These 5-minute white chocolate pots de crème are the BEST super quick make ahead dessert. They contain just 3 ingredients - white chocolate, water, and double cream, and really do take just 5 minutes to make! Add a few berries and some shortbread for a classy low maintenance dessert that impresses every time.

7 ounces white chocolate (good quality)
1/3 cup boiling water
¼ cup heavy cream (UK/Australia = double cream)
a little grated milk chocolate
berries (strawberries, raspberries or blueberries)
good quality shortbread (optional)

Steps:

  • Break up the chocolate into a microwave-safe jug and melt it in the microwave in 30 second bursts (I find 90 seconds is about right).
  • Slowly add the boiling water, stirring continuously.
  • Stir in the cream.
  • Pour the mixture into 4 ramekins, espresso cups or small dessert glasses. Cover with plastic wrap and refrigerate until you're ready to serve (at least a couple of hours).
  • Serve with grated milk chocolate, berries and shortbread if you like.

A deliciously rich and creamy no-bake white chocolate pudding that is so easy to throw together, and only requires 5 simple ingredients!

8-oz (235g) good quality white chocolate, coarsely chopped (I love Lindt)
1/2 cup (120ml) heavy cream
1/4 cup (50g) caster/granulated sugar
1 teaspoon vanilla extract
1/8 teaspoon salt

Steps:

  • Add the white chocolate to a large heat-proof bowl, and set aside.
  • Add the cream, sugar, salt, and vanilla to a microwave-safe bowl or jug, and heat on high for 30 seconds (800W). Stir to combine the sugar into the cream, then heat for a further 30 seconds.
  • Pour the cream over the chocolate, and leave to stand for 1 minute. Whisk together until melted and smooth. If there are still some chocolate lumps left, heat for 30 seconds, then whisk again. The mixture should be slightly thick and silky smooth.
  • Evenly divide the pudding between three 4-oz ramekins, cover, and refrigerate for at least 1 hour until set.
  • Garnish with whipped cream and/or chocolate shavings before serving.

These make-ahead Chocolate Pots de Creme are silky, creamy chocolate goodness! Only six ingredients are required for a simple custard that's easy to prepare. It's topped with a White Chocolate Whipped Cream for extra decadence!

1 cup heavy cream
1/4 cup milk
3 oz bittersweet chocolate (chopped)
1/4 cup sugar
4 egg yolks
1 tbsp amaretto (optional)
1/2 tsp vanilla extract
1 oz white chocolate (melted)
1/3 cup heavy cream
1 tbsp confectioner's sugar

Steps:

  • Preheat the oven to 325 degrees F.
  • To make the pots de creme, bring the heavy cream and milk to a bare simmer in a saucepan set over medium heat. Do not let it boil. Remove from the heat, and stir in the chocolate. Whisk until combined.
  • In a large bowl, whisk to combine the sugar, egg yolks, amaretto, and vanilla. While constantly whisking, slowly drizzle in the chocolate cream. Once it is fully whisked in, strain the entire mixture in case you scrambled any egg. Pour the strained chocolate custard evenly into four 4-ounce ramekins, and place in a 9×13 baking dish. Cover each ramekin tightly with foil, and add enough hot water to come halfway up the sides of the ramekins. Bake for 45 minutes, until set, but still jiggly.
  • Remove the ramekins from the water bath and chill for 3 hours in the refrigerator.
  • To make the white chocolate whipped cream, whip the heavy cream and powdered sugar to soft peaks, then fold in the melted white chocolate. Dollop onto the chilled pots de creme. Enjoy!

3/4 cup whole milk
12 ounces white chocolate, finely chopped
6 egg yolks
1 cup Pomegranate Sauce, recipe follows
1 1/2 dozen Florentine Cookies, recipe follows
4 whole pomegranates
1/2 cup sugar
1/4 cup water
1/4 pound butter, room temperature
1 cup sugar
1 large egg
1 teaspoon vanilla extract
1/4 teaspoon baking soda
Pinch salt
1 cup quick cooking oats
1 cup pecan pieces

Steps:

  • Combine the cream and milk in a heavy bottom, 2 quart saucepan. Place over medium heat and bring to a boil. Bring the water in a double boiler to a simmer. Place the chocolate in the top half and stir with a rubber spatula until melted. Whisk the egg yolks into the melted chocolate. Slowly pour the boiling cream mixture into the chocolate, whisking constantly. Bring to a temperature of 160 degrees, about 3 1/2 to 4 minutes. Remove from the heat and transfer to a stainless steel bowl. Cool in an ice bath, stirring constantly with a wire whisk to a temperature of 90 degrees F., about 4 to 5 minutes. Evenly divide the mixture into 8 small pot de creme forms or glass custard cups. Cover each with plastic wrap and refrigerate for 2 to 3 hours to set before serving. Spoon the sauce over the top of each pot de creme and serve with the Florentines.
  • Remove the seeds from 2 pomegranates and set aside. Remove the seeds from the other 2 pomegranates and place in a small saucepan with the sugar and water. Bring to a boil. Boil until all of the seeds burst and the mixture begins to thicken, about 10 to 15 minutes. Remove from the heat, strain and allow to cool. Stir in the whole pomegranate seeds.

