Pork and apples are the perfect pair in this quick and easy sheet-pan meal. With little prep time and minimal clean up, this dinner will become a weeknight favorite.

4 small parsnips, peeled and halved lengthwise (large pieces quartered)
Extra-virgin olive oil
Kosher salt and freshly ground black pepper
5 sprigs fresh thyme
1 Honeycrisp apple
Pinch ground cinnamon
Two 1-inch-thick, bone-in pork chops (1 to 1 1/4 pounds total)
1 tablespoon Dijon mustard
1/2 teaspoon herbes de Provence
Fresh parsley leaves for garnish

Steps:

  • Position a rack in the center of the oven and preheat to 400 degrees F. Line a rimmed baking sheet with parchment paper.
  • Place the parsnips in the center of the baking sheet and drizzle generously with olive oil, sprinkle with salt and pepper and toss with 3 sprigs of thyme. Spread the parsnips into an even layer leaving an empty space on both sides. Roast until the parsnips become tender and begin to brown in spots, about 20 minutes. Use tongs to give the parsnips another toss.
  • Remove the baking sheet from the oven and push the parsnips closer together in the center of the pan. Core the apple and cut it into 1/2-inch-thick slices. Place the apples on one side of the parsnips, drizzle with olive oil and sprinkle with the cinnamon. Pick the leaves from the remaining 2 sprigs thyme and sprinkle them on top of the apples. Lay the pork chops on the other side of the parsnips and brush with the Dijon mustard. Sprinkle each chop with the herbes de Provence and a pinch of salt and pepper.
  • Return the baking sheet to the oven and roast until the apples are soft, the parsnips are completely tender and golden brown, and the pork chops read an internal temperature of 145 degrees F, about 20 minutes more. Divide evenly between two plates, top the apples with the parsley leaves and serve.

3-4 boneless pork chops
1 teaspoon kosher salt
8-10 cranks of fresh-ground black pepper
1 teaspoon ground cinnamon
2 medium apples (Honey Crisp, Gala, Fuji, or Golden Delicious)
1/2 medium red onion
3/4 cup chicken broth
1/4 cup apple cider (optional)
2 teaspoons Dijon mustard
1 tablespoon butter
2 teaspoons chopped fresh sage
2 teaspoons chopped fresh rosemary

Steps:

  • Warm 1 tablespoon olive oil in a large skillet over medium-high heat. Sprinkle both sides of the pork chops with salt, pepper, and cinnamon, then add them to the hot skillet.
  • Sear the pork chops for 3-4 minutes, until browned on the bottom, then flip and continue to cook for about 4-5 minutes, until they reach 145 degrees in the middle. Remove pork chops to a plate, tent with foil, and set aside.
  • While the pork chops are cooking, core and thinly slice the apples, chop the onion into small wedges, and whisk the chicken broth, apple cider, and mustard together in a liquid measuring cup.
  • After removing pork chops, add the butter and remaining tablespoon olive oil to the skillet, then add the apples, onions, sage, and rosemary. Saute for 2-3 minutes, then pour in the broth mixture. Use a wooden spoon to gently scrape the bottom of the pan and release any brown bits.
  • Let the sauce simmer for 2-3 minutes, stirring occasionally, then return pork chops to the pan, nestling them in between the apples. Spoon the sauce over the chops, and serve with fresh herbs, if desired.

Pork Chops with Apples is a simple dinner recipe perfect for any time of year! The apples are caramelized in butter with brown sugar, cinnamon, and honey. The pork chops are pan-seared to a beautiful golden-brown crust and are tender, juicy, and moist.

1 green apple (Granny Smith)
1 red apple (Gala)
2 tablespoons brown sugar
½ teaspoon cinnamon
2 tablespoons butter (divided)
1 tablespoon olive oil
3 tablespoons honey
1.5 lb pork loin chops (boneless (4 pork chops))
1 tablespoon olive oil
½ teaspoon salt
1/2 teaspoon black pepper
1 teaspoon Italian seasoning
2 tablespoons olive oil
fresh thyme

Steps:

  • Pat dry pork chops with paper towels.
  • Brush pork chops with 1 tablespoon of olive oil and season with salt and freshly ground black pepper, and Italian seasoning.
  • Allow the pork chops to rest while you prepare the apples as follows below. This brings pork chops closer to room temperature which will help them sear better.
  • I used 2 apples (1 red Gala apple and 1 green Granny Smith apple, for presentation purposes). Core the apples and slice each one length-wise.
  • Place sliced apples into a large bowl, add brown sugar, cinnamon, and mix. Let apples sit for about 10 minutes to release juices.
  • In a large pan (I used a large stainless steel skillet), heat 1 tablespoon of butter and 1 tablespoon of olive oil on high heat. Add sliced apples (without juice at the bottom of the pan) and cook on high heat for about 3 minutes on one side, checking periodically. After 3 or 5 minutes, flip sliced apples to the other side, reduce heat to medium and cook the apples for another 3 or 5 minutes. Remove from heat.
  • Cook the apples in a single layer, without overcrowding to get a slightly "roasted" appearance. That means you might have to cook apples in 2 batches. Use the remaining 1 tablespoon of butter for the second batch.
  • Depending on how hot your stove gets, it might take you less or more time to cook apples, the key is to brown them or even get a slightly "burned" effect. But don't overdo it, remove the cooked apples from the skillet once the apples have this "roasted" appearance.
  • Right after you remove the pan with roasted sliced apples from the heat, immediately add honey to the hot skillet - it will make apples sizzle and will caramelize them beautifully, off the heat.
  • For best searing results, use a cast-iron skillet. Heat a large skillet over medium-high heat for about 3 minutes to heat it through.
  • Add 2 tablespoons of olive oil - the oil should shimmer. Add the pork chops, and cook them on one side for 5 minutes, without moving.
  • Reduce the heat to medium, flip the pork chops over to the other side, and cook them on medium heat for about 5 minutes. Cook longer (depending on the thickness of your pork chops) until the pork chops are cooked through.
  • Spoon the cooked apples, together with the sauce from cooking the apples, over the pork chops. Top with fresh thyme.

