LIME SHRIMP QUESADILLAS WITH ADOBO GUACAMOLE

Lime Shrimp Quesadillas with Adobo Guacamole image

With just the right amount of heat and tons o' flavor, these simple quesadillas are the perfect meal-in-a-flash!

Provided by Kelly Allen

Categories     Other Appetizers

Time 50m

Number Of Ingredients 15

FOR QUESADILLA
1 Tbsp olive oil
1 lb shelled & deveined shrimp
3 clove garlic, peeled and finely chopped
1 limes
4-5 c pepper jack cheese, shredded
16 flour tortillas
1 can(s) vegetable cooking spray
FOR GUACAMOLE
3 avocados
3 chiles in adobo sauce
1 tsp garlic powder
1 tsp dried cilantro
salt & pepper to taste
1 lime

Steps:

  • 1. PREP: In a medium pan, add one Tbsp of olive oil, chopped garlic and the juice from 1 lime over medium-high heat. Once hot, add the shrimp and sauté until fully cooked (pink & opaque, approx 5 min). Remove to clean cutting board and roughly chop.
  • 2. FOR QUESADILLAS: *Note - Spray down pan with oil between each quesadilla. Over medium heat, lay out 2 tortillas for approx 1 min each side. (You can do all of them ahead of time and keep under a tea towel to keep warm or two at a time as you go.) Lay one tortilla into pan, add cheese, shrimp, and another layer of cheese. Lay another tortilla on top and mash down with a spatula. Cook for approx 4min on each side or until cheese is melted. Once off the stove, cut the quesadillas into quarters and serve!
  • 3. FOR GUACAMOLE: In food processor, combine the meat of 3 avocados, the juice of 1 lime, garlic powder, cilantro, chilies in adobo sauce & salt and pepper. Pulse together until creamy. I highly recommend tasting and adjusting to your preference. Some don't like as much cilantro, some may want it spicier and add more chilies!

GARLIC BUTTER SHRIMP WITH CILANTRO AND LIME

Garlic Butter Shrimp with Cilantro and Lime image

Garlic shrimp cooked in a creamy cilantro lime butter sauce. Serve this as an appetizer, with pasta, over rice or in tortillas for tacos. The recipe is easy to adapt. Swap lime for lemon and try other tender herbs like parsley, dill, basil or tarragon in place of cilantro.

Provided by Adam and Joanne Gallagher

Categories     appetizer, main meal

Time 20m

Yield Makes 1 pound shrimp (16 to 20 shrimp, depending on size)

Number Of Ingredients 8

1 pound extra large shrimp, peeled with tails left on and deveined
1 lime plus a few extra wedges for serving
Salt and fresh ground black pepper
3 tablespoons unsalted butter
2 tablespoons minced garlic, about 6 cloves
1/2 teaspoon ground coriander, optional
2 scallions, chopped
1/2 cup fresh cilantro leaves and tender stems, chopped

Steps:

  • Pat the shrimp dry then season with 1/4 teaspoon of salt and fresh ground black pepper.
  • Use a microplane to zest the lime and set aside. Cut the zested lime in half ready for the sauce later in the recipe.
  • Add one tablespoon of the butter to a wide skillet. Save the remaining two tablespoons for later.
  • Place the skillet with butter over medium heat then add the garlic and coriander. Stir the garlic around the pan until the butter melts and is bubbling; about 1 minute.
  • Add the shrimp, nestling them into the pan so that they are in one layer. A few shrimp stacked on top of each other is okay. Cook until the shrimp start to turn pink, about 1 minute.
  • Stir in the scallions and lime zest. Continue to cook, stirring, until the shrimp are firm and opaque throughout; another 1 to 2 minutes. Slide the skillet off of the heat.
  • With the skillet off of the heat, add the cilantro, juice from the lime and the remaining two tablespoons of butter. Stir the butter around the pan so that it melts into the lime juice making the creamy butter sauce.
  • Taste then season as needed with salt and pepper. Serve with extra lime wedges on the side.

  • Start by preparing the shrimp first. Make sure to peel and clean the shrimp first. Preheat a large frying pan over medium-high heat and add a drizzle of cooking oil. Add the shrimp into the hot pan in a single layer. Season the shrimp generously with salt and ground black pepper, then add the paprika, chili, coriander and cumin. Cook the shrimp about 2 to 3 minutes per side, just until the flesh is no longer translucent; do not overcook the shrimp or it will become tough and rubbery. Transfer the shrimp out of the frying pan and onto a cutting board to cool.
  • Into the same pan, add the diced bell pepper and onion and additional cooking oil, as needed. Saute this mixture for 5 to 7 minutes, until the pepper is tender. Add in the garlic and tomato and cook for 1 more minute. Transfer this mixture into a large bowl. Once the shrimp have cooled, chop them into small, bite-sized pieces and add the bowl with the pepper mixture. Add the cilantro and toss everything together until uniform. Watch my video recipe to see how I make the filling!
  • To assemble the shrimp quesadillas, I like to set up an assembly line and lay out the tortillas on my work surface. Top each tortilla with 1 1/2 to 2 tablespoons of guacamole and a teaspoon or two of sour cream. Use a spatula to spread these evenly to the edges. Add a heaping amount of the shrimp filling onto one half of the tortilla, top with a generous amount of cheddar cheese and gently fold the second half of the tortilla over.
  • To heat the quesadillas, preheat a griddle or large frying pan over medium heat and add a bit of cooking oil. Once the pan or griddle is hot, add the quesadillas. I usually cook 2 to 3 at a time. Fry them for 3 to 4 minutes per side, or until the tortilla is crispy and golden brown. Doing this over medium heat allows the cheese to melt on the inside. Transfer the cooked quesadillas onto a cutting board and use a sharp knife to cut them in half.

  • Toss the shrimp in a small bowl with the chipotle powder or chile powder, a pinch of salt, pinch of pepper, and a tablespoon of lime or lemon juice. Let sit for 10 minutes. Then drain out the juice.
  • Heat a couple teaspoons of olive oil in a relatively stick-free skillet (a cast iron skillet works well for this) on medium high heat. Add the shrimp and cook for half a minute on each side, and remove to a bowl.
  • Wipe out the skillet with paper towels. Add a small amount of olive oil and heat the pan on medium-high. Place one flour tortilla on the skillet. Flip the tortilla over a few times, 10 seconds between flips. Air pockets should begin to form within the tortilla. Remove the tortilla and repeat with the second tortilla. Leave the second tortilla in the pan and reduce the heat to medium.
  • Sprinkle the tortilla with the grated cheese. Distribute the shrimp on top of the cheese. Add chopped onion and cilantro. Place the other tortilla on top. Flip the quesadilla over when the bottom tortilla is nicely toasted and the cheese has begun to melt. Remove the quesadilla from the pan when the now bottom tortilla has toasted sufficiently. You can also use just one tortilla instead of two, and fold the tortilla over itself like an omelette.