  • Preheat the oven to 350 degrees. Line a baking sheet with parchment paper. Cream the butter and sugar together with an electric mixer on medium speed until smooth. Add the egg and beat until incorporated. Add the vanilla, baking soda and salt and beat until smooth. In a food processor or blender, combine the oats and pecan pieces and pulse several times to grind. Add this to the creamed mixture and beat until incorporated. The dough will be stiff and sticky. Drop by the teaspoonful, about 3 inches apart, onto the prepared pan. Flatten the dough slightly with your fingertips. Bake for 6 minutes until lightly golden. Remove from the oven and carefully roll the cookies into cylinder shapes-like a cookie cigar while they are still hot. Cool completely on wire racks.

6 large egg yolks

Steps:

  • Place the chocolate in a blender. Whisk the milk, 1 cup cream, egg yolks, granulated sugar and salt in a heavy-bottomed medium saucepan over medium heat. Cook, stirring constantly with a heatproof spatula, until the mixture is thick enough to coat the spatula and almost boiling, 5 to 6 minutes.
  • Immediately pour the milk mixture over the chocolate in the blender.   • Preheat oven to 325°F. Bring cream and milk just to simmer in heavy medium saucepan over medium heat. Remove from heat. Add chocolate; whisk until melted and smooth. 2 cups heavy cream
6 ounces semi-sweet chocolate (chopped)
1/4 cup sugar
6 egg yolks
1 teaspoon vanilla.
2 ounces good quality white chocolate (chopped)
2 tablespoons plus 1/2 cup whipping cream

Steps:

  • Preheat oven to 300º. Place 6 6-ounce ramekins in large baking dish.
  • Add cream to a saucepan and bring to a simmer. Remove from heat and add chocolate. Stir till chocolate is melted.
  • Whisk eggs and sugar in a large bowl, till thick and pale.
  • Drizzle a bit of the hot chocolate mixture into eggs to temper, whisking constantly.
  • Continue slowly adding hot liquid while whisking till all liquid is incorporated.
  • Avoid incorporating air into mixture if possible. If you find you have some small, unmelted particles of chocolate at the bottom of the saucepan, gently heat till melted and add to bowl.
  • Place a fine mesh sieve over a large measuring cup. Strain custard.
  • Pour custard into the ramekins, then pour enough hot water into pan to reach halfway up ramekins.
  • Cover pan with foil and poke a few holes in foil to allow steam to escape.
  • Bake 25-30 minutes or till outer inch of custard is set.
  • Cool to room temperature, then cover and refrigerate till serving time.
  • Combine white chocolate and the 2 tablespoons whipped cream in small microwave safe bowl.
  • Gently microwave stopping and stirring frequently, till chocolate is melted and smooth.
  • Cool 10 minutes.
  • Whip the remaining cream to soft peaks. Whisk in white chocolate. Cover and refrigerate.
  • Serve with a dollop of white chocolate whipped cream and garnish with berries.

  • Put an oven rack in the center of the oven. Preheat the oven to 300 degrees F.

1/8 tablespoon salt
6 yolks
1/2 cup plus 1/2 tablespoon sugar
1/2 cup heavy cream
1/4 tablespoons freshly grated orange rind

Steps:

  • Place the chopped chocolate in a bowl. Heat the cream and the salt until scalded, then pour over the chocolate to melt it. Whisk the yolks with 1/2 cup of the sugar. Temper the yolk mixture with the hot chocolate mixture then place on the stove over medium heat to thicken slightly, until it coats the back of a wooden spoon. Pour mixture into ramekins and bake in a water bath at 300 degrees for 30 to 45 minutes until mostly set but a little jiggly in the center. Chill covered.
  • To serve, whip the cream with the remaining 1/2 tablespoon sugar and orange rind. Dollop onto the pots de creme.
  • Alternate Garnish: If you have vanilla beans lying around the house that have already been used, here's a great way to recycle them. Cut split vanilla beans into 3-inch sections. Place on a sheet pan in a preheated 300-degree oven and bake until dried. Keep in an airtight container. To garnish the pots de creme, lay the dried vanilla beans across the whipped cream.

  • Position an oven rack in the lower third of the oven. Preheat the oven to 325°F. Place six 6-ounce ramekins in a roasting pan.
  • In a saucepan, combine the cream, milk, and chocolate over medium heat. Bring almost to a simmer; remove from the heat. Set aside, stirring occasionally, until the chocolate is completely melted.
  • In a large measuring cup, whisk together the egg yolks and the sugar. While whisking, add a little of the hot milk mixture to the egg mixture to combine. (This technique is called tempering; it makes the temperatures of two mixtures-one containing raw egg-more similar, so the egg won't curdle in the presence of heat.) Add the remaining milk mixture, and whisk to combine. Whisk in the vanilla and salt.
  • Pour approximately 1/2 cup of the egg mixture into each ramekin. Cover each ramekin tightly with aluminum foil to prevent a skin from forming. Fill the roasting pan with enough boiling water to come halfway up the sides of the ramekins. Bake until the custards are just set in the center, 35 to 40 minutes.
  • Remove the pots from the water, and place on a wire rack to cool, about 30 minutes. (I usually remove the pots with tongs and leave the roasting pan of water in the oven. Turn the oven off and let the water cool until it is safe to remove the pan.)
  • When the pots de crème have cooled completely, refrigerate to chill thoroughly, preferably overnight. Just before serving, top with a dollop of whipped cream.