2 Granny Smith apples, peeled, cored and cut into thick wedges
2 cups thinly sliced onions
3 pounds savoy or napa cabbage (1 head)
1 cup chicken stock
4 double cut pork chops
2 teaspoons Essence, recipe follows
2 teaspoons kosher salt
1/4 cup all-purpose flour
1 cup Calvados
1/2 teaspoon caraway seeds
2 bay leaves
2 teaspoons salt
1 teaspoon freshly ground black pepper
1 teaspoon freshly chopped thyme leaves
1 teaspoon freshly chopped marjoram
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried oregano
1 tablespoon dried thyme

Steps:

  • Season both sides of the pork chops with the Essence and kosher salt. Lightly dredge in the flour.
  • Heat the olive oil in a large Dutch oven or heavy pot over high heat. Add the pork chops 2 at a time, and cook until lightly browned, about 2 minutes per side. Remove the pork chops and transfer to a platter. Repeat with the remaining pork chops and set aside.
  • Reduce the heat to medium-high, and add the apples and onions. Cook, stirring occasionally, until the apples and onions are golden brown, 3 to 4 minutes. Add the cabbage and cook, stirring, until wilted, about 5 minutes. Stir in the chicken stock, Calvados, caraway seeds, bay leaves, salt, pepper and herbs. Cook uncovered until sauce comes to a boil. Add the pork chops, cover, reduce the heat to a simmer and cook until the pork chops are fork-tender, about 1 1/2 hours.
  • Serve the pork chops with the cabbage and pan juices.
  • Combine all ingredients thoroughly.

2 cloves garlic
Kosher salt
4 1/2-inch-thick boneless pork loin chops (5 ounces each)

1 tablespoon extra-virgin olive oil
1 large red onion, cut into 1/2-inch wedges
2 Granny Smith apples, cut into 1/2-inch pieces
3/4 cup apple cider
1/4 cup buttermilk

Steps:

  • Put the potatoes and garlic in a saucepan, cover with cold water and season with salt. Cover and bring to a boil, then uncover and continue cooking until tender, about 15 minutes. Cover and set aside.
  • Meanwhile, rub both sides of the pork chops with the sage, and salt and pepper to taste. Heat a large cast-iron skillet over high heat, then add 1 teaspoon olive oil and sear the chops until golden on both sides, about 5 minutes total. Transfer to a plate. Wipe out the skillet and add the remaining 2 teaspoons olive oil. Add the onion and apples and cook over medium-high heat until lightly browned, about 5 minutes. Season with salt and pepper and stir in the cider.
  • Return the chops to the skillet. Cover and cook, turning once, until just cooked through, 4 to 5 minutes. Drain the potatoes, reserving 1/4 cup liquid. Return the potatoes to the pan; add the buttermilk and mash, adding cooking liquid as needed. Season with salt and pepper. Serve with the pork chops, onion and apples. Drizzle with the pan juices.

1 small head green cabbage, cut into 2-inch (5 cm) pieces
1 medium fennel bulb, thinly sliced
2 medium gala apples, cut into wedges
¾ cup Club House La Grille Honey & Dijon Marinade, divided
2 bones in pork chops, about 1 in (2.5 cm) thick
1 ½ teaspoons kosher salt
1 teaspoon black pepper

Steps:

  • Preheat the oven to 425°F (220°C) and grease a baking sheet with nonstick spray.
  • In a large bowl, toss the cabbage, fennel, and apples with ½ cup (120 ml) Club House La Grille Honey & Dijon 30 Minute Marinade. Spread in an even layer on the prepared baking sheet.
  • Season the pork chops on both sides with the salt and pepper. Using a pastry brush, brush the remaining ¼ cup (60 ml) marinade over both sides of the pork chops. Transfer to the baking sheet with the cabbage mixture.

4 -6 pork chops
1/2 red onion, chopped
6 mushrooms, sliced
1 apple, semi-sweet kind, sliced
1 beer, I use Fat Tire
2 tablespoons butter
2 tablespoons olive oil

Steps:

  • Salt and pepper pork chops.
  • Fry pork chops in olive oil.
  • Remove from pan and keep warm.
  • In same pan melt butter.
  • Add red onion, mushrooms and apple.
  • Cook 3 minutes scraping up all the good bits that may have stuck to the bottom.
  • Remove pan from heat and add half the beer.(NEVER ADD ALCOHOL TO A PAN ON THE STOVE. IT COULD START A FIRE); drink the rest.
  • Return to heat and reduce sauce to about one half.
  • Add pork chops back into pan to warm and coat with sauce.
  • Serve over rice or noodles.

This is a really quick and easy dinner that is surprisingly tasty. This meal preps like a Tuesday, but looks and tastes like a glorious Sunday. The apples and the Dressing really create an awesome flavor. I found this recipe in the Kraft Food and Family Quarterly Magazine (Winter 2005). It Suggests Kraft products, however I made them with organic products and it tasted perfect. If your pork chops are on the thin side do not sear them as long and adjust the time. Enjoy!
