- Heat 2 tablespoons vegetable oil in a large skillet over medium-high heat. Cook and stir onion, red bell pepper, and green bell pepper in the hot oil, stirring frequently, until onion is translucent and peppers are soft, 6 to 8 minutes.
- Stir salt, cumin, and chili powder into onion and bell peppers.
- Stir shrimp into onion and bell peppers and cook until shrimp are opaque and no longer pink in the center, 3 to 5 minutes.
- Remove skillet from heat; stir jalapeno pepper and lime juice into shrimp mixture.
- Heat a skillet over medium heat and brush with about 1 teaspoon vegetable oil.
- Place a tortilla in the hot oil. Spoon about 1/6 shrimp filling and 1/2 cup Mexican cheese blend on one side of tortilla. Fold tortilla in half.
- Cook until bottom of tortilla is lightly browned, about 5 minutes; flip and cook other side until lightly browned, 3 to 5 minutes. Repeat with remaining tortillas and filling.

- 1. PREP: In a medium pan, add one Tbsp of olive oil, chopped garlic and the juice from 1 lime over medium-high heat. Once hot, add the shrimp and sauté until fully cooked (pink & opaque, approx 5 min). Remove to clean cutting board and roughly chop.
- 2. FOR QUESADILLAS: *Note - Spray down pan with oil between each quesadilla. Over medium heat, lay out 2 tortillas for approx 1 min each side. (You can do all of them ahead of time and keep under a tea towel to keep warm or two at a time as you go.) Lay one tortilla into pan, add cheese, shrimp, and another layer of cheese. Lay another tortilla on top and mash down with a spatula. Cook for approx 4min on each side or until cheese is melted. Once off the stove, cut the quesadillas into quarters and serve!
- 3. FOR GUACAMOLE: In food processor, combine the meat of 3 avocados, the juice of 1 lime, garlic powder, cilantro, chilies in adobo sauce & salt and pepper. Pulse together until creamy. I highly recommend tasting and adjusting to your preference. Some don't like as much cilantro, some may want it spicier and add more chilies!

- Pat the shrimp dry then season with 1/4 teaspoon of salt and fresh ground black pepper.
- Use a microplane to zest the lime and set aside. Cut the zested lime in half ready for the sauce later in the recipe.
- Add one tablespoon of the butter to a wide skillet. Save the remaining two tablespoons for later.
- Place the skillet with butter over medium heat then add the garlic and coriander. Stir the garlic around the pan until the butter melts and is bubbling; about 1 minute.
- Add the shrimp, nestling them into the pan so that they are in one layer. A few shrimp stacked on top of each other is okay. Cook until the shrimp start to turn pink, about 1 minute.
- Stir in the scallions and lime zest. Continue to cook, stirring, until the shrimp are firm and opaque throughout; another 1 to 2 minutes. Slide the skillet off of the heat.
- With the skillet off of the heat, add the cilantro, juice from the lime and the remaining two tablespoons of butter. Stir the butter around the pan so that it melts into the lime juice making the creamy butter sauce.

- Remove the tails from the shrimp.
- Spray a non-stick skillet with non-stick spray and set over medium-high heat. Add the onion, garlic, cumin and salt. Cook, stirring occasionally, until fragrant, about 2 minutes. Stir in the mushrooms and spinach and cook, stirring frequently until softened, 3 to 5 minutes.
- Remove from the heat, add the shrimp and cilantro.

- Add marinade ingredients to a large bowl and whisk to combine. Add shrimp and marinate at room temperature for 15-30 minutes or in the refrigerator for up to 60 minutes (no more!). Note, this is a wet rub marinade and will be thick without extra liquid.
- Melt one tablespoon butter in one tablespoon olive oil in a large skillet over medium-low heat. Increase heat to medium-high. Once very hot and sizzling, add half the shrimp in a single layer and cook approximately 2-3 minutes per side, or just until opaque and cooked through. Transfer shrimp to a plate and repeat with remaining shrimp.
- To the now empty skillet, melt 3 tablespoons butter over medium heat. Once melted, add the garlic and cook until fragrant, about 1 minute. Toss to incorporate and saute for 3 minutes. Transfer to a bowl and add the cilantro. Preheat a long, 2-burner cast iron griddle, or a large saute pan over medium heat. - Remove seeds from the roasted peppers.
- Heat oil in a large skillet over med. high heat. Add shrimp and salt.
- Cook shrimp for 1 minute, turn over for 30 sec. and remove from the pan.

- Turn over and another 3-4 minutes on the other side.
- Serve on a plate with a little of the remaining cheese sauce and 3-4 whole shrimp on the top.

- Start by preparing the shrimp first. Make sure to peel and clean the shrimp first. Preheat a large frying pan over medium-high heat and add a drizzle of cooking oil. Add the shrimp into the hot pan in a single layer. Season the shrimp generously with salt and ground black pepper, then add the paprika, chili, coriander and cumin. Cook the shrimp about 2 to 3 minutes per side, just until the flesh is no longer translucent; do not overcook the shrimp or it will become tough and rubbery. Transfer the shrimp out of the frying pan and onto a cutting board to cool.
- Into the same pan, add the diced bell pepper and onion and additional cooking oil, as needed. Saute this mixture for 5 to 7 minutes, until the pepper is tender. Add in the garlic and tomato and cook for 1 more minute. Transfer this mixture into a large bowl. Once the shrimp have cooled, chop them into small, bite-sized pieces and add the bowl with the pepper mixture. Add the cilantro and toss everything together until uniform. - To assemble the shrimp quesadillas, I like to set up an assembly line and lay out the tortillas on my work surface. Top each tortilla with 1 1/2 to 2 tablespoons of guacamole and a teaspoon or two of sour cream. Use a spatula to spread these evenly to the edges. Add a heaping amount of the shrimp filling onto one half of the tortilla, top with a generous amount of cheddar cheese and gently fold the second half of the tortilla over.
- To heat the quesadillas, preheat a griddle or large frying pan over medium heat and add a bit of cooking oil. Once the pan or griddle is hot, add the quesadillas. I usually cook 2 to 3 at a time. Fry them for 3 to 4 minutes per side, or until the tortilla is crispy and golden brown. Doing this over medium heat allows the cheese to melt on the inside. Transfer the cooked quesadillas onto a cutting board and use a sharp knife to cut them in half.

Dry fry the quesadillas in a non-stick skillet over medium heat (if using the same skillet, wipe it clean first), flipping them once, until the tortillas are lightly browned and crispy and the cheese is melted.
