FAVORITE CHRISTMAS BREAKFAST CASSEROLE

Steps:
- In a greased 11x7-in. baking dish, combine the bread and cheese. In a large bowl, whisk the eggs, milk, mustard, salt and pepper; pour over bread and cheese. Sprinkle with bacon. Cover and refrigerate overnight. , Remove from the refrigerator 30 minutes before baking. Bake, uncovered, at 350° until a knife inserted in the center comes out clean, 50-55 minutes. Let stand 10 minutes before serving.

CHRISTMAS BRUNCH SCRAMBLED EGGS
A very special way to prepare scrambled cggs. I make these for brunches and Christmas morning. They are so simple, I've even thrown them together for a delicious quick dinner--Yum!

Steps:
- Beat together the eggs, green onion tops, milk, salt and pepper.
- In a large, lightly oiled skillet, heat the butter to sizzling. Pour in the egg mixture.
- When the eggs just begin to set on the bottom, run a spatula underneath, allowing the uncooked egg flow to the bottom of the pan. Sprinkle in the cream cheese pieces.
- Continue cooking in the standard manner for scrambled eggs.
- When the eggs are set, the cheese will be melted.
- Serve immediately. Garnish with parsley.
FESTIVE SCRAMBLED EGGS
Steps:
- In a large bowl, beat eggs and 1 cup milk. Add the salt, pepper, pimientos and parsley. In a small bowl, combine flour and remaining milk until smooth; stir into egg mixture. In a large skillet, melt butter over medium heat. Add egg mixture. Cook and stir over medium heat until the eggs are completely set.

CHRISTMAS EGGS
Barely spicy egg casserole. Our family has been eating these since I was a small child (many, many, many, years ago!!)at my Granny's home on Christmas mornings. I now serve them at a Holiday brunch I have for friends over 10yrs & everyone loves them.

Steps:
- Beat eggs, add milk and grated cheese.
- Pour into sprayed or buttered pan (I use a disposal 1/2 sheet or 9x13 pan).
- Bake 350 for approx 45 mins to 1 hr til golden brown.
- Great served with baked pork roll and applesauce.

- Add the eggs to a medium saucepan and cover them with enough water so that it's 1 inch above the eggs. Place the saucepan over medium-high heat and bring the water to a boil. Once the water boils, cover the pan, turn off the heat and allow the eggs to cook for 12 minutes. Remove the eggs from the water and carefully peel them.
- To the bowl with the yolks, add the avocado, mayonnaise, mustard and sweet relish. Mash together the mixture with a fork then taste and season it with salt and pepper.
- Transfer the mixture to a piping bag fitted with a star tip (optional) or sealable plastic bag. Pipe the mixture into the egg whites then garnish each deviled egg with three pieces of diced red pepper. Serve immediately or refrigerate, covered, until ready to serve.
