrees F.
  • Snip the hard stems off the figs and cut the figs in half lengthwise through the stem. With a small sharp knife, cut the prosciutto lengthwise into inch-wide strips. Wrap a strip of prosciutto around the center of each fig half, with the ends overlapping. Brush with olive oil and arrange cut-side up on a sheet pan.
  • Roast the figs for 10 minutes, until the prosciutto is a little crisp and the figs are warmed through. Serve warm.
